Add 1 cup of water first & mix it well without lumps. Then add 1 more cup of water & mix well. Add salt, red chilli flakes, carom seeds & coriander leaves. Mix well & rest it for 5 minutes Keep a kadhai with a stand on it. Keep one plate for steaming. After 5 minutes, pour the batter into small, equally sized plates with a small spoon. Spread the same all over the plate. Keep all plates for steaming. Steam for 2 minutes. After steaming, take out the plates & keep it in a water-filled tray. Keep the same for 2 minutes to cool. After 2 minutes, take a knife & release the edges & take out the papad slowly. Keep it for drying. In the same way, take out all the papad from the plates & keep it for drying. Do the same way for all batter. First, dry the papad under a fan for 3 hrs. After that, flip it to the other side. Then keep it in the sun to dry. Dry for 2 days. Squeeze the water from the cucumber & keep it separately. Place a pan on the stove & add oil. Add mustard, Jeera, Asafetida powder, curry leaves, red & green chilli. After that, add grated cucumber & sauté it for 2 to 3 minutes on a low flame after covering with a lid. Add gram flour in the cucumber water & mix well to make a slurry. After 3 min cucumber will become very soft. Then add the slurry & mix well. Again, cook it for 3 to 4 minutes till the flour's raw smell goes. Then add lemon juice & Coriander leaves & mix well. #jam #mangojamrecipe #mangojam raw rawmangojam#mangaijam Ingredients: மாங்காய்/ Raw mango- 4 சர்க்கரை / Sugar - the same quantity of grated raw mangoes பட்டை / Cinnamon- 1/2 inch ஏலக்காய் / Cardamom- 10 ( powder the same) Method: Wash & wipe the mangoes with a towel. Peel the outer skin & grate in a small grater. Sugar quantity to be the same of grated mangoes. Take grated mangoes in a pan. Sauté it till the water goes. Then add 3 tsps of ghee, keeping the flame low to medium, mix them till it becomes a little soft. Add a piece of cinnamon to that. Then add sugar to the mangoes & stir it until we get a correct consistency. It will take 15 minutes to make. Add cardamom powder & check the consistency by adding the mixture to a plate. It should be thick & should not run on the plate. That is the correct consistency. It should be consistent enough to easily spread in bread. Take the pan out of the stove & cool it by stirring continuously. After cooling, store it in an airtight glass container. Cut the edges. Then cut it into small pieces. Add turmeric powder & salt. Mix well & keep it overnight. The next day, the mango will have a lot of water. Take out the water & dry the raw mango in the sun. Evening again, keep mangoes in that water & mix. The next day, again keep it in the sun. Now all the water is absorbed by the mangoes. For making masalas, dry-roast mustard, red chilli, methi, and nigella seeds. Powder the same. Heat oil in a kadhai, then cool it. When it is a little hot, mix all masala powder by adding more chilli powder & turmeric. Pour the oil into the mangoes & mix well. Store it in a dry glass bottle & close the lid with a piece of cotton cloth. This bottle is to be sun-dried for 2 days. This pickle will have a unique taste & its shelf life is longer. Pour water to the level of the sago. Next morning, grate 2 medium-sized potatoes in water. Wash them until the potatoes are totally clean. Drain all the water from potatoes & squeeze them nicely. Mix soaked Sabudana & potatoes well, adding salt, green chili paste & Asafetida powder. Heat water in a kadhai. Keep a small stand over that. Spread the Sabudana mixture nicely on a perforated plate. Keep it on the stand & steam the same exactly for 5 minutes. After 5 minutes, open the lid & transfer the mixture to a plate to cool. When it is a little warm, apply oil to the palms & place a