Idli Usili/Leftover Idly Upma /Quick Idly Upma Recipe in Tamil/மிஞ்சியஇட்லியை உப்புமா செய்வது எப்படி


#IdlyUsili#LeftoverIdlyUpma#IdlyUsiliRecipe#RanjisFlavours Ingredients: மிஞ்சின இட்லி/Leftover Idlis - 6 to 7 எண்ணை / Oil- 3 tsps கடுகு / Mustard-1 tsp கடலைப்பருப்பு / Bengal gram- 2 tsps உளுத்தம்பருப்பு / Ulad dal- 1 tsp பெருங்காயம் / Asafetida- 1/4 tsp கருவேப்பிலை / Curry leaves- little வெங்காயம் / Onion- 1 பட்டாணி / Fresh peas - 2 tbsps மஞ்சள்தூள் / Turmeric powder- 1/2 tsp கொத்தமல்லி / Coriander leaves- little Method: Crumble all leftover idlis. Heat oil in Kadhai. Add mustard, Bengal gram, Ulad dal, Asafetida, green chili. Fry till it gets brown in color. Add onion & curry leaves. Add peas & sauté till it becomes soft. Then add crumbled idlis to that. Mix it well. Sprinkle little water on top to get a soft mixture. Cover it & cook for 2 minutes. Add coriander leaves on top & serve hot. வெங்காய கீரை / Spring onion- 1/2 kg தக்காளி / Tomato-1 ( big size) எண்ணை / Oil - 3 tsps கடுகு / Mustard - 1 tsp சீரகம் / Jeera/ Cumin- 1 tsp மஞ்சள் தூள் / Turmeric powder- 1/2 tsp மிளகாய் தூள் / Red chili powder- 1/2 tsp சீரகத்தூள் / Cumin powder- 1 tsp தனியா பொடி / Coriander powder- 1 tsp கடலை மாவு / Bengal gram powder- 3 tbsps வறுத்து பொடித்த கடலை / Roasted powdered peanuts- 2 tbsps Method: Wash & cut sting onion . Heat oil In kadai. Add mustard, Jeera . Then add cut spring onions. Mix it & let it cook for 5 to 7 minutes. When it cooks nicely & all water evaporated add cut tomatoes & keep it for 3 minutes. Lastly add Bengal gram & roasted peanut powder & mix well. Cook in low flame till all gets dry. Spring onion curry is ready to serve with Roti, Paratha &Rice. Enjoy Ranjis flavours

Here I have taken sliced almonds, so no need of grinding that. In case if we take full almonds, that has to be roasted & grinded. Mix all together with 3 tbsps of ghee & honey. Mix nicely. #WheatMilkTomatoDosa#GodhumaiPaalTomatoDosai#RanjisFlavours Ingredients: கோதுமை / Whole wheat- 1 cup ரவை / Rava - 1/4 cup அரச மாவு / Rice flour- 1/4 cup சீரகம் / Jeera - 1 tsp பச்சை மிளகாய் / Green Chili-2 ( optional) கொத்தமல்லித்தழை / Coriander leaves- 2 tbsps உப்பு / Salt - 1 tsp தக்காளி / Tomato-2 எண்ணை / Oil - to make dosa Method: Wash & soak wheat overnight. Drain the water from wheat. Grind the same in a mixer to take out the first milk by adding the soaked water. Drain the 1st milk & keep it separately. Again add water to the wheat & grind. Take out the 2nd milk from wheat with a help of a strainer. Add both the milk together & keep it. Cut tomatoes & grind. Strain the same to take out the juice. Add tomato juice to the wheat milk. Add Rava & rice flour to that & mix. Add Jeera, green chili, salt & Coriander leaves to that & mix it well. Rest the batter for 15 minutes. Heat Dosa Tava & sprinkle some water to make dosa. Spread Dosa batter & pour Oil on all sides. Turn the Tava on all sides to get the correct heat. Turn to the other side & make it crispy. Make all dosas in the same way. Serve hot & yummy dosas with coconut chutney. Ingredients: சாமை அரிசி / Sama rice( millet)- 1 cup கடலைப்பருப்பு / Bengal gram - 1/4 cup கட்டி தயிர் / Thick curd- 2 tbsps துருவிய காரட் / Grated carrot- 3 tbsps வெங்காயம் / Finely cut onion- 3 tbsps குடை மிளகாய் / Capsicum ( finely cut) - 2 tbsps பச்சை மிளகாய் / Green chili- 2 சீரகம் / Jeera/ cumin- 1 tsp கருவேப்பிலை / Curry leaves- little கொத்தமல்லித்தழை / Coriander leaves- little உப்பு / Salt - 1.5 tsps துருவிய இஞ்சி / Grated ginger- 1 tsp கடுகு / Mustard- 1 tsp எள் / Sesame- 1 tsp Method: Wash & soak little millet for 3 hrs. Wash Bengal gram & soak it for 3 hrs. After 3 hrs drain the water & make batter coarsely. Grind Bengal gram also & mix it with millet batter. Add grated carrots, onions, capsicum, salt, green chili, cumin, curry leaves & coriander leaves .mix it well. Rest it for 15 minutes. Grease the pan with oil. Add mustard & sesame. ( we can add in the batter also )Spread the batter in a thick form. Add oil around. Cover with a lid & cook for 3 minutes. Turn it to the other side & cook for 3 minutes. Make all adai in this way. This little millet is so healthy with all veggies. Serve hot with green chutney mixed with curd. Yummy sama adai is ready with yummy chutney. This can be made for breakfast or dinner. Ingredients: கத்தரிக்காய் / Brinjal- 250 Gms வெங்காயம் / Onion- 2 தயிர் / Curd whipped- 1/4 cup or 3 tbsps சீரகம் / Jeera / Cumin- 1 tsp பட்டை / Cinnamon- 1/2 inch எண்ணை / Oil- 5 to 6 tsps பிரிஞ்சி இலை / Bay leaf- 1 சீரகப்பொடி / Jeera powder- 1 tsp தனியா பொடி / Coriander powder-1 tsp மஞ்சள் தூள் / Turmeric powder- 1/2 tsp மிளகாய் பொடி / Chili powder- 1 tsp கரம் மசாலா / Garam masala- 1/2 tsp உப்பு / Salt- 1 tsp இஞ்சி பூண்டு விழுது / Ginger garlic paste- 1 tsp கடலை மாவு / Bengal gram powder- 2 tbsps Method: Wash Brinjal & cut in vertically on both sides. Keep it in water. Take oil in a kadhai. Add brinjals and fry in medium flame to make it soft. Add more oil in Kadhai & add Jeera, cinnamon, bay leaf. Add finely cut onion & ginger garlic paste & fry them till soft & raw smell goes. Take Bengal gram in a Kadhai & roast it till little brown. Can add this after onion becomes soft & fry. Otherwise, this can be added afterward Once the onion is soft add whipped curd to that & mix vigorously. This should be done in v low flame. Once it mixes well add water. Then add brinjals & cook the same in medium flame. Once the brinjals are cooked add fried Bengal gram & mix it nicely. Let it boil for 3 to 4 minutes. Then the oil separates from Kadhai. Now our curd brinjals are ready to serve with coriander leaves on top. This is a very good side dish for Roti, Paratha & Rice etc. I have made this curry without tomato & only with curd. Ingredients: கடலைப்பருப்பு / Bengal gram- 1 cup வெல்லம் / Jaggery- 3/4 cup சர்க்கரை / Sugar - 3 tbsps நெய் / 3 tsp ஏலக்காய் பொடி / Cardomom powder- 1/2 tsp துருவிய ஜாதிக்காய் / Grated nutmeg- 1/2 சுக்குப்பொடி / Dry ginger powder- 1/4 tsp நெய் / Ghee- to roast Poli தண்ணீர் / Water- 1 cup ( to knead dough) கொதிக்க வைத்த தண்ணீர் /Hot boiled water- 3 cup ( to cook dal) மஞ்சள் பொடி / Turmeric powder- 1/4 + 1/4 tsp உப்பு / Salt- 1/2 tsp அரச மாவு / Rice flour- 3 tbsps Method: Wash Bengal gram nicely thrice. Soak it in hot boiled water for 15 minutes. Then cook the same with 3 cups of water in a cooker. Add 1 tsp of oil & turmeric powder. Cook for 5 whistles. Cool the same Take 2 cups of sieved wheat flour in a bowl. Add oil & salt. Knead the same by adding little water in between to a nice dough. Cover the same with a wet cloth for 15 to 20 minutes. After cooking the dal drain the water from dal. Dal is well cooked. Take dal in a Kadhai. Add jaggery to that & mash it with a potato masher nicely for 10 minutes. Add little ghee & make Pooran in medium to low flame. Lastly, add ghee & make Pooran. Cool the same. Make Pooran into equal-sized balls. Make balls out of dough equally. Take a chapati stone & cover the same with a plastic sheet. Grease it with oil. Take the dough & make Katori & keep the Pooran in that. Make it like a ball with Pooran. Then roll out the same with chapati roller to make roti. The edges of the roti should be thin. Heat Tawa. Keep the rolled Poli in Tawa. Roast it on both sides by applying ghee on both sides in medium flame. Make all Poli in this way. Our Maharashtrian type of Pooran Poli is ready to serve with ghee. It tastes yummy. Ingredients: அரச மாவு / Rice flour- 2 cups பொட்டுக்கடலை/ Puffed Chana dal- 1/2 cup உப்பு / Salt- 1 tsp பெருங்காயம் / Asafoetida- 1/4 tsp எண்ணை / Oil - to mix in flour- 1/4 cup சீரகத்தூள் / Jeera powder- 1 tsp தனியா பொடி / Coriander powder- 1 tsp ஓம்ம் / carrom seeds- 1/2 tsp எள் / Sesame- 1 tsp மஞ்சள் தூள் / Turmeric powder- 1/2 tsp மிளகாய் தூள் / Chili powder-2 tsp எண்ணை / oil- to fry Method: Take rice flour In a bowl. Take puffed Chana dal in a mixer & make a fine powder. ( which is well dried in sun) Sieve the Chana dal powder. Mix the same with rice flour. Add cooking oil. Add roasted Jeera powder, red chili powder, Asafoetida, sesame, carrom seeds, salt & coriander seeds powder to that. First