Ranjis Flavours: பரங்கிக்காய் கறி/ Red pumpkin 🎃 curry/ Lal kaddu subji


















Red Pumpkin is known in many parts of he India in by different names. In Northern India it is known as Lal Kadhu, Lal Kumla, Red Pumpkin or yellow pumpkin. In Tamil it is Parangikai. In Telugu it is Gummadi kai. The taste of this vegetable also differ because water and soil properties. 

The vegetable can prepared in many ways. 

The one I have shared with you is Maharashtrian recipe. 

This food is rich in Dietary fibre, low in saturated Fat, low cholesterol and sodium. This is good source of Vitamin E, Vitamin B6, Vitamin C, Thiamin,  Niacin. This is also good source of minerals - iron, Magnesium, Potassium, Riboflavin

Ingredients: பரங்கிக்காய் /Red pumpkin 🎃 1/2 kg(cut in to big pieces with skin) கடலைப்பொடி/ groundnut powder- 1/4 cup கடுகு / Mustard seeds -1tsp சீரகம் / cumin seeds -1tsp இஞ்சி/Ginger grated -1tsp எள் / Sesame -1tsp பச்சை மிளகாய் / Green chili-6 தேங்காய் /grated Coconut -2tsp கொத்தமல்லி / coriander leaves - 1 tsp உப்பு / Salt - To taste மஞ்சள்பொடி / Turmeric powder -1 tsp மிளகாய்பொடி / chili 🌶 powder -1tsp எண்ணை /Oil -4tsp எலுமிச்சம்பழசாறு / lemon juice. - 1 tsp Method: Heat oil in pan.Add mustard seeds. After it pops add cumin seeds,green chili,ginger,sesame,and add pumpkin . Add salt,turmeric powder,chili powder.Mix all ingredients nicely and cover the pan with lid for pumpkin to cook.After 5 minutes open the lid and add groundnut powder on top and mix nicely.Add lemon juice and mix .Add grated coconut and coriander leaves on top and our pumpkin curry is ready to eat. Healthy Diet

I believe in healthy food and it should be tasty also. Concentration is essential when we prepare
food. All ingredients have inherent flavour. But when we prepare a recipe, we should know what  ingredients to be added and what stage/time, heat management, cooking time duration of the dish. Well planning is necessary to prepare the food. Our main aim should be to give healthy, tasty food to our family. Home made food is always healthy with high nutrition value.

இட்லி/தோசை மிளகாய்பொடி-Idly/Dosa Milagai or chutney powder




Ingredients: கடலைப்பருப்பு /Bengal gram-1 cup உளுத்தம்பருப்பு /Split black gram-1cup வெள்ளை எள் / White sesame seeds-3/4 cup சிவப்பு மிளகாய் / Red chili 🌶-25 பெருங்காயம்/ Asafoetida-1 tsp உப்பு /Salt -To taste எண்ணை/Oil -To fry வெல்லம்/Jaggery -Small peace ஆளி விதை/Flax seeds -1 tsp (optional) Flax seeds are very rich in fiber, omega 3 fatty acid and helps to reduce fat.This should not be fried dry or in oil as its property changes. Tips: 1: If Red chillies are cut into half and then fried means it will fry nicely inside and outside . 2. If chillies are fried in more quantity and make powder ,anytime that can be used according to taste whenever we prepare this chutney powder. That can be kept in freezer for freshness. Method: First fry sesame in dry pan till it pops,when it becomes little brown in color keep aside.Heat little oil in pan, fry asafoetida till it becomes light brown,add bengal gram and fry till it becomes golden in color.The same way split black gram .Fry red chili 🌶 till it gets fried. Cool all the ingredients.Make all the dals into coarse powder separately.Add all the ingredients in mixer and mix nicely with salt and jaggery and flax seeds.Our Idly/Dosa milagai powder is ready.This powder to be mixed with sesame oil and to be applied on idly/dosa.It is very useful while traveling,and for lunch box etc.very well goes with Idly/Dosa and upma also.Enjoy Ranjis flavours!! பாலக் கீரை பூரி / Palak Poori

Green Healthy Pooris Are Ready



Ingredients: பாலக் கீரை/Spinach leaves /palak leaves 1/2 kg(washed) கோதுமை மாவு/ wheat flour/Atta 2 cups கடலை மாவு/gram flour. 3 tsp உப்பு/Salt To taste சீரகப்பொடி/cumin powder 1/2 tsp ஓமம்/ carrom seeds/ajwain 1/2 tsp மஞ்சள் பொடி/Turmeric powder/haldi -1/2 tsp மிளகாய் பொடி/Chilli powder 1/2 tsp பச்சை மிளகாய்/Green chilli 2 Spinach is very rich in vitamin A & C and good for health. Method: Clean spinach and grind with green chilli in a mixer with little salt to a paste.Mix this paste with wheat flour, gram flour,salt,jeera powder,carrom seeds,turmeric powder,and make a dough,as we have added green chilli in the paste ,adding(red chilli powder is optional). Heat oil in a pan or Kadhai. Make small pooris by touching oil in hand and fry all pooris.Our hot green spinach poori is ready and it can be served with tomato pickle, mango,ketchup or lemon pickle. ஜவ்வரிசி உப்புமா/ Sabudhana kichadi

