Aalu 🥔 puri & Aamras recipe in Tamil/ Potato puri & mango pulp/How to make Alu puri & Aamras

This recipe is very famous in Maharashtra & Gujarat.

A combination of potato puri & sweet mango pulp is heavenly  @Ranjis flavours  Ingredients: கோதுமை மாவு / Wheat flour- 1 cup கடலை மாவு / Bengal gram flour - 1/4 cup உருளைக்கிழங்கு / Potato big size-1 எண்ணை / oil - to make puri & to add in batter (2 to 3 tsps) உப்பு / Salt- 1 tsp மஞ்சள் பொடி / Turmeric powder- 1/4 tsp மிளகாய் பொடி / Red chili powder-1/4 tsp பெருங்காயம் / Asafoetida- 2 pinch சீரகப்பொடி / Cumin powder- 1/4 tsp கொத்தமல்லிவிரைப்பொடி/ Coriander powder- 1/4 tsp கசூரி வெந்தய இலை / Kasuri methi powder- 1/2 tsp( crushed) ஓமம் / ajwain- 1/4 tsp( crushed) மாம்பழம் / Alphonso mango- 1 ஏலக்காய் பொடி / Cardamom powder-1/4 tsp சர்க்கரை / Sugar - 2 tbsps Method: Boil , peel & grate potato. Keep it aside Take 1 cup of wheat flour in a bowl. Add Bengal gram flour, salt, grated potato, turmeric, chili, cumin, coriander ( powders), asafoetida, Kasuri Methi, ajwain, oil & mix it nicely. Then add little water to that & make a hard puri batter. Water to be taken is less than 1/4 cup. The batter Should not be watery. Rest it for 15 minutes. Cut mango to pieces. Make pulp after adding sugar & cardamom to that in a mixer. Can add saffron on top of pulp or sliced dry fruits to that before serving. Mango pulp ( Aamras) is ready now. Take puri batter & make small lemon-sized balls to make puri. Heat oil in kadhai & fry all puris in medium to hot flame. Our hot puris are ready to serve with yummy Aamras. Tip 1 Puri batter to be in thick consistency. If we want puffed puri for a long time add 1 tbsp of Rava and make the batter. (While we have any party or get together) Tip 2 Heat oil nicely first & while frying the puris, flame to be in the medium to high. Sun dried Tomato powder Recipe/Homemade tomato powder/How to make tomato powder at home


 

#TomatoPowderRecipe#SunDriedTomatoPowder#RanjisFlavours Ingredients: தக்காளி / Tomato- 3/4 kg Method: Select well ripened thick tomatoes. Wash & wipe it with a cloth. Slice all tomatoes in a round shape after removing the portion on top. Keep a plastic sheet on a plate. Arrange all sliced tomatoes in the plate separately by not not touching with one another. In that way it is easy to dry tomatoes in sun. Dry for 3 days & it should be well dried. Take all dried tomatoes in a mixer jar and make fine powder out of it. Store it in air tight container for usage. Tomatoes can also be preserved in another method , by making purée & freeze in ice trays in freezer. Vazhaikai podi/Raw banana powder Recipe/How to make vazhaikai podi/Green Banana powder Recipe

Ingredients: வாழைக்காய் / Raw banana-3 எண்ணை / Oil- 3 tsps மிளகு / Pepper- 1/2 tsp சீரகம் / Jeera / Cumin- 1/2 tsp கடலைப்பருப்பு / Bengal gram- 2 tbsps உளுத்தம்பருப்பு / Ulad dal- 2 tbsps சிகப்பு மிளகாய் / Red chili- 12 கொப்பரை திருவல்/ grated Dry coconut - 2 tbsps கருவேப்பிலை / Curry leaves- little உப்பு / salt - 1 tsp பெருங்காயம் / Asafoetida- 1/2 tsp Method: Wash & peel raw bananas. Grate the same in a grater & dry it in hot sun for 3 days till it is dried completely. Make powder out of it in a blender & keep aside. Heat 1 tsp of oil in a pan. Roast asafoetida separately till it becomes golden color. Add pepper & cumin. Roast it. Then add Bengal gram , Ulad dal , red chili, curry leaves & dry coconut. Roast all things evenly till it becomes light brown in color. Cool the same. After cooling the masalas grind them to a powder in a blender with asafoetida. Then add raw banana powder to that and make a nice powder. Store it in air tight container preserve. This powder will be v tasty with hot rice & ghee. Our Raw banana powder is ready now. Rava Omapodi Vadam in 15 minutes/Rava Omapudi vadam/Rava Sevai vadam/sooji Kurdai/semolina Vadam