Mix all ingredients with flour nicely. Then add water to that & make a dough. Heat oil in Kadhai. Take small plates & grease the same with oil.OR can take small plastic sheets to make chaklis. Grease the inside portion of the chakli maker with oil with a murukku plate inside. Fill the dough to the top & start making chaklis on the plate beforehand. Chaklis can be if any size of your choice big or small. Check the oil before frying the chaklis & slide the chaklis in oil one by one. Fry in medium flame till we get a golden color. Yummy, crispy chaklis are ready for Diwali. This can be stored for 10 days. We get 18 to 19 chaklis in 2 cups of rice flour. Try this recipe for Diwali. Add onion, carrots, Asafoetida , salt, curry leaves, coriander leaves, green chili & red chili powder. Mix all nicely to a batter. Add rice flour as per consistency if the batter is thin. Mix all. Heat oil in a Kadhai. Make small pakoras with hand & drop It in hot oil. Fry till golden color in medium flame. Yummy evening snack kunukku ( pakoras) are ready within 10 minutes. #VellaiPaniyaram#VellaiKuzhiPaniyaram#KeralaStyleVellaiPaniyaram Ingredients: அரிசி/ Rice-2 cups அவல் / Poha/ flattened rice- 1 cup துருவிய தேங்காய் / Grated coconut-1/4 cup இளனீர் + சர்க்கரை 4 tbsps / coconut water +4 tbsps of sugar ( fermented for 8 hrs) in refrigerator - 2.5 cups உப்பு / Salt- 1.5 tsps எண்ணை / Oil - to make appam Method: Wash rice thoroughly thrice & soak it for 6 hrs & then drain the water. Make the batter with soaked rice, poha & grated coconut with coconut water. First, add 1.5 cups of coconut water & grind nicely. Then add 1/2 a cup & make a nice batter. Remaining coconut water we can add when we make kuzhi paniyaram as per consistency. Grind the batter, add salt, mix it nicely & ferment the same for 14 hrs. After 14 hrs batter is well fermented. Grease the kuzhi Pandiyaram pan with oil. Fill the batter to half only with a small spoon. Let it cook for 2 to 3 minutes. Then turn the same to the other side & cook in medium flame. Take out after 2 minutes. It is well cooked & white in colour. Serve hot with coconut chutney . Kerala style kuzhi Pandiyaram is ready now. Ingredients: பாசிப்பருப்பு / Split green lentils/ mung dal- 2 tbsps உளுத்தம்பருப்பு / Ulad dal/Split Black gram dal-2 tbsps மசூர் பருப்பு / Masoor dal/ Pink dal- 2 tbsps துவரம்பருப்பு / Tuvar dal/ pigeon dal- 2 tbsps கடலைப்பருப்பு / Bengal gram/ Chana dal-2 tbsps எண்ணை / Oil - 2 tsps கடுகு / Mustard- 1 tsp சீரகம் / Cumin/ Jeera- 1 tsp பச்சை மிளகாய் / Green chili-3 ( slit ) பெருங்காயம் / Asafetida- 1/4 tsp கருவேப்பிலை / Curry leaves- little வெங்காயம் / Onion ( medium sized) -2 தக்காளி / Tomato-2 ( medium sized) பூண்டு / Garlic - 4 ( cut ) இஞ்சி விழுது / Ginger paste- 1/2 tsp சீரகப்பொடி / Jeera powder- 1/2 tsp தனியா பொடி / Coriander powder-1 tsp கசூரி மேதி ( Dried fenugreek leaves) - 1 tsp கொத்தமல்லித்தழை / Coriander leaves- little மிளகாய் பொடி / Chili powder- 1/2 tsp உப்பு / Salt -1 tsp Method: Wash all lentils thrice & soak them for 15 minutes. After 15 minutes keep dal in a pressure cooker & cook the same for 3 to 4 whistles. After cooking cool the same & mash it nicely. Heat oil in kadhai. Add mustard, jeera, asafetida, green chili, garlic & ginger. Sauté them & then add nicely cut onion. Keep onions for 2 minutes till it becomes little soft. Then add finely cut tomatoes & mix. Fry them till tomatoes & onion becomes soft. Add 1 cup of water & cook the same with a lid. Add cumin, chili & coriander powder & mix. After boiling the same add mashed lentils. Add some more water as per consistency. Mix it. Boil the same for 2 min & switch off the stove. Add coriander leaves on top. Peel apple in small pieces & add. Add milk, curd, almonds, raisins, dates, pomegranate, pumpkin seeds, melon seeds & milk cream. Mix it nicely. Keep it covered & rfrigerate for 24 hrs. Yummy, healthy Bircher muesli is ready for breakfast. Dahi Aloo Recipe in Tamil/How to make Curd Potato subzi/Potato in spicy curd gravy/Side dish recipe

