Carrot Halwa/ கேரட் அல்வா/ Gajar Halwa




Ingredients: கேரட் / carrot 🥕- 1 kg பால் / Milk - 1/2 liter தித்திப்பு இல்லாத பால் கோவா/ Unsweetened Milk Kova or koya- 200 gms ஏலக்காய் பொடி / Cardomom powder -1 tsp முந்திரிப்பருப்பு / Cashews- 12 திராட்சை / Kismis - 10 குங்குமப்பூ / saffron- little நெய் / Ghee - 3 to 4 tsp Method: Fry cashews and kismis in 3 tsp of ghee and keep aside Wash and grate carrots. Take carrots in a cooker pan & add milk to that. Cook with milk in the cooker & keep it for 3 whistles. After opening the cooker lid , boil the remaining milk in the carrot for 10 minutes. Then add sugar and mix. Stir frequently. Again the sugar and carrots to be cooked till we get thick consistency. Add ghee to that and mix. Add saffron and fried cashews and kismis to that and mix nicely. Our yummy carrot Halwa is ready to serve. It is very tasty with ice cream on top of it. Green Mochaipayaru masala/ மொச்சைப்பயறு மசாலா/Green Butter beans masala/Mochai Paruppu masala



Ingredients: மொச்சைப்பயறு/ green butter beans- 250 gms வெங்காயம்/ onion- 2 தக்காளி/ Tomato- 2 உப்பு/ Salt- to taste இஞ்சி/ ginger- 1 tsp grated பூண்டு / Garlic- 1 tsp grated கடுகு/ mustard- 1 tsp சீரகம்/ cumin- 1 tsp மஞ்சள் பொடி/ turmeric powder- 1/2 tsp மிளகாய் பொடி/ Chilli powder- 1/2 tsp கொத்தமல்லிவிரைபொடி/ coriander powder- 1 tsp சோள மாவு / Corn flour- 2 tsp எண்ணை/ oil - 3 to 4 tsp கொத்தமல்லி / coriander- little பச்சை மிளகாய் / green chilli- 1 Method: Heat oil in a cooker. Add mustard, cumin, garlic, ginger & green chilli. Sauté and then add onion. Add pinch of salt to the onion for making the onion soft. Then add coriander powder, turmeric, chilli powder & tomato. Sauté a little and then add butter beans . Mix it nicely and add water to cook. Add salt to that and mix. Keep it for 3 to 5 whistles in the cooker to cook. Mix corn flour in little water ,mix it without lumps. Add that in butter beans for thick consistency. Let it boil for 4 minutes. Our butter beans masala is ready. Garnish with Coriander leaves on top. Very tasty with Roti, Paratha, Puri & rice. ஆரஞ்சுத்தோல் தொகையல்/Orange peel chutney/orange skin chutney


Ingredients: ஆரஞ்சு தோல்/ orange peels- 1 orange 🍊 (loose jacket) வெங்காயம் / onion- 1 கடலைப்பருப்பு/ Bengalgram- 1 tsp உளுத்தம்பருப்பு / Ulad dal- 2 tsp பெருங்காயம்/ asafoetida- 1/4 tsp உப்பு / salt - to taste சிகப்பு மிளகாய் / Red chilli- 2 Method: Peel the orange skin, clean wash and cut into small pieces. Cut onions . Fry Bengalgram, ulad dal,asafoetida & red chilli in 2 tsp of oil till brown. Fry onion for 2 minutes. Sauté orange peels by adding 2 tsp of water and close with a lid for 5 min in low flame till it becomes soft. Cool all the ingredients. Grind all masalas first ,then orange peels and lastly onion in a blender to make a smooth chutney. Our Orange peel chutney is ready to serve with hot rice and ghee. Baby corn fritters in Tamil/Baby corn bajji/ Baby corn fry/Crispy baby corn Pakoda/சிறிய சோள பக்கோடா



Ingredients: Baby corn/ சிறிய சோளம் - 100 gms Bread crumbs/ பிரட் தூள்- 3 slices of bread or 1/2 cup இஞ்சி/ Ginger- 1 tsp grated சிகப்பு மிளகாய் / Red chilli flakes- 1/2 tsp உப்பு / Salt - to taste மைதா/ maida- 1/4 cup சோள மாவு /Corn flour - 1 1/2 tsp எண்ணை/ oil - to fry Method: Wash & slit the baby corns vertically & keep aside. Mix Maida, corn flour, ginger, red chilli flakes & salt . Make a smooth thick batter by adding water to that and mix nicely. Heat oil in a Kadhai. Dip the baby corns in the batter and coat in bread crumbs nicely and keep aside. Fry all the baby corns on both sides till golden brown. Serve hot with tomato ketchup & green chutney . Green Sprouts Uthappam in Tamil/ பச்சைப்பயறு ஊத்தப்பம்/ How to make Sprouts Uthappam/


