Ingredients: அரிசி / Rice - 1.5 cups All dals 1.5 cups Rice : Dal - 1.5 : 1.5 கடலைப்பருப்பு/ Chana dal - 1/2 cup துவரம்பருப்பு / Toor dal/ pigeon dal - 1/2 cup பாசிப்பருப்பு / ( green)Mung dal- 2 tbsps உளுத்தம்பருப்பு / Ulad dal / black gram - 2 tbsps மசூர் பருப்பு / Masoor dal - 2 tbsps திருவிய தேங்காய் / Grated coconut- 4 tbsps உப்பு / Salt - to taste பெருங்காயம் / Asafetida - 1/4 tsp சிகப்பு மிளகாய் / Red chili- 6 கருவேப்பிலை / Curry leaves- little எண்ணை / Oil - to make adai Method: Wash & soak rice & dal separately for 3 hrs. After 3 hrs grind rice with salt, red chili, curry leaves & asafetida to a coarse batter. Grind all dals coarsely . Mix dal & rice nicely & rest it for 2 hrs. Take batter in a separate bowl & add grated coconut & mix well. Heat tava & make adai in round shape & oil all around to make it get roasted in medium flame. Flip to the other side & pour oil nicely. Make all adai in this manner & serve. Best combination for this will be butter & jaggery. Serve hot with side dish. Do try this coconut adai & enjoy.

#oats #pattice #ragdapattiesrecipe #tikki Ingredients: காய்ந்த பட்டாணி / Dried peas- 1 cup ஓட்ஸ் / Oats - 1 cup உருளைக்கிழங்கு / Potato- 4 ( medium size) தனியா பொடி / Coriander powder- 1/2 + 1/2 tsp சீரகத்தூள் / Jeera powder- 1/2 + 1/2 tsp சாட் பொடி / Chaat powder- 1 tsp கருப்பு உப்பு / Black salt- 1/2 tsp பச்சைக் கொத்தமல்லி சட்னி / Green chutney- 2 tsps வெங்காயம் / Onion - 2 tbsps( to add on top of pattice) சேவ் / Sev - 2 tbsps இனிப்பு சட்னி / Khatta meetha chutney- 2 tbsps ( if necessary) கொத்மல்லித்தழை / Coriander leaves- 2 tbsps உப்பு / Salt -as per taste மஞ்சள்தூள் / Turmeric powder- 1/2 tsp Method: Wash & soak peas overnight. Then wash it nicely with water. Cook the same in pressure cooker for 5 whistles after adding turmeric, salt, Jeera & coriander. After 5 whistles cool the same. Then mash peas with potato masher nicely to make ragda & boil for 5 minutes. Add free chili to that. ( not added red chili) can add as per taste. Dry roast oats in a pan & make it powder in a mixer jar when it is cooled. Cook potato separately & mash the same nicely. Add coriander, Jeera, green chili, coriander, chaat powder & add black salt also to that. Make a dough after cooling. Then mix potato & oats powder well & make dough Make round shaped Tikki out of that fry in a pan after adding ghee & oil. Roast nicely on both sides till get golden color. Patties are ready now. To serve: Place peas ragda in a plate & place patties on that. Then add more ragda & add sev, onion, green chutney & meetha chutney & coriander leaves. It tastes so well & v nice street style patties is ready with ragda. Enjoy Ranjis flavours

Ingredients: Nel pori Urundai preparation: நெல் பொரி/ Puffed paddy- 125 gms ( to be measured as 3 parts in a cup ) வெல்லம் / Jaggery - 1 cup ( same cup measurement for pori) ஏலக்காய் பொடி / Cardamom powder- 1/2 tsp சுக்குப்பொடி / Dry ginger powder- 1/2 tsp நெய் / ghee - 1 tsp தண்ணீர் / Water- 1/2 cup ( to be measured in the same cup) Clean the husk of pori & fry in dry Kadhai for 2 minutes. Add water to jaggery & boil in medium flame. Add cardamom, fry ginger powder & mix. When jaggery is dissolved & boil add ghee & mix. To check the consistency, pour a drop of jaggery in a plate with water. The Pak should be in rolling consistency. Then add the jaggery mixture in Murmure & mix wel. Grease the palm with ghee & then make balls out of that. First make Laddoo lightly. After some time make it tight to get nice Laddoos. Now the prasad is ready . In the same way & measurement prepare the poha puffed rice also to get nice Laddoos. Before making clean & dry in hot sun . Store it in airtight container. Enjoy Ranjis flavours!