Ingredients: உருளைக்கிழங்கு / Baby Potatoes-1/2 kg கட்டி புளிக்காத தயிர்/ Thick fresh curd - 6 tbsps எண்ணை / Oil - 4 to 5 tsps மஞ்சள் தூள் / Turmeric powder- 1/4 + 1/4 tsp தனியா தூள் / Coriander powder- 1 tsp சீரகத்தூள் / Jeera powder-1 tsp கரம் மசாலா / Garam masala- 1 tsp காஷ்மீரி மிளகாய் தூள் / Kashmiri chili powder- 1 tsp பச்சை மிளகாய் / Green Chili- 3 ( slit ) இஞ்சி பூண்டு விழுது / Ginger garlic paste- 1 tsp வெங்காயம் / Onion - 2 ( medium size finely chopped) கொத்தமல்லித்தழை / Coriander leaves- little சீரகம் / Cumin / jeera- 1 tsp தண்ணீர் / Water- 1.5 cups ( can add more as per consistency) Method: Take curd in a bowl. Add turmeric, Jeera, coriander, Kashmiri chili & garam masala & mix it nicely. Keep it covered & let it be for 10 minutes. Clean potatoes & cook in a pressure cooker for 3 whistles. Cool the same & peel the outer skin. Poke all potatoes with a fork so that all masalas go inside potatoes while making the subji. Heat 5 to 6 tsps of oil in a Kadhai. Add peeled potatoes & fry till golden brown in medium flame. After frying keep it in a separate bowl. In the same Kadhai add jeera. When it gets roasted add ginger garlic paste and fry till the raw smell goes. Add finely cut onions & fry them nicely till it is soft after adding a little salt to that. After frying onions switch off the stove & cool the onions a little & then add curd mixture to that. Mix it nicely. If we add curd when it is hot, it will get curdled. So cool & then add. Again keep it in the flame & mix. Add 1.5 cups of water to that & cook it for 2 to 3 minutes with lid on medium flame. Then add potatoes to that & again cook it for 5 min with lid. Lastly add coriander leaves on top & transfer the same in a serving bowl. Our yummy Dahi Aloo is ready to serve as side dish with Roti, Paratha, poori & any rice items. Enjoy Ranjis Flavours! Ingredients: அரிசி / Rice- 1/2 cup பாசிப்பருப்பு / Mung Dal-1/2 cup ( any dal of ur liking can take) எண்ணை / Oil - 4 to 5 tsps நெய் / Ghee- 4 tsps சீரகம் / Cumin/ Jeera- 1 tsp பச்சை மிளகாய் / Green chilli- 2+2 கிராம்பு / Cloves-2 பட்டை / Cinnamon- 1/2 inch வெங்காயம் / Onion-1 ( big) கருவேப்பிலை / Curry leaves- little தக்காளி /Tomato-1 ( big) பீன்ஸ்/Beans -4 to5 காரட் / carrot-1/2 குடை மிளகாய் / Capsicum-1/2 ( any veggies of ur choice can be added OR without veggies also we can prepare only with onion & tomato) உப்பு / Salt - as per taste சீரகப்பொடி / Jeera powder- 1/2 tsp தனியா பொடி / Coriander powder-1 tsp மஞ்சள் பொடி / Turmeric powder- 1/2 + 1/2 tsp மிளகாய் பொடி / Chili powder-1/2 tsp பூண்டு / Garlic - 4 cut in small pieces Method: Wash rice & dal nicely 2 to 3 times. Place the same in a pressure cooker. Add 1/4 tsp of turmeric powder & 1/2 tsp of salt to that. Add 3 cups of water & cook the same in medium flame for 4 whistles. Cool the same & mash nicely Heat oil & ghee in a Kadhai. Add Jeera, clove, cinnamon, onion, garlic & curry leaves. Sauté nicely till they cook nicely & raw smell goes in garlic. Then add all veggies & cook with a lid. After 2 minutes add 1 cup of water to cook it nicely. Then add all masalas turmeric, cumin, coriander, chili & salt When it is cooked nicely add the mashed rice & dal to that. Before adding into that add 2 cups of water & mash it. Mix all veggies & rice together in a low flame nicely. See the consistency of kichadi. We can add more water to that as per choice. Cover it to get a nice mixture. After 2 minutes Kichadi will be ready. Add some ghee to that. Transfer the same in a serving bowl. Heat 2 tsps of ghee, add chili, & 1/4 tsp of chili powder to that. Add this Tadka on top of kichadi & serve with coriander leaves on top. Our yummy, easy, tasty Veggies Dal Kichadi is ready. Ingredients: பாசிப்பருப்பு / Mung dal- 1/2 cup கடலைப்பருப்பு / Bengal gram - 1 tbsp அரசி மாவு / Rice flour- 1 cup எண்ணை / Oil- 6 to 7 tsps தண்ணீர் / water- 2 cups உப்பு / Salt- to taste பச்சை மிளகாய் / Green chili-4 பெருங்காயம் / Asafetida- 1/4 tsp மஞ்சள் பொடி / Turmeric powder- 1/4 tsp மிளகாய் பொடி / Red chili powder- 1/2 tsp கருவேப்பிலை / Curry leaves- little துருவிய தேங்காய் / grated coconut- 3 to 