Ingredients: முந்திரி / Cashews - 1/2 kg தண்ணீர் / Water- 2 tbsps உப்பு / salt - 1/2 kg( to roast cashews) சாட் பொளடர் / Chaat powder- 1/2 tsp மிளகாய் பொடி / Chili powder- 1/2 tsp ( can add more as per taste) கருப்பு உப்பு / Black salt- 1/2 tsp Method: Heat salt in kadhai in low flame. Select full cashews to roast. Take cashew in a vessel. Add 2 tbsps of water & mix well. Keep it covered & keep it for 25 to 30 minutes. After 25 minutes add cashews in the hot salt & mix well in low flame for 15 minutes. Roast it for 15 minutes well by stirring till I get golden color. Switch off the flame. Remove the excess salt by keeping it in a strainer & remove. Now salted cashews are ready. Take half of the cashews & make masala cashews. Melt ghee in kadhai. Add cashews & add chaat powder, chili powder & black salt. Mix well & roast it for 2 minutes. Masala cashews are ready now. This can be stored in airtight container & used for more than a month. Ingredients: பூசணிக்காய் / Ash gourd- 1 kg அவல் / Flattened rice/ poha- 1.5 cups ஜவ்வரிசி / Sago/ Sabudana- 1/2 cup பச்சை மிளகாய் விழுது / Green chili paste- 1 tsp பெருங்காயம் / Asafetida - 1/2 tsp உப்பு / Salt - 3/4 tsp எலுமிச்சம்பழ சாறு / lemon juice - 1 tsp தண்ணீர் / water- 1/2+ 1/2 cup to soak & cook sago Method: Wash & peel the outer skin of white pumpkin. Grate the same in a grater. Squeeze the water nicely & keep it in a bowl with some weight on top to take out the excess water. Do this on previous day night & keep it in fridge. Wash & soak sago in water for 4 hrs. (If necessary previous night also we can soak) After 4 hrs cook sabudana in 1/2 cup of water by stirring constantly. Cook it well. Wash Aval ( flattened rice) thrice . Then drain the water & keep it for 1 hr. Take flattened rice in a bowl. Add squeezed white pumpkin, cooked sago. Heat 2 cups of water & add in sago . Soak it overnight. Mix well. Boil 2 potatoes & peel the skin & grate in grater. Mash it well & keep it aside. Boil 1.25 cups of water in a vessel. Add soaked sago to that, mix well. Add red chili flakes, asafetida , salt & carom seeds to it & mix well. Cook it by stirring constantly & in between add 1/4 cup of warm water & cook. Again 1/4 cup of warm water & lastly again 1/4 cup of water. It cooks well with a total of 2 cups of water; then mix mashed potatoes nicely. There should not be any lumps in that. Cool the same. Arrange a piping bag or any plastic cover. Fill the bag with sago paste & put ribber band on top side so that the batter doesn’t come out. Give a small at the corner of the piping bag. Slowly make Kurkure by pressing , to a small stripes evenly in a plastic sheet. Make all in the same manner. Fry in hot sun for 3 days nicely. It should be well dried. Can fry in hot oil. Take cream milk in a pan & boil the same in medium flame. When it boils lower the flame & add lemon water little by little & mix well to separate paneer & whey. #ashgourd#badi #பூசணிக்காய்#வடாம்#ulad Ingredients: பூசணிக்காய் / White pumpkin- 1.75 kg உளுந்து / Ulad dal- 2 cups சிகப்பு மிளகாய் /Red chili - 8 பெருங்காயம் / Asafetida- 1 tsp கருவேப்பிலை / Curry leaves- little இஞ்சி / Ginger- 1.5 inch உப்பு / Salt - 1 tsp Method: Wash & soak Ulad dal overnight. ( can take black Ulad also with skin) Remove the outer skin of the pumpkin. Grate in grater. Squeeze the water in the pumpkin completely by keeping it in a cotton cloth. Take out the water nicely & keep the grated pumpkin in a strainer & keep any heavy thing on top to take out the excess water if any for 1 hr. After that keep the grated pumpkin in a container & keep it in the refrigerator. Do this process at night so that it will be easy to make in the morning. Next day morning grind