small amount of the mixture on a refrigerator mat. Keep all the mixture in the same way & dry it in the sun for 2 days. #sabudanarecipe #vadam #sabudana #papad #RanjisFlavours Ingredients: ஜவ்வரிசி/ Sabudana- 1 cup (190 grams) உருளைக்கிழங்கு / Potato - 3 ( 190 grams) பச்சை மிளகாய் விழுது / Green chili paste - 1 tsp உப்பு / Salt - 3/4 tsp பெருங்காயத்தூள்/ Asafetida powder - 1/4 tsp Method: Wash Sabudana twice & soak in water for 8 hrs. After 8 hrs, mix nicely with a spoon. Then boil water & pour on top of sabudana & soak it nicely overnight. Cook potatoes in a cooker & peel the skin. Grate the same in a small grater. Take the soaked Sabudana in a plate & add grated potatoes. Add salt, Asafetida & green chilli paste. Mix everything nicely into a batter with your hand. Take a plastic bag & fill it with the batter. Cut a corner of the bag to make a hole, and tighten it with a rubber band. Make a round murukku with the batter nicely. Dry in the sun for 2 Days. Heat oil in a kadhai & fry murukku vadam. They are so crispy & tasty. Mix well & make nice flour in the flour mill. அரிசி மாவு / Rice flour - 2 cups தண்ணீர்/ Water - 4.5 cups ( for 1 cup 2.25 cups of water) பச்சை மிளகாய் விழுது / Green chili paste- 3/4 tsp பெருங்காயப்பொடி / Asafetida powder - 1/4 tsp எண்ணை / Oil - 1 tsp உப்பு / Salt - 1 tsp எலுமிச்சம்பழ ஜூஸ்/ Lemon juice - 1/2 lemon juice Method: Boil 4.5 cups of water in a heavy-bottomed kadhai. Add rice flour slowly by stirring thoroughly. Keep the flame in medium. Keep it covered for 7 to 8 minutes by stirring in between. Then the dough is fully cooked. Take the dough on a plate & make it smooth, using your hands. Grease the press with oil, keep the "Thennnampoo Acchu" in that. Fill the Acchu press with dough & make small fryums like in a refrigerator mat. Can be cut with scissors or by hand into small pieces. Make all the dough like this. Dry all in the hot sun for 2 days. After 2 days the fryums are ready to fry. Heat oil in a kadhai & fry the vadam . It is so crispy & white in colour. #papad#papadrecipes #khichiyapapad #ricepapad #அரிசிஅப்பளம் Ingredients: அரிசி மாவு / Rice flour- 1 cup ( any measure u take) தண்ணீர் / Water - same quantity of rice flour bowl which we take உப்பு / Salt - 1/2 tsp சீரகம் / Cumin - 1 tsp சமையல் சோடா / Cooking soda - 1 pinch ப்ப்படக்காரம் / Papad kharm - 1/2 tsp Method: Take rice flour in a bowl. Use the same bowl to measure water in a heavy-bottomed vessel. Boil water. Add salt, papad kharm, cooking soda & Jeera. When it boils, add the rice flour & mix it well. Keep the flame low and stir frequently; keep a lid closed. Cook it for 10 minutes. After 10 minutes, take out the dough & keep it in a plate. Make a nice smooth dough by pressing it nicely with a heavy-bottomed vessel. Make small balls out of that in a cylindrical shape. Boil water in a kadhai & keep one stand on that. Place a perforated plate on that & place all the dough in that. Cover it & cook for 20 minutes. After 20 minutes, check whether it is cooked properly by inserting a knife. It should come out clean without sticking. Take all the balls out & keep them in a wet cotton cloth. Again knead it nicely to smooth the dough. Take a small portion of the dough & make small round-shaped balls. Keep them covered to prevent them from drying. Take 2 plastic sheets & grease them with a little oil. Place the dough in sheet & press it with a plate. Then make a bigger papad using the rolling pin. Cut it in desired shape with a plate to get an evenly round papad. Make all of them the same way & dry the same in the sun for 2 days. Rice papad will be ready to fry. Heat oil in a kadhai & fry papad in medium flame. #papad #papadrecipe #ravapapad #vadam #appalam Ingredients: மெல்லிசு ரவை / Nice Rava - 1/2 cup அரிசி மாவு / Rice flour- 2 