Sabudhana with onion



Ingredients: ஜவ்வரிசி /Sago/Sabudhana. 1 cup வறுத்த வேர்க்கடலை/Roasted peanuts- 3/4 cup (powdered) வெங்காயம்/onion 2 கடுகு/mustard seeds 1 tsp உளுத்தம்பருப்பு/ split black gram 1 tsp சீரகம்/ jeera /cumin seeds. 1 tsp பச்சை மிளகாய்/ green chillies 4 (slit) மஞ்சள்பொடி/Turmeric powder. 1 tsp மிளகாய் பொடி/ chilli powder (optional) -1/2 tsp கொத்தமல்லி/coriander leaves 2 tablespoons Oil 3 to 4 tablespoons Method: Tip: wash Sago and keep water on that as the level of Sago in that vessel for 8 to 9 hrs before preparation. Heat oil in pan,add mustard seeds,jeera, black gram(ulad dal)onion and green chilli, little salt and sauté till onion becomes soft .Then Add Sago (sabudhana), salt,turmeric powder mix it well and cover the pan with lid.keep the pan in low flame and mix frequently. When Sago becomes soft add peanut powder and mix it.Serve Sago with greens spread on top and enjoy! Sabudhana is made from sago palm stems and full of carbohydrates and low in fat. ஜீரக ரசம்/ Jeera Rasam

South Indian favourite Rasam


Ingredients: புளி/Tamarind -small lemon size( or u can use the tamarind paste 2 tsp with water) உப்பு/ salt to taste தண்ணீர் /Water 2 cups தக்காளி/ tomato -1 சாம்பார் பொடி/sambar powder -1/2 tsp மஞ்சள் பொடி/turmeric powder. -1/2 tsp பெருங்காயம்/asafoetida 1/2 tsp நெய்/Ghee 2 tsp அரைக்க/To grind: ( all soaked in water for 20 min) துவரம்பருப்பு/thuvar dal -2 tsp சீரகம்/cumin seeds/ jeera -1tsp மிளகு/Pepper -7 to 8 கருவேப்பிலை/curry leaves 10 Method: Add water to tamarind &soak it for 15 to 20 min.Take out the tamarind water & add salt,tomato,sambar powder,turmeric powder and asafoetida.Boil all the things till tomato becomes soft.Make a paste of all ingredients which we have soaked in a mixer to a paste by adding water to that.Add the paste and mix it nicely and keep it till u get a frothy thing on the top of rasam. After that u should not boil the rasam. Make a tempering with ghee and mustard seeds and serve hot with coriander leaves on top.Rasam is very good appetiser and soothing for throat and u can take before food. Enjoy Ranjis flavours! நெல்லிக்காய் ஊறுகாய்/Gooseberry pickle

Easy preparation  of gooseberry pickle


Ingredients: நெல்லிக்காய்/gooseberry : 1 kg(cut in slices) கடுகு/mustard seeds. :1 tsp பெருங்காயம்/asafoetida: 1 tsp உப்பு/ salt : 2 tsp மஞ்சள் பொடி/turmeric powder-1tsp சிவப்பு மிளகாய் powder/red chilli powder : 3 tsp வெந்தயம் /fenugreek powder:1 1/2 tsp( dry roasted and powdered). Method: Heat sesame oil in pan. Add mustard seeds,asafoetida,fenugreek powder,turmeric powder and gooseberry slices. Mix all ingredients nicely and sauté till gooseberry becomes soft and tender.prepare the pickle in medium flame and mix it frequently. Do not cover with lid. Add red chilli powder mix it and our pickle is ready. Tips: நல்லெண்ணெய் /Sesame oil : 120 ml/ 1/2cup If you want the oil on top of gooseberry after making the pickle you can add more oil of 80 to 100 ml by heating the oil ,cool and add to that pickle. Indian gooseberry is very rich in vitamin C & calcium. It is a very tasty pickle goes with all dishes. மசாலா குழிப்பணியாரம்/Masala Kuzhipaniyaram

