Coconut Rice/ தேங்காய் சாதம் / Nariyal Chaval / how to make coconut rice

Ingredients: தேங்காய் / medium size coconut- 1 ( grated) அரிசி/ Rice- 1/2 cup தண்ணீர் / water for cooking rice- 1 1/4 cups கடுகு/ mustard - 1 tsp உளுத்தம்பருப்பு / Split Black Gram/ Ulad dal- 1 tsp பச்சை மிளகாய் / Green chilli- 2 சிகப்பு மிளகாய் / red chilli - 2 பெருங்காயம் / Asafoetida- 1/4 tsp கருவேப்பிலை / Curry leaves - little முந்திரிப்பருப்பு/ Cashews - 12 உப்பு / Salt - as per taste நெய் / ghee - 5 tsp எண்ணை / Oil - 3 tsp Method: Cook rice . Add 2 tsp of ghee and cool. Heat oil in a Kadhai. Add mustard, ulad dal, cashews, green chili, asafoetida, red chili, coconut & curry leaves. Sauté for 2 min in a medium flame after adding salt. Then switch off the stove and cool The fried coconut. Mix coconut mix and rice together after adding required amount of salt . Give it a nice mix. Add 2 tsp of ghee before mixing. Our yummy coconut rice is ready to serve with papad, chips or potato roast. Kasturi Manjal Podi /wild Turmeric powder/ Jungli Haldi powder/ Turmeric powder for skin

Ingredients: கஸ்தூரி மஞ்சள் பொடி/ Wild Turmeric powder- 2 kg Method: Clean Kasturi Turmeric . Keep water in a cooker so that all turmeric to be fully immersed. Cook in a cooker in a high flame for 7 to 8 whistles. After that simmer the flame and keep it for 5 minutes. Then switch off the flame. After opening the cooker lid, drain the water in turmeric and cool nicely. Then spread in a big plate separately from each other and dry in v hot sun for 7 to 8 days. After drying keep turmeric in Turkish towel and rub it nicely so that all unwanted skin will be removed. Then our Kasturi varali Manjal ( turmeric) will be ready to use or to make powder. This is very useful powder for skin. This turmeric can be powdered in machine( chakki) for making powder. Bisi Bele bath/ பிசி பேளே பாத்/ Bisi Belahuli Anna / சாம்பார் சாதம்/Bisibele Bath in Tamil


Ingredients: அரிசி/ Rice- 2 cup துவரம் பருப்பு / Tuvar dal- 1 cup சிறிய வெங்காயம் / Small onion- 200 gms தேங்காய் / Coconut 🥥- 1/2 பீன்ஸ் / Beans- 100 gms காரட்/ Carrot- 100 gms உருளைக்கிழங்கு/ Potato- 2 மொச்சைப்பருப்பு / Butterbeans- 50 gms பட்டாணி/ Peas- 50 gms குடை மிளகாய் / Capsicum- 1/2 தக்காளி / Tomato- 1 கருவேப்பிலை/ Curry leaves- little கொத்தமல்லி / Coriander leaves- little Spices: கடுகு/ Mustard - 1 1/2 tsp கொத்தமல்லிவிரை/ Coriander seeds- 3 tsp கடலைப்பருப்பு / Bengalgram- 2 tsp மராட்டி மொக்கு/ Marathi moggu- 4 கிராம்பு / Cloves - 2 நட்சத்திர சோம்பு / Star anise- 1 சிகப்பு மிளகாய்/ Red chilli- 6 வெந்தயம்/ Methi- 1/2 tsp மிளகு / Pepper- 1/2 tsp சீரகம்/ Jeera/ cumin- 1/2 tsp எண்ணை/ oil - to make நெய் / Ghee - 5 tsp முந்திரிப்பருப்பு/ Cashews- 10 பச்சை மிளகாய் / green chili-1 புளி/ Tamarind- 1 lemon size Soaked in water. Take out the syrup and keep aside பெருங்காயம்/ Asafoetida- 1 tsp மஞ்சள் பொடி/ Turmeric powder- 1 tsp Method: Wash rice & dal. Add 9 cups of water and keep in cooker for 6 to 7 whistles. Heat 2 tsp of oil in a kadhai. Add bengal gram, coriander, red chili, cloves, marathi moggu, Methi, Cumin, Pepper,star anise & coconut & fry. Cool all the ingredients and make fine paste in a blender. Heat 3 tsp of oil in a kadhai. Add small onions & sauté for 3 minutes. Add all vegetables one by one and sauté. Add Tamarind water and cook all vegetables for 10 to 15 minutes. Add all the masalas to the vegetables and mix it. Let it boil for 2 to 3 minutes. Take out the rice and mash nicely with 1 or 2 cups of hot water according to ur consistency. Then add all the vegetables cooked with tamarind water and mix thoroughly. Add 3 tsp of sesame oil & ghee to that and mix. For Tadka: Heat 2 tsp of oil . Add mustard, cashews and curry leaves and fry. Season it , on top of Bisi Bele Bath and enjoy! Serve Bisi Bele Bath with onion, tomato Raita and papad. Even potato fry & potato chips will be very nice combination. As this preparation is a little elaborate, Bisi Bele Bath can be prepared on weekends . Enjoy Ranjis Flavours!