tbsps தண்ணீர் / Water - 1.25 cups பச்சை மிளகாய் விழுது / Green chili paste - 1/2 tsp உப்பு / Salt - 1/2 tsp எண்ணை / Oil - to fry Method : Make a nice powder of Rava & rice flour in a small mixer jar. Take that in a bowl. Heat water & add to Rava slowly, mix to make a nice dough. Boil water in a kadhai. Keep one stand on that. On top of that, keep one perforated plate for steaming. Keep the Rava mixture on the plate & steam it for 10 minutes with a lid. After 10 minutes, open the lid & keep it down. Transfer the same to a plate to cool. With a flat-bottom cup, mix the batter thoroughly to remove any lumps. Then make small balls and keep them in a bowl & cover them. Take Chapathi stone. Place 2 thick plastic sheets & grease them with ghee. Place the balls between them to flatten them, then use a roller to make a round papad. Slowly remove the top plastic & turn the papad in a drying mat & take out the plastic. If you want to cut it with a steel dabba to get a round shape. Make all papad in the same way. Dry all papads under the fan. After 4 hrs flip it to the other side. The next morning, we can dry it in the hot sun for 5 hrs. Our yummy papad will be ready to fry. #kadhi #kadhirecipe #மோர்குழம்பு Ingredients: வெந்தயக்கீரை / Methi leaves - 150 gms ( cleaned, washed & dried) தயிர்/ fresh Curd - 1.5 cups சோள மாவு / Jowar flour - 2 tbsps உப்பு/ Salt - 1/2 tsp மஞ்சள்தூள்/Turmeric powder- 1/2 tsp சீரகத்தூள்/ Jeera powder- 1/2 tsp தனியா பொடி / Coriander powder- 1 tsp எண்ணெய்/ Oil - 4 + 2 tsps கடுகு / Mustard - 1 tsp சீரகம் / Cumin - 1 tsp பெருங்காயத்தூள்/ Asafetida powder- 1/4 tsp வெந்தய பொடி / Fenugreek powder - 1/4 tsp கருவேப்பிலை/ Curry leaves- little கொத்தமல்லி இலை/ Coriander leaves- little வெங்காயம்/ Onion - 1 பச்சைமிளகாய்/ Green chili- 2 இஞ்சி பூண்டு பேஸ்ட்- 1 tsp சிகப்பு மிளகாய் / Red chili- 1 மிளகாய் பொடி/ Chili powder- 1/2 tsp Method: Take curd in a bowl. Add salt, turmeric, jower flour, cumin & coriander powder & mix well without lumps. Keep it covered & rest for 10 minutes. Heat oil in kadhai. Add cumin, curry leaves, ginger garlic paste, & green chili . Sauté till the raw smell goes. Then add onion & sauté.Add little salt . Then add washed dried Methi leaves to that. Cover with lid & cook till soft. After cooking cool the same after switching off the stove. Then add curd mixture to that & mix well. Again keep it on the stove to cook the same. Stir nicely . After the mixture boils our kadhi will be ready. For tadka add mustard, red chili & chili powder in oil & pour the same on top of kadhi. Our yummy, tasty, healthy Methi jowar kadhi will be perfect to serve. Take hot rice in a plate . #millet #milletballs #milletsrecipe #barnyard #barnyardmillet#appam Ingredients: குதிரைவாலி அரிசி சிறு தானியம் / Barnyard millet Bhagar -1 cup பாசிப்பருப்பு / Mung dal- 1/2 cup பச்சை மிளகாய்/ green chili- 2 இஞ்சி/ Ginger - 1 inch grated உப்பு / Salt - 1 tsp பெருங்காயம்/ Asafetida - 1/4 tsp எண்ணெய் / Oil - to cook வெங்காயம்/ Onion - 1 finely chopped காரட்/ Carrot - 1 grated கொத்தமல்லி இலை/ Coriander leaves- little பச்சை பட்டாணி/ Fresh green peas - 150 gms Method: Wash & clean barnyard millet & soak it overnight. Wash mung dal & soak it for 1 hour. Grind green peas, chili, Asafetida, ginger, mung dal & salt to a coarse paste. Grind soaked millet separately to a fine paste. Mix both with onion, coriander leaves, carrots nicely to a batter. Correct the consistency by adding water. Heat appam pan & grease with oil. Take the batter in small laddle & fill it with batter. Oil them & close it with a lid for 3 to 4 minutes. Turn to the other side & roast it in medium flame. Repeat the same for 2 nd batch also. Serve hot with tomato ketchup or any chutney of your choice. Slice carrots & onion. Wash Palak leaves & blanch it and keep in cold