New innovative easy snack




Ingredients: Idly/dosa batter/இட்லி/தோசை மாவு-1 1/2 cups உருளைக்கிழங்கு/potato (Boiled & mashed) - 4 வெங்காயம் /Onion - 2 பச்சைமிளகாய்/Green chilli. -2 கொத்தமல்லி/Coriander leaves -2tsp கடுகு/Mustard seeds. -1/2tsp கடலைப்பருப்பு/Bengal gram. -1tsp மஞ்சள்பொடி/Turmeric powder - 1/2 tsp மிளகாய்பொடி/red chilli powder - 1/2tsp(optional) உப்பு/salt. To taste Method: Heat oil in a pan, add mustard seeds.when it pops add Bengal gram. Let it become light brown in color, add onion,green chilli and turmeric powder. Add little salt so that onion becomes soft.saute for 2 to 3 min and add mashed potato and mix it well.saute for 3 minutes and cool it .Make small balls of potato and keep aside. Heat oil in kuzhiappam pan. Dip the potato balls in the idly batter with the help of spoons so that it coats on all sides of potato balls and keep in appam pan.After one side becomes brown in color and roasted Turn it to the other side and cook and take out from pan with a sharped edge stick. Our hot masala kuzhipaniyaram is ready to eat with coconut chutney,onion chutney,or tomato ketchup.This is a new receipe I have shared with you today. Try this and share your views with me. கரைத்த மாவு தோசை/Mixed flour Dosa


Ingredients:

கோதுமை மாவு/ wheat flour        -1cup

Rice flour / அரிசி மாவு.                -1cup

Gram flour/கடலை மாவு.             -2tsp

Oil to make dosa/எண்ணை 

Mustard seeds/கடுகு.                  -1tsp

Jeera/சீரகம்.                                 1tsp

Ginger/ இஞ்சி.           1 tsp cut into pieces

Cashews/முந்திரிப்பருப்பு.             -5 (sliced)

Curry leaves/கருவேப்பிலை.        - 2tsp

Green chillies(cut)/ பச்சை மிளகாய் -2

Tip: After making the batter, it should be kept aside for 30 minutes before making Dosa

Method:

Take wheat flour,rice flour and gram flour in a vessel and mix with water after adding salt to that as shown consistency.Heat  oil in Kadhai, add mustard seeds, jeera,green chilli,cashews,and ginger. Sauté all for 2 seconds and pour this mixture in the batter. Add 2 tsp of oil in that batter and make Dosa as shown.Before making dosa, crease the  pan  and make dosa.hot crisp dosa is ready!

Aloo Poha/ Potato Aval/Aval upma

Potato Aval (Aloo Poha)

The very easy to make , nutritious Maharashtrian breakfast. There are many versions which exist, but this is my family's favorite.

Poha in itself is a complete meal, rich in minerals ,vitamins and fibre.You can add more vegetables if you like. I am showing you the basic version.

Working women can make this quickly which is delicious and nutritious for children.


Ingredients:

  • Aval (Poha) -2 fistful 🤜(Approximately 1.5Cups)
  • Onion - 2
  • Potato - 2
  • Peas (பட்டாணி) - 2 tablespoon
  • Green chilli - 2 to 3
  • Mustard seeds - 1 tsp
  • Split black gram
  • ( உளுத்தம்பருப்பு )-1 tsp
  • Jeera -1tsp
  • Red chilli powder
  • (Optional) -1/2 tsp
  • Turmeric powder
  • (மஞ்சள் பொடி) -1/2 tsp
  • Coriander leaves - for garnishing
  • Oil - 2 tablespoons
Procedure : Aval(Poha) to be cleaned in water 2-3 ties and drained for 30minutes before preparing.
Head Kadhai and add mustard seeds. When it pops, add black gram, jeera, green chilli, onion and all vegetables one by one. Saute till potato becomes soft. Keep medium flame. Add aval(Poha), turmeric powder and mix all ingredients. Switch off flame. Sprinkle some water and cover the lit for 5minuets. Add chopped coriander and serve!

Pappulu podi/ பொட்டுக்கடலை பொடி/Paruppu podi Andhra style


Today we are showing how to make Andhra style paplu podi

We can eat by mixing rice& oil with this;spread in roti, with sugar & ghee to keep lunch for children. Very nutritious for kids.

This is recipe, orignially my mother-in-laws family heirloom recipe which I am sharing today.


Pappulu podi/ பொட்டுக்கடலை பொடி

Ingredients:
  • Asafoetida. - 1 tsp
  • Roasted Bengal gram(Dalia/Pottu kadalai)-1cup
  • Dried coconut/kopparai-1/2 cup
  • Red chillies - 10(as per taste)
  • Salt - to taste
Procedure: 
1. Clean roasted gram(Pottu kadalai/Dalia), dry it in sun and grind in mixie.
2. Chop dried coconut in long pieces and grind separately.
3. Fry red chilli and asafoetida in little oil. 
4. Fry ground coconut till it gets light brown in colour.
5. Add all the ingredients one by one with salt to a powdered consistency to make tasty pappulu podi.

  • Tomato - 2 nos
  • Green chillies(slit)  - 2 nos
  • Turmeric powder    - 1tsp
  • Chaat powder         - 1/2 tsp
  • Red chilli powder   - 1tsp
  • Thin Sev                 - 2tsp
  • Coriander leaves     - 3tsp