dal & masalas nicely to make a thick batter without adding water. Mix it well till it gets fluffy for 10 minutes. Then add grated pumpkin to that & mix well. ( add pumpkin at room temperature) Check by putting the batter in a bowl of water & it should float. Till such time we have to mix well. The batter is ready now to make badi. Take a small potion in hand by dipping hand in the water. Make a small hole at centre so that it dries nicely on all sides. Make all badi in this manner. Dry it in the hot sun for 3 days. Can turn the badis after 7 hrs to the next side. Pumpkin badi will be ready. Can add this in Kadhi or make a gravy subzi by adding onion tomato etc with masalas. It will be very tasty. Ingredients: எள் / Sesame/ Til - 1 cup வெல்லம் / Jaggery - 3/4 cup ஏலக்காய் பொடி / Cardamom powder- 1/2 tsp பொடித்த முந்திரி / Powdered cashews - 1 tsp நெய் / Ghee - 4 tsps Method: Clean sesame & roast it in medium flame till it pops & get a nice aroma. Cool the same in a plate. Grease a plate with ghee all over. After cooling make powder in whipper mode in mixer so also jaggery. Mix the same nicely with cardamom powder. Place a Kadhai & add ghee. Add the sesame jaggery mixture & mix it for 8 minutes to combine jaggery & sesame nicely to make a combined one. Jaggery melts in heat. Place the mixture in greased plate & level & smooth the same with a bottom of a greased cup. After 5 minutes cut is desired slices to make Burfi. Once it is hot add peanuts. Add salt & mix it. Let it boil for 4 minutes with a lid to cook After 4 minutes take out the water by straining peanuts in a strainer. Spread the peanuts in a clean towel to dry. Should be dried so that when we take in hand, water should not be there in peanuts. Add peanuts in hot salt & roast it in low flame for 10 minutes. In between check by removing the outer skin of peanut whether it can be removed or not. Once it is done, take out peanuts in a strainer so as to remove the salt . Then let it cool for sometime. Take a portion of the dough & roll into a Chapathi. Cut in small sizes of puri. Heat oil & fry puris on medium flame . Oil to be hot while frying. Serve fluffy puris with pickle & curd. Ingredients: அரிசி / Rice - 2 cups சுரைக்காய் / Bottle gourd- 350gms உப்பு / Salt - to taste பச்சை மிளகாய் / Green chili- 1 இஞ்சி / Ginger - 1/2 inch பெருங்காயம் / Asafetida- 1/2 tsp தேங்காய் / Coconut- 6 to 7 pieces சீரகத்தூள் / cumin powder- 1 tsp Method: Wash & soak rice for 3 hrs. Peel & cut bottle gourd in to big pieces. Grind bottle gourd, green chili, salt, asafetida & coconut pieces into a fine paste in mixer grinder. Then grind rice into a fine paste. Mix both well and add roasted cumin powder. Mix well & rest it for 2 hrs. Heat tawa & spread oil . Adjust the consistency of batter by adding water. Then make dosa & add oil on all sides. Roast in high flame. Flip to the other side & roast well. Serve bottle gourd dosa with tomato chutney or onion chutney. Crispy tasty bottle gourd dosa is ready for breakfast or dinner. Ingredients: வெள்ளை காராமணி / Black eyed beans- 1 cup பச்சை மிளகாய் / Green chili- 2 இஞ்சி / Ginger - 1/2 inch உப்பு / Salt - to taste பெருங்காயம் / Asafetida - 1/4 tsp வெங்காயம் / Onion- 1 ( big) கொத்தமல்லித்தழை / Coriander leaves - little Garlic ( optional) Method: Wash & soak black eyed beans for 7 to 8 hrs. Let it soak nicely. Drain the water & grind with salt, chili, turmeric, ginger & asafetida without water. The batter is ready now. Heat oil in kadhai. Take small portion & make pakoras . Fry in medium flame till it becomes golden in color. Hot pakoras are ready & can be served with tomato ketchup. Very good evening snack & definitely give it a try. Enjoy Ranjis flavours