Ingredients: முளை கட்டிய பச்சைப்பயறு / Sprouted greengram/ moong sprouts- 1 cup இட்லி மாவு / Idly batter - 2 cup பச்சை மிளகாய் / green chilli - 3 உப்பு / Salt - to taste எண்ணை / oil - to make Uthappam தக்காளி/ tomato- 2 கொத்தமல்லி/ coriander leaves- little Method: Grind sprouted greengram, salt & green chilli coarsely without adding water. Heat Tawa and spread the batter in thick layer. Spread the green gram, tomato and coriander on top . Add oil on sides and make it crisp on both the sides. Our Uthappa is ready to serve with Kara chutney. Stuffed Brinjal Fry / அடைத்த கத்திரிக்காய் ப்ரை / Stuffed eggplant fry



Ingredients: கத்திரிக்காய் / Brinjal - 300 gms எண்ணை / oil - to roast கடுகு / Mustard - 1 tsp வறுத்த கடலை பொடி / Roasted groundnut powder -2 tsp கருவேப்பிலை/ Curry leaves- little For Masala powder: கடலைப்பருப்பு / Bengalgram- 2 tsp கொத்தமல்லி விரை/ Coriander seeds- 4 tsp எள் / Sesame- 1 tsp மிளகு / Pepper- 1/2 tsp வெந்தயம் / Fenugreek-1/2 tsp சிவப்பு மிளகாய் / Red chilli- 6 பெருங்காயம்/ Asafoetida- 1/2 tsp Method: Take Brinjals & cut into halves on both the sides and keep aside. Roast all ingredients of masala in 2 tsp of oil till golden brown. Cool and make powder in a blender. Mix ground nut powder & salt with that. Fill this powder in all brinjals on either slits. Heat 4 tbsps of oil in a pan. Add Rai and turmeric powder. Add all the brinjals one by one slowly and add little salt and one tsp of water. Cover with a water in a plate. Frequently change the water in the plate with cold water. Turn all the brinjals slowly so that the masalas does not come out. Roast and fry all nicely in a medium flame. How to make Badam Burfi / Badam Burfi / பாதாம் பர்பி / Badam Katli/ Almond Burfi


Ingredients: பாதாம் பொடி/ Badam powder- 2 cup பால் பொடி / Milk powder- 1 cup சர்க்கரை / Sugar - 1 1/2 cups குங்குமப்பூ / Saffron- little(soaked in milk) பாதாம் துண்டுகள் / Badam slices- 2 tsp பிஸ்தா/ Pista - 2 tsp நெய் / Ghee - 3 tsp ஏலக்காய்/ Cardomom- 7 Method: Soak saffron in little hot milk. Keep sugar in a pan and add water. Keep in medium flame to make sugar syrup for 1 string consistency. After that add Badam powder,milk powder, saffron milk , Badam slices & cardamom powder. Stir nicely & add ghee to that it becomes v thick consistency and leaves the sides of the pan. It is ready to pour in to the pre greased pan with ghee. Make the mixture equally in the corners of the pan and add , spread the pista pieces and level it. Cut in squares when it becomes cool . Our Badam Burfi is ready to serve. வெஜிடபுள் கட்லெட் / Vegetable Cutlet Recipe in Tamil/ Mixed veggies Cutlet Recipe



