Ranjis Flavours: Kootu karuvadam / kootu vadam / All dal mix Vadi/ badi


Ingredients:

துவரம்பருப்பு / Pigeon pea / Toor dal - 1/2 cup

கடலைப்பருப்பு / Bengal gram/ Chana dal - 1/4 cup

பாசிப்பருப்பு / Green gram split / Moong dal - 1/2 cup

காராமணி / Black eyed beans / chawli - 1/2 cup

உளுத்தம்பருப்பு / split black gram / ulad dal
1/8 cup

பெருங்காயம் /Asafoetida / Hing- 1 tsp

சிவப்பு மிளகாய் / Red chili- 5 to 6

கருவேப்பிலை / curry leaves- 2 tablespoon

உப்பு / Salt - To taste

மஞ்சள் பொடி / Turmeric powder - 1 tsp

Method :

Grind all the above (dal )separately  in a mixer jar nicely and at last with other ingredients and mix nicely to a batter.

Keep small small balls in a plate and dry in the sun for 2 to 3 days. Then our kootu karuvadam/ caramel is ready to fry.
When we don’t have any vegetable we can use this Vadi as subzi in ( kadhi ) morkuzhambu , vathakuzhambu and can be made as a subzi with onion, green chili  and tomato. This is a very useful  for any receipe. Enjoy Ranjis flavours!

Avarakkai Kootu / அவரைக்காய் கூட்டு / Broad beans Kootu

Ingredients:

அவரைக்காய் / Broad Beans - 1/2 kg

பச்சைக்கடலை / Raw groundnuts - 3 to 4 tablespoons

துவரம்பருப்பு / Toor dal / pigeon pea - 1/4 cup

உப்பு / Salt - To taste

புளி / Tamarind - a (small lemon sized ball soaked in water ) Take out the syrup of 2 tsp


To grind:

கடலைப்பருப்பு / Bengalgram- 2 tsp

கொத்தமல்லி விரை / coriander seeds - 3 tsp

சிவப்பு மிளகாய் / Red chilli - 3

துருவிய தேங்காய் /  scrapped coconut 🥥- 3 tablespoons

For seasoning :

கடுகு / Mustard seeds - 1 tsp

உளுத்தம்பருப்பு / Black gram splits / Ulad dal - 1 tsp

கீறிய தேங்காய் / Coconut ( cut in small pieces) - 3 tsp

கருவேப்பிலை / Curry leaves- 2 tsp

கூட்டு வடகம் / Moong Vadi ( made
of all deals and dried in sun)

எண்ணை / Oil - as per requirement for seasoning

Method:

Cut broad beans in thin slices and cook in cooker with salt, water ,1/2 tsp of turmeric powder and asafoetida for 2 whistles.keep aside.

Cook toor dal and make a nice paste.

Fry red chili, Bengal gram separately and then coriander seeds.when it cools grind all the above fried things and coconut coarsely.

Mix the above paste with cooked beans ,mashed toor dal and cooked groundnut.

Heat little oil in Kadhai, add mustard seeds. When it pops add ulad dal,and coconut cuts. Fry till it gets brown in color Fry kootu Vadim also .Add all this in the kootu and mix nicely. Our broadbeans kootu is ready to serve with papad and rice. Enjoy Ranjis flavours!

Ranjis flavours: வெந்தயக்கீரை கறி/Fenugreek leaves curry/Methi Subji



Ingredients: வெந்தயக்கீரை/fenugreek leaves -1/2 kg (cleaned ,cut ,dried) உருளைக்கிழங்கு/potato/. -2 வெங்காயம்/onion -2 தக்காளி/Tomato -2 கடுகு/Mustard seeds -1 tsp சீரகம்/ cumin seeds/jeera -1tsp மஞ்சள் பொடி/Turmeric powder -1tsp மிளகாய்பொடி/chilli powder -1 tsp Salt To taste Bengal gram powder -3 tsp Oil - 5 tsp Method: Heat oil in pan, add mustard seeds,cumin seeds,onion & potato.Mix nicely, add fenugreek leaves(methi) .Add salt, turmeric powder,chilli powder and sauté with closed lid till potato becomes soft. Add tomatoes and sauté for 2 to 3 min.Add Bengal gram powder and mix it and serve. Tips: curry becomes soggy if fenugreek leaves are wet and it should be dry before making. Ranjis flavours: Udhiri Upma / Rice flour Upma/Kara Maa Upma/ Pacha maa podi upma