water. Take a cooker & add 2 glasses of water, heat. Add all veggies to that & cook it for 3 whistles. After cooking, cool all veggies to. Take out the tomato skin on top. After cooling, grind to a paste in a mixer grinder. Check the consistency & add water. Add salt, pepper powder, garlic powder & mix well. Boil the same for 2 min. Yummy veggie soup is ready. Serve soup with milk cream on top with focaccia bread or normal bread or pav. #millet #milletsrecipe #milletballs#சிறுதானியம் #சிறுதானிய Ingredients: கோதுமை மாவு / Wheat flour- 1 cup ( 1/4 cup measure) ராகி மாவு /Finger millet - 1 cup கம்பு மாவு / pearl millet/ Bajra- 1 cup சோள மாவு / Sorghum/ Jowar - 1 cup (Instead of wheat flour we can take rice flour or gram flour) உப்பு / Salt - to taste வெங்காயத்தாள்/ Spring onion- 100 gms துருவிய காரட் / Grated Carrot - 3 tbsps மஞ்சள்தூள்/ Turmeric powder- 1/2 tsp சீரகத்தூள்/ Cumin powder- 1 tsp மிளகாய் தூள்/ Chili powder- 1 tsp எண்ணெய்/ Oil - 2 tsps For chutney: எண்ணெய்/ Oil - 3 tsps கடலைப்பருப்பு/ Bengal gram - 2 tsps உளுத்தம்பருப்பு/ Ulad dal - 1 tsp மிளகாய்/ Red chili - 1 கருவேப்பிலை/ Curry leaves- little தக்காளி / Tomato- 1 உப்பு / Salt - little Method: Take all flours in a plate. Add salt, spring onion & grated carrots. Add turmeric, chili & cumin powder. Mix well . Then add warm water to make a soft dough. Rest it for 10 minutes. Take oil in a pan. Add bengal gram, Ulad dal & fry. When it is fried add onion, tomato, salt & curry leaves. Fry all of them and cool the same. Once it is cooled add the same in mixer grinder & make coarse chutney. Add mustard & curry leaves in tadka pan & add tempering on top of chutney. Our yummy chutney is ready now. After 10 minutes of rest take the dough in hand after applying oil in palm. Roll out the small portion of dough nicely & make small balls in cylindrical form. Roll all the dough. Heat water in a kadhai & steam the rolled dough & cook for 10 minutes. After cooling cool the same completely. Take oil in a pan. Add mustard, Asafoetida powder, cumin , turmeric & curry leaves. Lastly add sesame & roast it nicely. Then add the millet balls to that & mix well. Keep it for 2 minutes with a lid. Our yummy millets balls will be ready. Serve the same with tasty chutney for dinner. #tea #teapremix#teapreparation #premix #premixrecipe Ingredients: பால் பொளடர்/ Milk powder- 1 cup ( any cup can be taken) டீ பொடி / Tea powder - 3/4 cup சர்க்கரை / Sugar - 3/4 cup ஏலக்காய் தூள்/ Cardamom powder - 1 tsp இஞ்சி தூள்/ Ginger powder- 1 tsp Method: Add milk powder, tea powder, sugar, cardamom powder & ginger powder in a bowl. Mix well. Take all these in a mixer jar & make a fine powder. Sieve the same twice nicely. Store it in a clean, dry glass bottle for future use. To make tea: Take 2 cups of water in a bowl & let it boil. Then add 3 tsps of tea premix powder and keep it covered with a lid. Some particles will settle at the bottom. After 5 minutes, filter the tea into a cup. Our yummy, easy instant tea is ready to drink. This is very useful for traveling or for students staying in a hostel. பாவ் பாஜி/Mumbai famous street style Pav bhaji recipe/How to make pav bhaji in cooker easily at home
#pavbhajirecipe#pavbhaji#pavbhajistreetfood#pavbhajikaisebanatehain Ingredients: பாவ் பிரட் / Pav- as per requirement வெண்ணை / Butter - 150 gms உருளைக்கிழங்கு/ Potato - 2 கோஸ் / Cabbage - 100 gms குடைமிளகாய் / Capsicum - 100 gms காரட் / Carrot - 100 gms பச்சை பட்டாணி/ Peas - 100 gms காலிப்ளவர்/ Cauliflower- 100 gms வெங்காயம்/ onion - 2 big தக்காளி/ Tomatoes- 3 பாவ் பாஜி மசாலா / Pav bhaji masala - 3 to 4 tbsps காஷ்மீரி மிளகாய் பொடி / Kashmiri chili powder- 1/2 tbsp கசூரி வெந்தயக்கீரை / Kasuri Methi - 1 tbsp மிளகாய் பொடி / Chili powder- 1/2 tsp பச்சை மிளகாய்/ Green chili- 3 சாட் பொளடர் / Chaat powder- 1/2 tbsp