Ingredients: உருளைக்கிழங்கு / Potato- 5to 6 ( cooked & mashed) துருவிய காரட்/ Grated carrot- 1/2 cup பீட்ரூட் / Beetroot- 1/2 cup வெங்காயம் / Onion- 1 பட்டாணி / Peas - 1/2 cup சோளம்/ yellow 🌽- 1/2 cup குடை மிளகாய் / capsicum- 1/2 cup கரம் மசாலா/ Garam masala- 1 tsp மஞ்சள் பொடி/ Turmeric powder- 1/2 tsp சீரகப்பொடி/ Jeera powder- 1/2 tsp மிளகாய் பொடி/ Red chilli powder- 1/2 tsp பச்சை மிளகாய் / Green chilli- 4 பிரட் தூள் / bread crumbs- 1 cup மைதா / Maida - 4 tsp( necessary only if we do deep fry) எண்ணை / oil - to shallow fry முந்திரிப்பருப்பு/ Cashews- 6 உப்பு/ Salt - to taste இஞ்சி/ Ginger- 1/2 tsp cut Method: Cook potato and mash nicely. Heat 1 tsp of oil in a pan. Add cashew and fry. Add all veggies , green chilli, ginger & salt one by one and sauté for 3 min just to make all veggies soft. Make it cool and mix with mashed potatoes, chilli,Garam masala & turmeric powder and mix nicely. ( can add bread crumbs if the mix is loose and not tight to make cutlets) Grease the mould with oil and make cutlets in a round shape or we can make it with hand in a good shape. Coat all the cutlets with bread crumbs and keep ready for fry Heat 5 tbsp of oil in a pan and shallow fry all on either side in medium flame till it becomes roasted nicely. Our cutlets are ready and serve hot with tomato ketchup. காராமணி மசாலா/Black eyed beans curry/ Lobia subzi/ Karamani Gravy/ Thattai payaru Masala



Ingredients: காராமணி / Black eyed beans- 2 cup வெங்காயம் / Onion- 2 தக்காளி / Tomato- 2 மஞ்சள் பொடி/ Turmeric powder- 1/2 tsp மிளகாய் பொடி/ Red chilli powder- 1 tsp சீரகப்பொடி / jeera powder-1 tsp கொத்தமல்லிவிரை பொடி/ Coriander powder- 1 tsp உப்பு / Salt - To taste பச்சை மிளகாய் / Green chilli- 5 இஞ்சி / ginger- little பூண்டு/ Garlic- 4 கொத்தமல்லி/ coriander leaves- little எண்ணை/ oil - 4 tsp சீரகம்/ Jeera- 1 tsp Method: Wash & soak black eyed beans for 4 hrs. Heat oil in a pan . Add jeera, green chili, onion and sauté. After 3 minutes add Tomato to that. ( we can add tomato purée also) we can make this by adding potato also. Add jeera, coriander, turmeric , salt & chilli powder to that and also beans. Cook the beans in cooker for 2 whistles. After it cooks our karamani masala will be ready to serve with Coriander leaves on top of it & onion rings. Keerai Mor Kootu / Mor Keerai / Spinach coconut gravy subzi


Ingredients: பாலக் கீரை/ Spinach - 1/2 kg தேங்காய் / coconut 🥥- 1/2 பச்சை மிளகாய் / Green chili-7 சீரகம் / Cumin seeds- 1 tsp அரிசி / Rice - 1 tsp தயிர் / Curd- 1/2 cup கடுகு / Mustard - 1 tsp உளுத்தம்பருப்பு / Ulad dal- 1 tsp சிவப்பு மிளகாய் / Red chili- 1 உப்பு / Salt- To taste Method: Wash & cut spinach. Take spinach in a pan,add salt & water to cook. Keep it in a medium flame and cook. Grind coconut, green chilli, soaked rice and cumin in a blender and keep aside.After the spinach is cooked add the coconut paste to that and let it boil for 2 minutes . Our Keerai Mor Kootu is ready to serve. Heat 1 tsp of oil. Add mustard, ulad dal & red chilli to that and add in spinach as tempering. Ingredients: கடலைப்பருப்பு / Bengalgram- 1 cup வாழைப்பூ / cut Banana flower- 1 cup சிவப்பு மிளகாய் / Red chili- 4 வெங்காயம் / Onion - 1 பெருங்காயம்/ Asafoetida- 1/2 tsp சோம்பு / Saunf - 1 tsp கொத்தமல்லி / Coriander- little உப்பு / Salt - To taste எண்ணை / Oil - to fry Method: See the link below to watch , how to clean and cut the banana flower https://youtu.be/TjiFBXuH5Rg Clean banana flower & cut.Soak the flower in water with 1 tsp of curd in that. Wash bengal gram and soak it for 2 hrs. After 2 hrs drain the water before grinding for vada. Grind bengal gram , red chili, salt & asafoetida coarsely in a blender. Add saunf ,coriander,onion and banana flower to the mixture . Mix thoroughly. Heat oil in Kadhai . Make small Vadas out of that and fry in oil till we get golden brown in color. Excellent tasty ,hot Banana flower Vadas are ready to serve with Tomato ketchup & green chutney . Doodhi Muthiya receipe/ Lauki ki Muthiya in Tamil/சுரைக்காய் கிரிஸ்ப்