Ingredients:

அரிசி மாவு / Rice flour - 1 cup

தயிர் / Curd - 1/4 cup

தண்ணீர் / Water - 1/4 cup
( we can add water less than 1/4 cup also as per consistency)

கடுகு / Mustard seeds- 1 tsp

உளுத்தம்பருப்பு / split black gram - 1 tsp

சிவப்பு மிளகாய் / Red chili 🌶-2

மோர் மிளகாய் / Dahi mirchi -4

பெருங்காயம் / Asafoetida-1/2 tsp

கருவேப்பிலை / curry leaves- 2 tsp

உப்பு / Salt - To taste

எண்ணை/ Oil - 5 to 6 tsp

Method:

Mix rice flour with salt, curd and water to required consistency.

Heat oil in Kadhai add mustard. When it crackle add black split gram . When it becomes light brown in color add dahi mirchi ,asafoetida, red chili, and curry leaves.
Add the mixed rice flour batter to that and mix nicely in medium flame. Go on stirring so that the flour batter becomes separate like Upma .Cover with lid for 2 to 3 minutes. Our raw rice powder Upma is ready to serve hot.

This upma is very tasty when it is hot.

Ranjis Flavours: Paneer paratha / பன்னீர் பராட்டா / Stuffed Paneer paratha

கோதுமை மாவு / wheat flour-1 cup பன்னீர் / Paneer - 150 grams உப்பு / Salt - To taste பச்சை மிளகாய் / Green chili- 1 கொத்தமல்லி / Coriander leaves - 2 tsp சீரகப்பொடி / cumin powder- 1/2 tsp மசாலா பொடி / Garam Masala powder - 1/2 tsp மஞ்சள்பொடி / Turmeric powder - 1/2 tsp Method: Grate paneer and keep. Add cumin powder, green chili, turmeric powder, masala powder, coriander leaves and salt and mix nicely. Add salt to wheat flour and make a dough of roti consistency. Make the dough as balls like and flatten the dough a small round. With hand, make cups like, so that we can stuff the paneer in that. Take paneer and stuff in that and cover nicely to a nice ball. Roll out like roti lightly so that paneer doesn’t come out of that. Heat Tawa and roast roast paratha with oil on both the sides. Our paneer paratha is ready to serve with green chutney, mango pickle and curd. Curd is good combination for all paratha. Enjoy Ranjis Flavours! Ranjis Flavours: Lemon 🍋 rice / எலுமிச்சம்பழ சாதம் / Nimboo rice / Lime rice/Limboo Chagall


Ingredients: அரிசி /Rice - 1/2 cup எலுமிச்சம்பழம் / Lemon 🍋-1 ( juice 3 to 4 tsp as per taste) எண்ணை /Oil - 3 tsp கடுகு / mustard seeds - 1 tsp படலைப்பருப்பு / Bengalgram-1tsp பெருங்காயம் / asafoetida- 1/2 tsp பச்சை மிளகாய் / green chillies- 2 to 3( as per taste) சிவப்பு மிளகாய் / red chilli-1 கருவேப்பிலை / curry leaves- 2 tsp உப்பு / salt - as per taste வெந்தயப்பொடி / fenugreek powder / methi powder - 1/2 tsp மஞ்சள் பொடி /Turmeric powder - 1 tsp or 1/2 tsp Method: Wash rice and add 1 1/2 cups of water and cook. Heat oil in Kadhai. Add mustard. When it crackles add Bengalgram, asafoetida, methi powder,green chilli , turmeric powder, and curry leaves and switch off the flame.Take out the kadhai from the flame.Add salt in that. When it cools add lemon juice to that and let it be for 10 minutes so that the Bengal gram soaks in juice. Cool the cooked rice add 1 tsp of sesame oil ( if u don’t have sesame oil , the same cooking oil can be used). After it cools add the rice with mixture and mix it nicely. Our lemon rice is ready to serve with papad, or potato chips. Tip: when u take the lemon juice from lemon add little salt in a cup and then extract the juice. It should be in salt otherwise lemon juice will become bitter. Ranjis flavours: முருங்கைக்கீரை அடை / Moringa leaves Adai / Drumstick leaves Adai