கொத்தமல்லி தழை/ Coriander leaves- 50 gms உப்பு /Salt - to taste எண்ணை / Oil - 3 tbsps மஞ்சள்தூள்/ Turmeric powder- 1/2 tsp Method: Wash & cut veggies. Cut potatoes & keep in water. Take a pressure cooker & add all veggies. Add salt & turmeric powder. Keep it for 3 whistles & cook the vegetables. Take out the vegetables & mash them well with a potato masher nicely. Add butter & boil in alow flame for 4 minutes. Add green chilies, Kasuri Methi, and Kashmiri chili powder. Mix well, cover with a lid, and boil it for a longer time. Keep it aside. Take a pan & add oil & butter. Add onions & saute it well. Then add tomatoes & cook them well, in a vessel covered with a lid. When it's nicely cooked, add the cooked vegetables & mix well. Keep it for a long time in a low flame to get mashed. Take it out when it's no longer sticking to the sides of the pan. Add a little water to get the required consistency. Add coriander leaves & more butter. Now the bhaji is ready. Cut the Pav in half. Grease the pan with butter. Add coriander leaves & little bhaji inthat. Then add & roast Pav till it becomes crispy. Serve hot with bhaji & sliced onions & cut lemon. We can squeeze lemon on top of bhaji. Add curd, ginger, green chili paste, oil, turmeric powder, salt & coriander leaves. Mix well & then add water to the mix. Rest it for 12 minutes. Heat a non-stick Tawa & grease the same with oil. Take a banana leaf & grease it with oil. Spread the batter in a round shape on a banana leaf. Keep one more leaf on top. Keep it on the tawa & cook the same by pressing it on both sides. Take it out after 2 minutes; when it is cooked
After 2 minutes of cooling, take out the panki slowly by hand. That will release it from the leaf very smoothly. Make all pankis in the same way. Serve it hot for breakfast. #bajiya #பஜ்ஜி#pakoda #மிளகாய்பஜ்ஜி#pepper #chilipakode# Ingredients: வெள்ளை மிளகாய் / White chili - 5 to 6 கடலைமாவு / Bengal gram flour- 4 ladles அரிசி மாவு / Rice flour- 1 ladle உப்பு / Salt - 1/2 tsp சீரகத்தூள/ Cumin powder- 1 tsp மிளகாய் தூள்/ Chili powder- 1.5 tsps பெருங்காயத்தூள்/adafetida powder- 1/2 tsp எண்ணை / Oil - 2 tsps to add in flour எண்ணை / Oil - to fry bajji மஞ்சள்தூள்/ Turmeric powder- 1/2 tsp Method: Wash & wipe all chilies. Cut vertically in thin pieces. Cut in small pieces also to make pakoda. Take gram flour & rice flour in a bowl. Add salt, cumin, turmeric, oil, Asafoetida & chili powder to it & mix well. Then add water slowly to make the bajji batter & mix well. It should not be too thick or too thin. Heat oil in a kadhai. Pour the batter into tall glasses, dip the peppers completely, and make bajji. Dip chilies one by one, then fry in oil until golden brown & crispy. The same way dip all cut chilies in the batter & make pakoras & fry. #lunchbox#ranjisflavours#waffle#mungdalwaffle#moongdalveggieswaffle Ingredients: பாசிப்பருப்பு / Mungdal- 1.5 cups பச்சை மிளகாய் / Green chili- 4 to 5 இஞ்சி/ Ginger - 1 inch பெருங்காயம்/ Asafetida- 1/2 tsp உப்பு/ salt - 1 tsp உருளைக்கிழங்கு/ Potato- 3 medium size காரட் / Carrot- 1 வெண்ணை/ Butter - 2 tsp Method: Wash & soak moongdal for 2 hrs. Then drain the water & take it in a mixer jar. Add green chili, ginger, salt & asafoetida. Grind it to a fine paste without adding water. Grate potatoes & carrots. Keep potatoes in water. After that, drain water & squeeze the same in a cotton cloth. Take the batter in a separate bowl and add a little water to correct the consistency. Heat the waffle maker. Then grease it with oil on both sides. Add the batter and spread evenly. Add grated potatoes & carrot on top. Close it & make a waffle. Open it after the green light comes. Add butter on top. It can be served with tomato ketchup or any green chutney. Our moong dal waffle is ready to keep in the lunchbox.