Tomato Rice/ தக்காளி ரைஸ் / தக்காளி சாதம்/How to make Tomato paste for Making Tomato Rice


Ingredients: அரிசி/ Rice - 1/2 cup தக்காளி / Tomato 🍅 medium size- 6 வெங்காயம் / Onion- 2 எண்ணை/ Oil - 3 to 4 tsp பிரிஞ்சி இலை/ Brinji leaves- 1 சிகப்பு மிளகாய் / Red chilli- 1 பச்சை மிளகாய் / Green chilli-2 கடுகு/ mustard- 1 tsp சீரகம்/ Cumin seeds- 1 tsp இஞ்சி / Ginger- small piece பூண்டு / Garlic - 4 pods (cut) கருவேப்பிலை/ Curry leaves- little கொத்தமல்லி/ Coriander leaves- little உப்பு / Salt - to taste Method: Wash and cook 1/2 cup of rice with 1 1/4 cups of water. Cool rice and add 1 tsp of ghee to that and keep aside. Heat oil in a pan. Add mustard, cumin, Brinji leaves, green & red chili, curry leaves & onion. When the onion becomes little transparent add tomato to that. Add salt, turmeric powder & mix nicely. Cook in medium flame till it becomes a paste like and leaves the sides of the pan. Our Tomato paste is ready to mix with rice. ( This can be preserved in refrigerator for 8 to 10 days so that it is easy to mix and make tomato rice for lunch pack etc) After cooling mix the rice with the tomato paste nicely and serve with Papad or onion Raita. வாழைக்காய் கூட்டு/ கச்சல் வாழைக்காய் கூட்டு/ Raw banana in coconut Gravy/ Raw banana gravy subji


Ingredients: கச்சல் வாழைக்காய் /Tender Raw banana- 7 தக்காளி/ Tomato 🍅- 2 துருவிய தேங்காய் / grated Coconut 🥥-1/2 கடுகு/ mustard- 1 tsp உப்பு/ Salt - to taste உளுத்தம்பருப்பு/ Split Ulad dal- 2 tsp சிவப்பு மிளகாய் / red chilli- 2 கருவேப்பிலை/ Curry leaves- little கடலைப்பருப்பு/ Bengalgram- 2 tsp( soaked in water) சீரகம்/ Cumin- 1 tsp இஞ்சி/ ginger- small piece பச்சை மிளகாய் / green chilli- 1 மஞ்சள் பொடி/ turmeric powder- 1/4 tsp மிளகாய் பொடி / chilli powder- 1/2 tsp பெருங்காயம்/Asafoetida - 1/2 tsp Method: Cut raw banana and keep in water. Cook raw banana with turmeric powder , tomato,soaked Bengalgram & salt. Fry Ulad dal & red chilli with oil till brown. Grind coconut, Jeera, green chilli & fried Ulad dal & red chilli in a blender to make a paste. After the raw banana cooks add the paste and mix nicely. Let it boil for 2 to 3 minutes. Heat 2 tsp of oil in a pan. Add mustard , ulad dal, curry leaves . When it gets brown in color pour on top of Kootu.