Ingredients: அரிசி / Rice - 2 cups கடலைப்பருப்பு / Bengal gram - 1/2 cup துவரம்பருப்பு /Pigeon pea / Toor dal - 1/2 cup பாசிப்பருப்பு / green gram / Moong dal - 1/2 cup உளுத்தம்பருப்பு / black gram / Ulad dal - 1/4 cup மசூர் பருப்பு / Red split lentils/ masoor dal - 1/4 cup சிவப்பு மிளகாய்/ Red chilli 🌶 - 6 to 8 பெருங்காயம்/ Asafoetida- 1 tsp உப்பு / Salt - To taste கருவேப்பிலை / Curry leaves- 2 tsp Method: Wash rice and all Dals . Soak it for 2 hrs. Grind rice with salt, red chili, asafoetida, curry leaves in a mixer jar separately. Grind dal also separately and mix both nicely and keep it for 2hours. Take Moringa leaves and wrap it in a towel previously so that all leaves becomes separate. ( this will be easy to take out each and every leaf to become separate)This can be done prior hand. Wash the leaves and mix with the batter. Batter should be grinded coarsely ( not like paste) Heat Tawa and spread the batter in round like dosa , but this should be thick . Make some holes in the middle so that the Adai becomes roast nicely. Flip to the other side and roast. Our Moringa leaves Adai is ready to eat with jaggery, fresh milk cream, sambhar, and red chili powder ( for dosa / idly powder). These r all good combination for Moringa adai. Enjoy Ranjis flavours! Variation: ( if u don’t want to take masoor dal u can add 1/4 cup of toor dal more) (On total the same quantity of rice with all dal. 2:2. This will be for 4 persons. Ranjis flavours: Mor Kuzhambu / Kadhi / Mor kulambu / மோர்க்குழம்பு


Ingredients: தயிர் /Curd whipped: 1 cup துவரம்பருப்பு / Toor dal - 1 1/2 tsp( soaked in water for 15 min) தேங்காய் / coconut 🥥- 4 tsp கடுகு / Mustard seeds - 1 tsp சீரகம் / cumin seeds - 1 tsp மெந்தயம் / fenugreek seeds -1/2 tsp பூண்டு / garlic - 4 ( optional ) இஞ்சி / Ginger - small piece உப்பு / Salt - To taste கருவேப்பிலை / Curry leaves- 2 tsp கடலை மாவு /Gram flour - 2 tsp Method: Whip dahi in a bowl. Grind coconut, jeera, ginger, garlic,1 red chili 🌶 to a fine paste. Mix this in whipped curd with salt, turmeric powder and gram flour & keep in a vessel to boil. Let it boil for 2 to 3 minutes. Transfer this to serving bowl. Heat 1 tsp of oil in Kadhai, add mustard seeds. After it crackle add fenugreek seeds and curry leaves. Add this to Kadhi and mix nicely. Our Mor Kuzhambu ( Kadhi) is ready to eat. This can be mixed with rice and ghee with fried dahi mirch.it is a good combination for roti also. (Normally no vegetable is added with this Kadhi, but if u want u can add fried Bengal gram golas in this). This method normally done in vidharbha . Ranjis Flavours: வாழைப்பூ பருப்பு உசிலி / Banana flower Toor dal curry / vazhaipoo paruppu usili


Ingredients: வாழைப்பூ / Small banana flower - 1 To grind: துவரம்பருப்பு / Toor Dal - 1 cup உப்பு / Salt - To taste சிவப்பு மிளகாய் / Red chilli- 5 பெருங்காயம் / Asafoetida- 1/2 tsp கடுகு / Mustard seeds - 1 tsp உளுத்தம்பருப்பு / Black gram splits - 1 tsp கருவேப்பிலை / Curry leaves- 2 tsp மஞ்சள் பொடி / turmeric powder - 1 tsp எண்ணை / Oil - as per requirement Method: Take out the banana flower and remove the stem at the center , cut , and keep in curd mixed water . We can do this the previous day and keep. Grind Toor dal, salt, asafoetida coarsely in a mixer and keep separate. Mix 2 tsp of oil in that .Steam this dal mixture and banana flower separately in cooker for 15 to 20 minutes. When it is done , take out and drain the water in banana flower completely. Heat oil in Kadhai , add mustard seeds, ulad dal , curry leaves and add the dal mixture , and turmeric powder in that. After 5 minutes of stirring it becomes separate like Upma.( as we have added 2 tsp of oil in that before boiling the dal mixture). Then add banana flower, and little salt to that and mix nicely so that it becomes one into a nice consistency. Add curry leaves on the top and our Banana toor dal curry is ready to eat.
