Classic Apple crisp Receipe/ how to make apple 🍎 crisp / ஆப்பிள் கிரிஸ்ப்


Ingredients: ஆப்பிள் / Apple - 1 big பழுப்பு சர்க்கரை / Brown sugar- 1/2 cup( those who like less sugar they can take 1/4 cup) சர்க்கரை / White sugar -1/4 cup ( those who like less sugar they can skip this) ஓட்ஸ் / Plain oats - 1/2 cup மைதா / Maida - 1/2 cup பட்டைபொடி / Cinnamon powder - 1/4 tsp சமையல் சோடா/ Baking soda - 1/4 tsp Baking powder - 1/4 tsp வெண்ணை / Butter - 1/2 cup அலுமினியம் கப்ஸ் / Aluminum cups - 5 Method: Cut Apple into small pieces. Mix the cinnamon powder with that and put in the cups at the bottom as a layer with the help of a spoon. Mix oats, maida,baking soda & baking powder nicely.Take the butter in room temperature. After mixing the above ingredients add butter and make like a paste in nice consistency. Layer the mixture on top of the Apple in the cups. Preheat Oven at 180*c .Arrange all cups in a tray and bake it for 10 minutes. Cool the baked cups for some time .Our Apple Crisps r ready to serve. Enjoy Ranjis flavours! Sambar Vadi / kothambir vadi / coriander crisp rolls/ coriander leaves Vadi/ கொத்தமல்லி ரோல்ஸ்



Ingredients: கொத்தமல்லி / coriander leaves- 1/2 kg( washed & dried) வறுத்த கடலை / Groundnut- 1cup( powdered) மைதா / Maida - 2 1/2 cups கடலை மாவு / Bengal gram powder - 1/2 cup உப்பு / Salt - To taste கசகசா/ khuskhus - 2 tsp சீரகப்பொடி / Cumin powder -1 tsp கொத்தமல்லிவிரை பொடி/ coriander powder - 1 tsp மஞ்சள் பொடி / Turmeric powder- 1/2 tsp மிளகாய் பொடி / chili powder- 1 tsp கரம் மசாலா / garam masala powder- 1/2 tsp எண்ணை / oil - To fry ஓமம் / carom seeds - 1/2 tsp Method: Step 1 ( filling) Heat 1 tsp of oil in kadhai. Add khuskhus, turmeric powder, jeera powder, dhaniya powder ,Garam masala & chili powder and fry. Immediately add washed coriander leaves to that and mix thoroughly by adding salt. Sauté for 2 minutes and then add groundnut powder to that. Mix nicely . It should not be cooked.( just to make it soft , then only the green color of coriander will be maintained). Now our filling for sambhar vadi is ready. Cool the mixture nicely. Step 2 Take maida in a bowl, add salt, Carom seeds and 3 tablespoons of oil in to that and knead nicely. It should be a thick dough( puri consistency).Rest the dough for 10 minutes. Step 3 Heat oil in kadhai for frying. Take the dough in small balls and roll it like roti. Take the coriander filling in a spoon and keep it in center of the roti. Fold the roti from one side and roll. Paste the other end with water by applying at the edges. Fold it nicely on both the edges. Our Sambar Vadi is ready to fry. When the oil is hot fry the vadis till it becomes light brown in color. It should be fried in medium flame. அவல் பாயசம் / Aval payasam Receipe/ Rice flakes Kheer / Poha Kheer/ Flattened rice Kheer



Ingredients:

அவல் / Rice flakes / Poha - 1/2 cup

பால் / Milk - 400 ml

சர்க்கரை / Sugar - 1/4 cup
( As per taste can add more sugar)

ஏலக்காய் / Cardomom- 4 (powdered)

முந்திரிப்பருப்பு / Cashews -5

திராட்சை / Dry grapes - 5

நெய் / Ghee - 2 tsp

Method:

Add 2 tsp of ghee in a vessel and heat. Add cashews & dry grapes and fry it. Keep it aside.

In the same vessel fry rice flakes and fry for 2 to 3 minutes. Then add 200 ml of cold milk to that , in a medium flame to cook the rice flakes.

Boil  the remaining 200 ml of milk and keep it aside.

After the rice flakes cook nicely add sugar to that and mix nicely. Keep it for 2 minutes to mix sugar nicely. Add cardomom powder and milk to that and it will be in a thick consistency.

At last add fried cashews and kismiss to that and transfer in a serving bowl. Our Rice flakes Kheer  is ready to serve. Enjoy Ranjis Flavours!