Ingredients: ரவா / Rava / Sooji - 1 cup உப்பு / Salt- 1 tsp தண்ணீர் / Water- 2 cup எண்ணை / Oil - 1 tsp Method: Wash rava with water. Then soak it in water to immerse rava fully. 2nd day Next morning discard the water on top of rava. Again add water to soak it overnight. 3rd morning again discard the water on top of rava . Take out the rava & measure it in a cup . It should be in a cup where it is full so that we can measure water accordingly. Keep 2 bowls of water in a vessel & boil it. ( water to be measured in the same cup where we measured rava) Add salt & oil in the water. Once the water boils add rava to that slowly by stirring it constantly in a medium flame. Then cover it with a plate for 3 to 4 minutes to cook the same After 4 minutes open the lid and again stir it in low flame to cook nicely. We can touch it by hand to see whether it is cooked & small bubbles will come while stirring. Then we can switch off the flame and cover it with a plate to cool. Keep the plastic sheet ready to make vadam. Take a sev type plate & fix it in sev machine by applying oil inside. Fill it with rava and make vadam. We can take thick sev plate also to make . Dry in sun for 2 days. Heat oil in a Kadhai & fry in medium flame . It is very white in colour & easy to make. Try this recipe & give your feedback on this. Tinda RasBhaji Recipe in Tamil / How to make Tinda RasBhaji/ பிஞ்சு பூசணி மசாலா/Side dish subji


 

#TindaRasBhaji#TindaMasala#TindaRasBhajiRecipe Ingredients: பிஞ்சு பூசணி / Tinda - 1/2 kg வெங்காயம் / Onion - 1(big) உருளைக்கிழங்கு medium size / Potato - 2 தக்காளி / Tomato - 2 ( purie ) எண்ணை / Oil - 4 tsp சீரகம் / Jeera/ cumin- 1 tsp பச்சை மிளகாய் / Green chili- 2 உப்பு / Salt- 1 tsp மஞ்சள் பொடி / Turmeric powder-1/2 tsp வறுத்த சீரகப்பொடி / Roasted Jeera powder- 1/2 tsp கொத்தமல்லி விரைப்பொடி/ Coriander powder- 1 tsp காஷ்மீரி மிளகாய்தூள் / Kashmiri chili powder- 1 tsp இஞ்சி பூண்டு விழுது / Ginger garlic paste- 1 tsp கரம்மசாலா / Garam masala powder- 1 tsp Method: Select tender Tinda. Wash Tinda & peel the skin. If skin is rough peel the skin. Otherwise it need not be peeled. Cut all Tindas as shown. Peel potatoes , peel & cut and keep in water. Heat oil in a pan & add Jeera. Then add onion , salt & sauté. Add ginger garlic paste & fry till the raw smell goes. Then add potatoes & Tinda and mix it nicely. After 2 minutes add all masalas ( turmeric, chili, Jeera, coriander, garam Masala etc) Give it a nice mix. Then add 1 cup of water to that. ( as per requirement we can add more water also)Close the lid & keep it for 3 whistles to cook. After cooling open the lid and Ras bhaji is nicely cooked. Add coriander on top & transfer the same to a serving bowl. Our yummy tasty Ti da RasBhaji is ready to eat with onion , Roti, Paratha & Rice .