Ingredients: சுரைக்காய் / Bottle guard/ lauki- 1 1/2 cups( grated) ரவா/ Rava- 1/2 cup கோதுமை மாவு / Wheat flour-1/2 cup கடலை மாவு / Bengalgram flour- 1/2 cup எள் / Gingely- 3 tbsp உப்பு / Salt- To taste மஞ்சள் பொடி/ turmeric powder- 1 tsp பச்சை மிளகாய் / Green chilli- 3 சீரகம்/ Cumin - 1 tsp சமையல் சோடா / baking soda-1/4 tsp எண்ணை / oil - To fry கொத்தமல்லி/ coriander leaves- little பெருங்காயம்/ Asafoetida- 1/2 tsp Method: Grate bottle guard. Mix Rava, Wheat flour, Bengalgram flour, salt, green chili, asafoetida,baking soda & turmeric powder and make dough without adding water as lauki has already got more water content. Make small balls out of dough by applying oil in hands. Keep all in a plate for steaming. Boil water in a pan and keep the plate contained Muthiya for steaming for 10 minutes. After that take out the Muthiya allow it to cool. After cooling cut into small pieces. Heat 3 tsp of oil . Add mustard, Sesame,Jeera and Muthiyas. Fry nicely to roast. Arachu vitta Sambar in Tamil /Freshly ground masala Sambhar/ அரைத்து விட்ட சாம்பார்



Ingredients: வெங்காயம் / onion - 2 காரட் / carrot- 1 புளி / Tamarind - medium lemon size உப்பு / Salt - To taste மஞ்சள் பொடி / Turmeric powder- 1 tsp பெருங்காயம்/ Asafoetida-1/2 tsp கடலைப்பருப்பு / Bengalgram- 1 1/2 tsp கொத்தமல்லிவிரை/ Coriander seeds- 3 tbsps மிளகு/ Pepper- 1/2 tsp வெந்தயம் / Methi- 1/2 tsp சிவப்பு மிளகாய் / red chilli- 10 தேங்காய் / grated Coconut- 🥥1/2 எண்ணை / oil - to fry masalas கொத்தமல்லி/ coriander leaves- little கருவேப்பிலை/ Curry leaves- little துவரம்பருப்பு / pigeon peas- 2 cups cooked & mashed Method: Fry Bengalgram, coriander,red chilli, pepper & Methi in 2 tsp of oil and keep aside to cool. After it gets cooled make a paste out of that in blender. Heat 2 tsp of oil in a pan and add onion and carrot . Sauté till it becomes soft. Add tamarind water, asafoetida, salt and curry leaves to that. Let it boil for 5 min till the onion & carrot cooks completely . Add the cooked dal & the masala paste & little water to that and let it boil for 5 more minutes. Heat oil in tadka pan. Add mustard & red chilli. Pour that on top of Sambhar and garnish with Coriander leaves. Our freshly ground masala Sambhar is ready to serve Enjoy Ranjis flavours! This Sambhar is very good with medu vada, masala dosa etc.

வெந்தயக்கீரை சப்பாத்தி/ Methi Paratha/ Methi Roti/ Tepla/fenugreek chapathi/ Methi paratha receipe


Ingredients: கோதுமை மாவு/ wheat flour- 3 cups வெந்தயக்கீரை/ Methi leaves- 300 gms( leaves only) பூண்டு/ garlic- 4 to 5 பச்சை மிளகாய் / green chili- 5 மஞ்சள் பொடி/ Turmeric powder- 1 tsp சீரகப்பொடி/ jeera powder- 1 tsp கொத்தமல்லிவிரை பொடி/ Coriander powder- 1 tsp மிளகாய் பொடி/ chili powder- 1 tsp உப்பு/ Salt - to taste எண்ணை/ oil- to roast Method: Grind methi, garlic & green chili in a blender roughly Make the dough with wheat flour, methi paste, coriander powder, jeera powder, salt,turmeric & chili powder. Add 2 tsp of oil on top and let the dough rests for 15 minutes. Make parathas out of that and roast on either side of the roti by applying oil. Our Methi parathas are ready with pickle and raita.