Bell pepper curry/ குடை மிளகாய் கறி/ Capsicum curry/ Simla Mirch subzi / curry


Ingredients: குடை மிளகாய் / Capsicum-4 வெங்காயம் / Onion- 2 தக்காளி / Tomato-2 கடுகு / Mustard - 1/2 tsp சீரகம் / cumin seeds-1/2 tsp மஞ்சள் பொடி / Turmeric powder - 1/2 tsp மிளகாய் பொடி / chilli powder-1/2 tsp எண்ணை / Oil - 2 to 3 tsp கடலை மாவு / Bengalgram powder - 3 tsp Method: Heat oil in a pan. Add mustard seeds, after it pops add cumin Seeds and onion. Sauté onion and add capsicum. Add salt, turmeric powder, tomato and chili powder. Fry all in medium flame till capsicum becomes soft and cooks nicely. Lastly add Bengal gram powder and sauté till all becomes dry . Ranjis Flavours: பூண்டு ரசம் / Garlic Rasam / Lasoon Rasam /Garlic Rasam appetizer



Ingredients:

பூண்டு / Garlic - 10 to 12

தக்காளி / Tomato 🍅- 2

சீரகம் / Cumin seeds/ Jeera- 1/2 tsp

மிளகு / pepper - 1/2 tsp

புளி / Tamarind- A small piece

உப்பு / Salt - To taste

கொத்தமல்லி / Coriander leaves- little

கடுகு / mustard- 1/2 tsp

நெய் / ghee - 1/2 tsp

Method:

Take tomato and cut into small pieces. Grind garlic,tomato, pepper, tamarind and cumin into a fine  Paste in mixer jar .
Add  the paste in a vessel & boil for 5 min till garlic cooks nicely.

Add some more water to Rasam consistency . Keep in the flame till u get froth on top of rasam. Add 1/2 tsp of ghee in pan & add mustard . Pour the mustard after it pops ,in the rasam.Add coriander leaves on top and our garlic rasam is ready to take as appetiser.

பச்சைப்பயறு தோசை / Green Gram Dosa / Green Mung Dosa/ Pesarattu Receipe / பாசிப்பயறு தோசை



Ingredients: பச்சைப்பயறு / Green gram - 1 1/2 cups அரிசி / Rice - 1/4 cup ( If u want crispy green gram dosa , take 1/2 cup of rice. I have taken 1/4 cup for soft dosa) சிவப்பு மிளகாய் / Red chilli -2 பச்சை மிளகாய் /Green chilli- 4 பெருங்காயம் / Asafoetida- 1/2 tsp உப்பு / Salt - To taste இஞ்சி / Ginger - a small piece கருவேப்பிலை / Curry Leaves- little வெங்காயம் / Onion - 1 ( cut in small pieces) Method: Wash green gram and soak it for 5 to 6 hrs. Wash rice and soak it . Add salt, red chilli, green chili , ginger & asafoetida in a mixer jar and grind. Add rice to that and grind nicely. Grind green gram separately and add to that mixture nicely . Mix the batter nicely and keep it for an hour. Heat Tawa and spread the batter nicely to prepare, Dosa. Pour oil on all side and flip. Our green Gram( Pesarattu) dosa is ready to serve with coconut chutney & sambar. Brinjal chutney/ Roasted Brinjal chutney/ சுட்ட கத்திரிக்காய் துவையல்-தொகையல்/Egg plant chutney


Ingredients: பெரிய கத்திரிக்காய் / Big Brinjal - 2 உளுத்தம்பருப்பு / Black gram split lentil / ulad dal - 3 tsp பெருங்காயம் / Asafoetida- 1/4 tsp சிவப்பு மிளகாய் / Red chilli- 3 உப்பு/ Salt - To taste கருவேப்பிலை / Curry Leaves- little எண்ணை / oil - 1 tsp to fry chilli, asafoetida & ulad dal Method: Coat oil on Brinjal and roast them in medium flame in stove . When it cools take out the skin of Brinjal and Keep them aside. Fry ulad dal, asafoetida & red chilli in oil till dal becomes brown in color. Keep aside and let it cool. Grind the fried ingredients first in mixer jar and then add roasted Brinjal. It should not be a paste, just one turn to mix all ingredients. Add curry leaves on top .That’s all. Our Brinjal chutney is ready to serve with hot rice and ghee. It is very tasty.
