Ingredients: Cream உள்ள பால் / Cream milk- 1 litre எலுமிச்சம்பழம் / Lemon- 1/2 ( juice) தண்ணீர் / Water - 3 to 4 tbsps Method: Squeeze the lemon juice & add water & keep it aside. Take cream milk in a pan & boil the same in medium flame. When it boils lower the flame & add lemon water little by little & mix well to separate paneer & whey. Filter the same in a strainer by keeping a cotton cloth to separate it. Squeeze the etc water from the cloth. Keep it in a container & keep heavy bottom vessel on top to take out the etc water. Keep it for 1 hr. After 1 hr paneer is well settled & ready to cut & in a definite shape. Cut in required size & use this. Can be kept in water & then refrigerate. Daily the water should be changed. #pasta #pennepastarecipe #பாஸ்தா #veggies Ingredients: பென்னே பாஸ்தா/ Penne pasta - 2 cup தண்ணீர் / Water - 4 glasses பேசில் இலை / Basil leaves- little வெங்காயம் / Onion- 2 காரட் / Carrots - 1 உப்பு / Salt - 1/2 to 1 tsp ஆலிவ் எண்ணை / Olive oil - 1 tsp வெண்ணை / Butter - 2 tsps பன்னீர் / Paneer - 150 gms பாஸ்தா சாஸ் / Pasta sauce- 2 cups சீஸ் / Cheese - 3 slices Or grated cheese Method: Heat water in a vessel. Add olive oil & salt. Let it become hot. Add pasta to it & cook with a lid. Drain the water after cooking & add cold water to stop cooking. It gets separated. Heat Kadhai . Add butter & olive oil. Add onion, carrots & capsicum & saute. It should not be over cooked. Then add pasta @ mix well. Add basil leaves, paneer & cheese & mix well. Tasty delicious penne pasta is ready with veggies. பூசணிக்காய் வத்தல்வடாம்/White pumpkin vadam/Ash gourd Vadi/पेठा बड़ी/रखिया बड़ी/Ulad dal kumhra badi


 

#ashgourd#badi #பூசணிக்காய்#வடாம்#ulad Ingredients: பூசணிக்காய் / White pumpkin- 1.75 kg உளுந்து / Ulad dal- 2 cups சிகப்பு மிளகாய் /Red chili - 8 பெருங்காயம் / Asafetida- 1 tsp கருவேப்பிலை / Curry leaves- little இஞ்சி / Ginger- 1.5 inch உப்பு / Salt - 1 tsp Method: Wash & soak Ulad dal overnight. ( can take black Ulad also with skin) Remove the outer skin of the pumpkin. Grate in grater. Squeeze the water in the pumpkin completely by keeping it in a cotton cloth. Take out the water nicely & keep the grated pumpkin in a strainer & keep any heavy thing on top to take out the excess water if any for 1 hr. After that keep the grated pumpkin in a container & keep it in the refrigerator. Do this process at night so that it will be easy to make in the morning. Next day morning grind dal & masalas nicely to make a thick batter without adding water. Mix it well till it gets fluffy for 10 minutes. Then add grated pumpkin to that & mix well. ( add pumpkin at room temperature) Check by putting the batter in a bowl of water & it should float. Till such time we have to mix well. The batter is ready now to make badi. Take a small potion in hand by dipping hand in the water. Make a small hole at centre so that it dries nicely on all sides. Make all badi in this manner. Dry it in the hot sun for 3 days. Can turn the badis after 7 hrs to the next side. Pumpkin badi will be ready. Can add this in Kadhi or make a gravy subzi by adding onion tomato etc with masalas. It will be very tasty. Ingredients: எலுமிச்சம்பழம் / Lemon- 10 உப்பு / Salt- 2 tbsps மஞ்சள் தூள் / Turmeric powder- 1 tsp பெருங்காயம் / Asafetida- 1 tsp மிளகாய் பொடி / Chili powder- 2.5 tbsps எண்ணை / Oil - 1 cup Method: Clean , dry & cut lemons. Add turmeric & salt. Mix well & keep it for 4 days. Let it soak well. Fry asafetida in a tadka pan & methi seeds. Cool & make powder if both. Add chili & ground powder & mix with lemon nicely. Heat oil in a pan & add in lemon & mix well. Cool the same nicely for 4 to 5 hours. Take a clean & dryglass bottle which is dried in the sun. Fill the pickle & can be served after 2 days. The same pickle can be kept in hot sun also for 2 days & can be used. Tasty lemon pickle is ready to serve with rice, roti & paratha. Enjoy Ranjis flavours
