Ranjis flavours: Mangai Pachadi / Sweet Mango (pachadi/ Raita) / Raw mango Pachadi




Ingredients:

மாங்காய் / Raw mango- 1

வெல்லம் / Jaggery- 1/4 cup

ஏலக்காய் பொடி / Cardomom powder - 1/2 tsp

நெய் / Ghee - 2 tsp

கடுகு / Mustard- 1/2 tsp

உளுத்தம்பருப்பு / split black gram- 1/2 tsp

சீரகம் / Cumin seeds - 1/2 tsp

சிவப்பு மிளகாய் / Red chilli- 1

வேப்பம்பூ / Neem flowers - 1 tsp

உப்பு / Salt - To taste

மஞ்சள் பொடி / Turmeric powder - 1/2 tsp

Method:

Peel Raw Mango  and cut in thin slices. Powder jaggery.

Keep sliced mango pieces in a vessel with water .cook with salt and turmeric powder. When it cooks add jaggery and cook till it becomes a thick consistency.

Add cardomom powder and keep aside. Heat ghee in a pan . Add mustard. When it crackles add split black gram and cumin ( jeera ) , red chili and neem flowers. Fry them and pour in mango Sweet Pachadi. Our mango sweet Pachadi is ready to serve.

This is a special receipe of south India and made on Tamil New Year day. We have all 6 tastes in this mango Pachadi which denotes for all good and bad happenings in our life and pray God to keep our mind in balance and lead a happy life in forthcoming new year .

Ranjis flavours: Raw mango juice/ Aam Panna/ மாங்காய் ஜூஸ்/Mango Panna/ ...





Ingredients: மாங்காய் / Raw Mango- 1 வெல்லம் / Jaggery- 1/4 cup சீரகப்பொடி / Cumin powder - 1/4 tsp ஏலக்காய் பொடி / Cardomom- 1/2 tsp உப்பு / Salt - 1/4 tsp Method: Cook Raw mango in cooker for 2 to 3 whistles. Cool the cooked mango and take out the pulp and mash nicely. Add little water to jaggery ,keep it in a vessel and heat so that jaggery dissolves completely in water. Add cardomom powder, salt,and cumin powder to the mashed raw mango ,mix all this thoroughly with jaggery water so that it becomes nice thick juice and filter that. This can be stored in fridge for 2 to 3 days . Take 2 to 3 tsp add water, and ice in a glass.keep one small piece of Pudina leaves on top of it. Our Raw mango panna ( juice) is ready to serve. Ranjis flavours: வாழைக்காய் பொடிமாஸ் / Raw banana curry / Kacha kela Subzi / vazhaikai podimas

Ingredients: வாழைக்காய் / Raw banana- 3 தேங்காய் / Grated coconut 🥥- 1/2 cup பச்சை மிளகாய் / Green chili- 2 சிவப்பு மிளகாய் / Red chilli 🌶-1 கருவேப்பிலை / Curry leaves- 3 tsp இஞ்சி / Ginger ( grated ) - 1/2 tsp கடுகு / Mustard - 1/2 tsp உளுத்தம்பருப்பு / Split black gram - 1/2 tsp எலுமிச்சை சாறு / Lemon juice - 1/2 tsp Method: Boil raw banana in cooker and cook it. Cool that and Grate in grater and keep aside. Heat oil in Kadhai, add mustard, Black gram,green chilli, ginger, and curry leaves. Sauté it and then add grated raw banana, salt and mix nicely. Add 2 to 3 tsp of water and cover with a lid. After 3 minutes take out the lid and mix. Now add grated coconut and mix. Add lemon juice to that and mix. Our Raw banana subzi ( curry ) ( podimas) is ready to serve hot with rice and dal. முருங்கைக்காய் பொறிச்ச குழம்பு / Drumstick (Kootu/ Kuzhambu) / Moringa Ras bhaji


Ingredients: முருங்கைக்காய் / Drumstick- 4 தக்காளி / Tomato 🍅- 2 துவரம்பருப்பு / pigeon pea / Toor dal - 1/2 cup ( cooked & mashed ) தேங்காய் / grated coconut 🥥- 1/2 cup கடுகு / mustard- 1/2 tsp உளுத்தம்பருப்பு / Black gram dal / Ulad dal - 3 tsp சிவப்பு மிளகாய் / Red chilli 🌶-3 சீரகம் / Cumin seeds / Jeera- 1/2 tsp எண்ணை / oil - 2 tsp மஞ்சள் பொடி / Turmeric powder - 1/2 tsp பெருங்காயம் / Asafoetida- 1/4 tsp Method: Cut drumstick in small pieces, add water and cook by adding salt, turmeric powder & asafoetida. When drumstick gets half cooked add tomato also and cook. Heat oil in kadhai. Add 2 tsp of oil . Add ulad dal ( split black gram), Jeera ( cumin), red chilli and fry till ulad dal gets light brown in color. Grind all this with grated coconut in mixer to a nice paste. Add the above paste, cooked dal to drumstick and mix nicely. Let it boil for 2 to 3 minutes. Heat 1 tsp of oil, add mustard, ulad dal and curry leaves. Pour this mixture in Kootu and serve hot with rice and chips. Our drumstick poricha Kuzhambu is ready to eat. Ranjis flavours: வாழைக்காய் வறுவல் / Raw banana Chips / Kacha kela chips


Ingredients: வாழைக்காய் / Raw banana- 2 உப்பு / Salt - 2 tsp பெருங்காயம் / Asafoetida - 1/2 tsp எண்ணை / Oil - To make chips Method: Peel the skin of raw banana and keep in water. Soak salt and asafoetida in water so that we can use that water while making chips. Heat oil in kadhai and grate the raw banana directly in the hot oil into thin slices. When it is half fried add 1/2 tsp of salt water and asafoetida water in the hot oil. After the chips is fried we can take out from oil and our raw banana chips is ready to eat . Tip : when we add salt water in oil , salt get absorbed in chips , so also the the smell of asafoetida. If we add salt after the chips are made it will not distribute equally in all chips. We can add chili powder after making the chips if needed. Ranjis Flavours : முள்ளங்கி ரொட்டி / Radish Paratha / Mooli paratha


Ingredients:

கோதுமை மாவு /Wheat flour: 1 cup

முள்ளங்கி / Radish - 1 medium size

சீரகப்பொடி /cumin powder/ jeera powder- 1/2 tsp

கொத்தமல்லிவிரை பொடி / coriander
powder / dhaniya powder - 1/2 tsp

உப்பு / Salt - To taste

மஞ்சள் பொடி / Turmeric powder / Haldi powder - 1/2 tsp

மிளகாய் பொடி / Chili powder - 1/2 tsp

எண்ணை / Oil - To make roti

Method:

Grate radish and keep aside.

Take wheat flour in a bowl, add salt, cumin powder, coriander powder, turmeric powder, chili powder and grated radish and make a dough by adding little water to the dough as radish has got more water content by itself. Add one tsp of oil to the dough  and let it rest for 15 minutes.

Make small balls of the dough and make rotis. Heat Tawa and roast the roti by applying oil on both sides. Our Radish roti is ready to eat with onion raita & salads, pickle.

Variation :
We can add 1/2 tsp of carom seeds, and 2 tablespoons of gram flour to make roti crisp and carom seeds helps for digestion.