4 tbsps Method: Wash mung dal, Bengalgram nicely & soak in water for 1 hr. After 1 hr grind dal with green chili, Asafetida & salt coarsely. Steam the same in cooker for 15 minutes & then cool. Take 2 cups of water in kadhai. Add 1 tsp of oil & salt to that. Let it boil. Then add 1 cup of flour to that & mix it in medium flame. Keep it covered & cook for 2 minutes. After 2 minutes keep the dough in a plate to cool. After cooling make the dough nicely with little water & oil to get a smooth dough. Take the cooled dal , cut it & make pooran in mixer by turning little. Then mix rice dough & mung dal Puran together with little turmeric powder & chili powder by adding little oil on hands. Roll the dough in small balls & flatten the same. Make all kozhukattai & steam the same for 15 minutes in a steamer. After 15 minutes take out the Thattai kozhukattai in a plate. Add grated coconut on top & coriander leaves. Yummy Thattai kozhukattais are ready to give it to Lord Ganesha. Happy Ganesh Chaturthi to u all. Paal kozhukattai/Milk modak/How to make milk kozhukattai/Ganesh Chaturthi special Recipe


 

அரசி மாவு / Rice flour-1/2 cup நெய் / Ghee- 1.5 tsps தண்ணீர் / Water- 3/4 cup வெல்லம் / Jaggery - 3/4 cup ஏலக்காய் / Cardomom- 4 பச்சை கற்பூரம் / Edible camphor- little தேங்காய் பால் / Thick Coconut milk- 3/4 cup பால் / Milk - 2 cups Method: Take milk in a pan. Add 1/2 cup of water & let it boil in low flame. Take Jaggery in a pan. Add 1/4 cup of water that & make thick syrup by boiling the same. Let it cool Take ghee in a pan. Add water & a pinch of salt. Let it boil. Then add rice flour to that and mix nicely. Cook the same for 2 to 3 minutes till it cooks nicely. Take out the dough in a vessel & cool the same. After it cools down sprinkle little water to that & make a nice dough with hand & cover it with a lid. Take the dough in hand & make small balls & drop it in hot milk . OR Take the dough in a Murukku maker press & make plain murukku with dough directly in the milk. It can be cut with a scissor when the murukku comes out of the press. Let it cook for 2 to 3 minutes. It should not be stirred at that time. Then add Jaggery syrup & mix. Then add edible camphor, cardamom & mix it. Lower the flame & add coconut milk to that & mix it. After adding coconut milk it should not be boiled. Switch off the flame & transfer the same in a serving bowl. Keep pal kozhukattai to Ganesha & pray for a healthy year for all. #RavaDosai#SujiDosa#SemolinaDosaRecipe#RanjisFlavours Ingredients: With this measurement, 2 people can eat for breakfast or for dinner ரவா / Semolina/ Suji- 1/2 cup அரிசி மாவு / Rice flour- 1/2 cup மைதா மாவு / Maida- 1 tsp உப்பு / Salt- to taste பச்சை மிளகாய் / Green chili- 1 to 2 கருவேப்பிலை / Curry leaves- little இஞ்சி / Ginger- a small piece மிளகு+ சீரகம் / Pepper + cumin/ Jeera- 1/2 + 1/2 tsp கொத்தமல்லி / Coriander leaves- little முந்திரிப்பருப்பு / Cashews- 4 to 5 ( cut) தண்ணீர் / Water- 2 cups Method: Take nice or big Rava & add rice flour. Add Maida, salt to that. Mix it nicely. Then add 1 cup of water & mix. Let it rest for 1 hr. Take That batter In the mixer grinder & grind nicely. Then add pepper, cumin, curry leaves, coriander leaves, green chili & cashews. Give it a nice mix after adding 1 more cup of water. Let it rest for 1/2 an hour more. Heat Tava. Before spreading the dosa mix on Tava, sprinkle some water & wipe it with tissue paper. Mix the batter nicely every time before spreading on Tava. Then pour the batter on Tava & spread it all over. Pour oil all the sides & let it get roasted in medium to high flame. (Can add ghee also to get a nice ghee roast Rava dosa ) When roasted fold & take out from Tava. Make all Rava dosas in the same way. Preparation of chutney: Take 1/2 cup of grated coconut, 4 cashews, green chili, ginger & salt in a mixer grinder & make a yummy chutney as a side dish for Rava dosa. Serve hot with yummy chutney & Sambar. #AmritsariCholeRecipe#HowToMakeChole# Ingredients: வெள்ளைக்கொத்துக்கடலை/ White Kabuli Chana-1 cup ( washed & soaked overnight ) தக்காளி / Tomato -2 ( make puree) வெங்காயம் / Onion- 2 ( finely chopped) சீரகம் / Jeera/ cumin-1 tsp பிரிஞ்சி இலை/ Brinji leaves/ Tej patha-1 மஞ்சள் தூள் / Turmeric powder-1/2 tsp+1/2tsp உப்பு / Salt- As per taste காஷ்மீரி மிளகாய் தூள்/ Kashmiri chili powder-1 tsp சீரகம்பொடி / Jeera powder-1 tsp கொத்தமல்லிவரைப் பொடி/ Coriander powder-1 tsp சாட் பொடி/Chaat powder-1/2 tsp கரம் மசாலா / Garam masala-1 tsp கசூரி மேதி பொடி/ Kasuri Methi powder- 1 tsp காய வைத்த மாதுளைப்பொடி/ Dried pomegranate powder- 1 tsp மிளகாய் பொடி/ Chili powder- 1/2 to 1 tsp தண்ணீர் / Water- 1.5 cups டீ தூள் / Tea powder- 1.5 tsp நட்சத்திர சோம்பு / Star anise-1 பட்டை / Cinnamon-1 inch கிராம்பு / Cloves-2 Method: Wash & soak Chana overnight in water. Take a cotton cloth . Place star anise, cinnamon, green cardomom,black cardomom & tea powder in that cloth & make a knot out of that. After soaking of Chana for overnight, take that in pressure cooker & add that masala knot in that. Add turmeric powder & salt . Cook the same for 8 to 9 whistles. Let it cool. Heat 4 tsps of oil in a Kadhai. Add Jeera & Brinji leaves. Then add finely chopped onion to that & sauté. Then add garlic & ginger paste & fry till the raw smell goes. Then add turmeric , chilli, Jeera, coriander powder & mix. Then add tomato purée to that , cover with a lid & cook. Then add dry pomegranate powder & Kasuri Methi. After frying nicely add 1.5 cups of water . Cook it with a lid for 2 min. When pressure releases take out Chana. Remove the masala knot from that. Drain the water from Chana. Take 2 tbsps of Chana separately & mash it in mixer. Add cooked Chana in kadhai & mix. Add mashed Chana also to that for a smooth consistency & texture. Mix all & cook for 3 minutes with a lid. Add the drained water from Chana also to that. Adjust the water as per consistency choice. Add chaat powder & garam masala at last & mix After 3 minutes of cooking add coriander leaves on top & serve. This is awesome chole recipe which can be accompanied by roti, Paratha, Bhature , puri or rice. It is very tasty, crispy fry & Can be served as aide Dish with rice.Try this & give your feedback Ingredients: சேப்பங்கிழங்கு / Colocasia- 1/2 kg உப்பு / Salt- to taste எண்ணை/ Oil- to fry கடலை மாவு / Bengal gram flour- 2 tbsps அரச மாவு / Rice flour - 2 tbsps ( instead of rice flour only corn flour or maids can be added) சோள மாவு / Corn flour- 2 tsps வறுத்த சீரகப்பொடி / Roasted cumin powder- 1/2 tsp மாங்காய் பொடி / Dry Mango powder- 1/2 tsp மஞ்சள் தூள் / Turmeric powder- 1/4 tsp சிகப்பு மிளகாய் பொடி / Red chili powder- 1/2 tsp காஷ்மீரி மிளகாய் பொடி / Kashmiri chili powder- 1 tsp எண்ணை / oil - 2 tsp to add to the flour பெருங்காயம் / Asafetida - 1/4 tsp Method: Wash & dry colocasia. Pressure cook colocasia for 1 whistle. Once it is cooled take out the outer skin & cut them into slices. Take a bowl. Add Bengal gram, rice flour, asafetida, turmeric, red chili, Kashmiri chili powder, cumin powder & salt. Mix all nicely. Add sliced colocasia & coat the powder all over nicely. Rest the same for 25 to 30 minutes. After that, all colocasia slices are coated with the flour nicely. Heat oil in a kadhai. Put all pieces one by one in hot oil. Fry them till get a golden color in medium flame. Fry all in the same manner. Serve hot with fried curry leaves on top. Crispy, tasty colocasia fry is ready like we get in South Indian marriages. Ingredients: கடலைப்பருப்பு / Bengal gram- 1 cup துவரம்பருப்பு / Tuvar Dal / Pigeon lentil- 1/2 cup உளுத்தம்பருப்பு / Split black lentil / Ulad Dal- 1/4 cup உப்பு / Salt - to taste இஞ்சி / Ginger- 1 inch sliced பெருங்காயம் / Asafetida- 1/4 tsp சிகப்பு மிளகாய் / Red chili- 5 கருவேப்பிலை / Curry leaves- little எண்ணை / Oil - to fry vadas கொத்தமல்லித்தழை / Coriander leaves- little வெங்காயம்/ Onion- 1 Method: Wash all dal thrice & soak in water for 2 hrs. After 2 hrs drain the water from dal in a strainer before grinding for vada. Take ginger, red chili, Asafetida, salt & curry leaves in a mixer jar. Add all dal & grind it to a coarse batter. ( then only vadas will be crisp) Add