Ingredients: கடலை மாவு / Gram flour- 1 cup பால் / Milk- 1 cup நெய் / Ghee - 1 cup துருவிய தேங்காய் / Grated coconut- 1 cup பாதாம் பொடி / Badam powder- 1/2 cup ( instead we can take cashew powder also) சர்க்கரை / Sugar - 2.5 cups ஏலக்காய் / Cardamom- 1/2 tsp Method: Grease a tray with ghee. Fry gram flour for 4 minutes in dry kadhai in low flame. Switch off the flame. Add grated coconut, ghee, milk , & sugar to that. Switch on the flame & mix well in medium flame . Stir continuously & add cardamom powder. Full process of stirring takes 20 minutes. Just do it till the mixture leaves the sides of the kadhai. Then pour on the tray & let it cool for some time. When it is warm cut in pieces of any desired shapes. When it cools completely take out the pieces & serve. Yummy, delicious 7 cups Burfi is ready for Diwali 🪔 Enjoy Ranjis flavours! Preparation of Boondi: Ingredients: கடலை மாவு / Gram flour- 2 cups அரிசி மாவு / Rice flour- 2 tbsps மிளகாய் பொடி / Chili powder- 1 tbsp உப்பு / Salt- 1 tsp மஞ்சள் தூள் / Turmeric- 1/4 tsp எண்ணை / Oil - to fry Mix all well & then add water to make batter for Boondi to the correct consistency. Heat oil. Using the Boondi plate add the batter on top of oil. Fry till golden color. Then Boondi is ready. Preparation of sev: Ingredients: கடலை மாவு / Gram flour- 2 cups அரிசி மாவு / Rice flour - 1 tbsp உப்பு / Salt- 1 tsp எண்ணை / Oil- 2 tbsps மிளகாய்தூள் / Chili powder- 1 tbsp Mix dry ingredients & then pour hot oil & mix. Then add water to make batter for sev as shown in video. Take the sev plate in Murukku press & make sev on top of hot oil. Fry on both sides till golden color. Crispy sev is ready now. Preparation of Murukku: Ingredients: அரிசி மாவு / Ricd flour- 1 cup உளுந்து மாவு / Ulad dal flour- 1/4 cup ( dry roast Ulad dal & make powder & sieve) வெண்ணை / butter - 1 tsp உப்பு / Salt - 1/2 tsp Mix all well & then add water to make a semi solid dough ro make Murukku . Fill up the press & make Murukku on oil & fry them till golden. Murukku is ready now. Instead of this we can add ribbon Pakoda also in this. Preparation of maida biscuit: Ingredients: சர்க்கரை / Sugar - 1/4 cup தண்ணீர் / Water - 1/4 cup எண்ணை or நெய் / Oil or ghee- 1/4 cup மைதா / Maida - 1 cup or 1.25 Method: Add sugar, oil& water together & heat Toll sugar melts. Need not be boiled. Just dissolve sugar. Switch off the stove. Cool the same & then add maida to make batter. Rest for 15 minutes. Then make roti out if it & cut in to the desired size & fry till it golden color and becomes crispy. Now the biscuits r ready. Fry peanuts, Poha, roasted gram, curry leaves, and cashews in oil. Keep them in paper so as to absorb excess oil . Add in the mixture. Lastly in dry Kadhai, roast asafetida, red chili powder, turmeric & salt. Add in the mixture & mix well. As we have not added salt, chili etc in Poha & ground nut we are doing this process to get an equal taste in the mixture all over. Our Madras mixture is ready to eat now.