onion & coriander leaves& mix it nicely in the batter. (Instead of onion we can add cabbage or any vegetable of your choice with the batter & make vadas) Heat oil in kadhai. Make small balls equally with the batter & keep it ready. When the oil is hot make small vadas by pressing in hand and fry in hot oil in medium flame. Make all vadas & serve hot with tomato ketchup. These vadas are crispy outside & soft inside. Ingredients: For making Bun dosa batter: பச்சரிசி / Raw Rice- 2 cups துருவிய தேங்காய் / Grated coconut- 1 cup வெந்தயம் / Fenugreek- 1 tsp சன்ன அவல் / Thin Poha- 1 cup For making chutney: துருவிய தேங்காய் / Grated fresh coconut- 1/2 cup உப்பு / Salt- to taste பொட்டுக்கடலை / Roasted gram- 2 tbsps கொத்தமல்லித்தழை/ Coriander leaves- little பச்சை மிளகாய் / green chili-2 Take all these ingredients in a mixer jar & grind to a paste. Our chutney is ready. Make tempering with mustard, 1 red chili & curry leaves. Method to make bun Dosa: Wash & soak raw rice for 4 hrs , so also Methi. After 4 hrs grind to a nice batter & keep aside. Wash Poha twice . Grind the same with grated coconut to a paste & mix it with the batter thoroughly with hand. Ferment the same for 6 hrs. After 6 hrs we can make bun Dosa. Heat Tawa . Take a laddle of batter & make dosa without spreading the batter. It should be thick. Pour oil around & cover with a lid. #TomatoKorma#ThakkaliKurumaRecipe#How to make TomatoKorma#RanjisFlavours Ingredients: தக்காளி / Tomato- 3 வெங்காயம் / Onion- 2 பூண்டு / Garlic- 4 to 5 பிரிஞ்சி இலை / Brinji leaves-1 எண்ணை / Oil - 3 to 4 tsps தேங்காய் / grated coconut- 4 tbsps பச்சை மிளகாய் / Green chili- 2 உப்பு / Salt- to taste சோம்பு / Saunf- 1/2 + 1/2 tsp கச கசா / kus kus- 3/4 tsp கருவேப்பிலை / Curry leaves- little கொத்தமல்லி / Coriander leaves- little சீரகப்பொடி / Cumin powder- 1/4 tsp மஞ்சள் தூள் / Turmeric powder-1/2 tsp Method: Grind grated coconut, green chilli & saunf to a nice paste & keep it Heat oil in a Kadhai. Add Brinji leaves, saunf & garlic. Sauté nicely & then add onion. After onion gets soft add tomatoes & fry. Add turmeric powder , cumin powder & mix. Add 1 cup of water to that. Cook the same with lid covered for 4 minutes. After it gets cooked add the ground coconut paste to that & mix. Add water again to check the desired consistency. Boil the same for 2 minutes & switch off the flame. Yummy tomato Korma is ready to serve . Add coriander leaves on top. This is the excellent side dish for Palappam, roti , puri , Paratha or pulao. Ingredients: பச்சரிசி/ Raw rice-2 cups உப்பு / Salt- to taste ஈஸ்ட் / Yeast- 1 pinch தண்ணீர் / Water- 1.25 cups துருவிய தேங்காய் / grated Coconut 🥥- 1/2 Method: Wash rice thrice & soak in water for 4 hrs. Drain the water & grind rice to a nice batter. Take 3 tbsps separately in a vessel. Then grind the remaining rice with coconut to a nice paste. Cook the 3 tbsps of batter which is kept separately by adding 1/2 cup of water. After cooling the same add one cup of cooked rice to that & grind to a nice paste. Mix all the batter in a bowl with salt by hand nicely. Then add a pinch of yeast & mix together. Keep this for 8 hrs to get fermented. Mix it nicely & add 1 tsp of sugar & mix it before making appam. Then the batter is ready to make Palappam. Heat an Appam Kadai. Grease with a little oil using tissue paper. Pour the Appam batter in the middle of the kadhai. Rotate the kadhai in a round manner to spread the batter evenly. Close the Kadhai with a lid for 2 to 3 minutes. After 3 min opens the lid. We can take out the Appam very easily by hand. Make all Appam in this way. Serve hot Appam with vegetable stew or coconut milk or tomato korma which are very tasty as a side dish. Ingredients: கோவைக்காய் / Ivy gourd- 1/2 kg எண்ணை/ Oil- 4 tsps சீரகம் / Jeera/ Cumin- 1/2 tsp கடுகு / Mustard- 1 tsp வெங்காயம் / Onion- 2 உருளைக்கிழங்கு / Potato-2 மஞ்சள்தூள் / Turmeric powder- 1/2 tsp சீரகத்தூள் / Jeera powder- 1 tsp கொத்தமல்லிவிரைப் பொடி/ Coriander powder- 1/2 tsp மிளகாய்தூள் / red chili powder- 1/2 tsp காஷ்மீரி மிளகாய்தூள் / Kashmiri chili powder-1/2 tsp கருவேப்பிலை / Curry leaves- little உப்பு / Salt- to taste பெருங்காயம்/Asafoetida -1/4 tsp Ginger garlic ( optional) Method: Wash & cut ivy gourd vertically in thin slices. Keep the same in water. Cut potatoes in thin pieces & keep in water. Cut onion in thin slices. Drain water from Ivy gourd & potatoes Heat oil in a kadhai. Add mustard, jeera & onion. Sauté for a minute. Then add potatoes & ivy gourd. Mix it nicely. Add salt to that. After 2 to 3 minutes add jeera, coriander, turmeric . Give it a nice mix. Sprinkle some water & cover with a lid. Cook it in medium flame for 6 minutes. After 6 minutes add chili powder & curry leaves. Check whether ivy gourd & potatoes are well cooked. Again cover it for 5 minutes & fry nicely. After 5 minutes ivy gourd fry is ready to serve. This can be a side dish for roti, paratha & rice. Ranjis Flavours: Soft Idlis/ Idli / இட்லி / Idli receipe/Soft Idli batter receipe/Idly Maavu Receipe

Ingredients: Idli Rice / இட்லி அரிசி - 4 cup ( if idly rice is not available we can use boiled rice 2 cups & raw rice 2 cups ) Split black gram lentils/ உளுத்தம்பருப்பு - 1 cup வெந்தயம் / Fenugreek- 1 tsp Salt / உப்பு - 3 to 4 tsp Method: Wash Idli rice and soak it for 6 to 7 hrs. Wash black gram lentils and soak it for 1/2 an hour. ( no need of soaking it overnight as many people think) Soak fenugreek for 4 hrs. It should be soaked nicely so that the fluffy ness of idly will be v nice. Mix lentils & fenugreek, grind in a grinder nicely by adding water in between to get the required consistency as shown. Grind rice separately to the required consistency as shown. It should not be like a paste. Should be coarse. Mix rice & dal batter with salt and keep it for 5 hrs. ( if it is summer it will ferment early, but in winter it takes time to ferment) The batter can be kept in the fridge after fermentation. When pouring the batter in idly mold, it should NOT be mixed again. Otherwise, the fluffy ness will not be there in idlis. Add the batter to molds and steam it for 7 to 8 minutes. After steaming it should be taken out and cooked for 5 minutes. Then we can take out the idlis and serve with coconut chutney & sambar, Red chutney powder, etc. Our Soft idlis r ready. Moong vadi masala curry/Moong vadi rassa recipe in Tamil/Mangodi ki Subzi/Pasi paruppu vadam gravy

Ingredients: To make Moong vadi: பாசிப்பருப்பு / Green split Moong dal- 1 cup பச்சை மிளகாய் / Green chili-2 உப்பு / Salt- to taste( little) Method: Wash mung dal thrice & soak in water for overnight. Drain the water from dal in the morning. There should not be water before grinding. Add green chili & salt . Grind to a nice paste. Grease a plate with oil. Keep small portion of the batter in a plate with hand. Dry in sun for 3 days. Our mung wadi (Mangodi) is ready Ingredients for making gravy subzi : எண்ணை / Oil - 4 to 5 tsps தக்காளி / Tomato- 2 பச்சை மிளகாய் / Green chili- 3 இஞ்சி / Ginger- 1/2 inch வெங்காயம் / Onion- 2 உப்பு / Salt- to taste மஞ்சள் பொடி / Turmeric powder- 1/4 tsp சீரகப்பொடி / Jeera /cumin powder- 1/2 tsp கொத்தமல்லிவிரைப்பொடி/ coriander powder- 1/2 tsp கரம் மசாலா / Garam masala- 1/2 tsp கொத்தல்லித்தழை / Coriander leaves- little கசூரி மேதி / Kasuri methi- 1/2 tsp பாசிப்பருப்பு வடாம் / Mung vadi- 1/2 cup Method : Take tomato, ginger & green chili in a mixer jar and make a paste. Take a small pressure cooker. Heat oil . Add jeera. Then fry mung vadi till getting golden color & keep aside. Break the vadis Into small pieces .In the same oil add onion. After frying for 2 minutes add tomato paste to that & mix it. Let it cook for 3 minutes. Add turmeric, Kashmiri chili, jeera, salt & coriander powder & mix it nicely. Add fried vadi to that & mix it. Add 1.5 cups of water to that. Close the lid and cook for 3 whistles. When it gets cooled add Kasuri methi & garam masala to that & mix it. Boil for a while & switch off the flame. Transfer the subji in a serving bowl. Add coriander leaves on top & serve hot with Phulkas, Roti, Paratha or any rice item. This subji Is very famous In north India.
