Vendhaya Keerai Puri/Methi Puri/How to make Methi leaves Puri/Methi Puri Recipe/Lunchbox puri recipe


 கடலைமாவு / Bengal gram flour- 1/2 cup

எண்ணை / Oil - 2 tsp + for frying உப்பு / Salt - to taste மஞ்சள்தூள் / Turmeric powder- 1/2 tsp சீரகத்தூள் /Jeera powder- 1/2 tsp தனியா தூள் / Coriander powder- 1 tsp மிளகாய் தூள் / Red chili powder- 1/2 tsp or as per taste Method: Wash & cut methi leaves. Take wheat flour in a bowl & add methi leaves & Bengal gram flour. Mix well. Then add turmeric, chili, jeera, salt & coriander powder. Mix all nicely. Then add water little by little to make a tight dough. At last, add 2 tsps of oil to make it soft. Rest it for 10 minutes. Heat oil in a Kadhai. Make small puris out of small balls. Fry all puris in hot oil. Our yummy methi puris are ready. These puris can be kept in a lunchbox for children with tomato ketchup. Any pickle or curd can be taken as a side dish. ரேஷன் புழுங்கலரிசியில் மொறு மொறுப்பான பூண்டு வடாம்/Garlic Vadam in Ration Boiled Rice/Garlic Vadi

Ingredients: ரேஷன் புழுங்கலரிசி / Ration Boiled Rice- 2 cups தண்ணீர் / Water - 1:3 ratio Total 6 cups of water பச்சை மிளகாய் விழுது / Green chili paste- 1 tsp உப்பு / Salt - 1 tsp பூண்டு / Garlic pods - 10 to 12 ( can take more as per taste)make a paste எலுமிச்சை சாறு / Lemon juice - 1 lemon juice எண்ணை / Oil - 2 tsps Method: Wash rice thrice & soak it for 12 hrs or overnight. Morning grind it in mixer into a fine paste. Add 3/4 cup of water to adjust the consistency. Boil 5.25 cups of water in a Kadhai. Add salt, green chili paste, oil , and garlic paste & mix. When the water boils add the batter slowly by keeping the flame low. Keep on stirring so that no lumps are formed. Keep the flame in low to medium & cook the same with a lid. Overall it takes 20 minutes to cook the batter nicely. In between stir the same. Add lemon juice & mix it. Heat a tawa in another stove & keep the Kadhai in low flame & cook for 3 to 4 minutes. When it cools nicely switch off the stove. Take some portion of the batter in a separate bowl. Keep the remaining batter closed with a lid. Take a small portion of the batter in a small spoon & keep vadam in the fridge mat. With the help of Murukku press we can prepare the same in different plates as per our taste. I made it with sev plate & murukku plate. Sun dry all vadam for 3 days in the hot sun. We can fry vadam after 3 days. It is very tasty & crispy with garlic flavour. Ingredients: சன்ன அவல் / Thin Flattened rice/ Patla poha - 2 cups பச்சை மிளகாய் பேஸ்ட் / Green chili paste- 3/4 tsp எலுமிச்சை சாறு / Lemon juice - 1 tsp ( 1/2 lemon ) உப்பு / Salt - 3/4 tsp பெருங்காயப்பொடி / Asafoetida powder- 1/2 tsp Method: Clean & wash flattened rice in a strainer with water. As it is very thin it gets washed nicely. Keep poha in the strainer itself for 45 min. After 45 min take poha in a plate. Add green chili, salt & asafoetida. Mash it nicely without any lumps. Grease the Murukku press with oil. Take desired "sev" plate. Fill up & start making vadam. It should be dried for full 2 days. This type of vadam is very easy & without cooking. Restaurant style Mixed Vegetable Pickle/வெஜிடபுள் ஊறுகாய்/How to make Vegetable Pickle/Veg Pickle

Ingredients: காலிப்ளவர் / Cauliflower- 100 gms முள்ளங்கி / Radish- 50 gms காரட் / Carrot- 50 gms இஞ்சி / Ginger- 25 gms பூண்டு / Garlic- 25 gms பச்சை மிளகாய் / Green chili- 10 ( slit ) நல்லெண்ணை/ Sesame Oil - 1 cup ( can add mustard oil as per taste) Masalas: கடுகு / Mustard - 2 tbsps வெந்தயம் / Fenugreek- 1/2 tsp கொத்தமல்லிவிரை / Coriander seeds- 2 tbsps சீரகம் / Cumin - 2 tsp சோம்பு / Saunf - 2 tsps மிளகு / Pepper- 1 tsp உப்பு / Salt - 1 tbsp ஓம்ம் / carrom seeds - 1 tsp எலுமிச்சை சாறு / Lemon juice - 2 no’s வினிகர் / White vinegar - 1 tbsp மஞ்சள் தூள் / Turmeric- 1 tbsp காஷ்மீரி மிளகாய் தூள் / Kashmiri chili powder- 1.5 tbsp ( as per taste plain normal chili powder can be added ) Method: Wash & cut radishes, ginger & carrots in one-inch lengths. Take out the florets from cauliflower in equal sizes. Slit green chilis. Steam all veggies for 10 minutes. Take out after that & fry in cotton cloth under fan for 3 hrs. Before making the pickle no moisture to be on the veggies. It should be completely dry. Heat a pan. Add mustard, methi, Jeera, Saunf, coriander seeds & pepper. Fry all without oil till they are brown in color. Cool the same and make coarse powder in a mixy. Heat sesame oil & cool Once the veggies are dried add salt, turmeric, masala powder, and carrom seeds. Mix well. Then add the oil & mix well. Lastly, add white vinegar & mix. This should be kept outside for 8 hrs . Then take a clean glass bottle & keep the pickle after 8 hrs. Oil should be well on top of the pickle. Our Restaurant style vegetable pickle is ready. Ingredients: கருப்பு கொண்டைக்கடலை / Black Chana - 1 cup அரிசி / Rice- 1/4 cup உப்பு / Salt- 1 tsp பச்சை மிளகாய் /Green chilli- 2 +2 இஞ்சி / Ginger - 1 inch பெருங்காயம் / Asafetida- 1/4 tsp கருவேப்பிலை / Curry leaves- little எண்ணை / oil - to make adai காரட் / Carrot- 1/2 வெங்காயம் Onion-1 கொத்தமல்லித்தழை / Coriander Leaves- little Method: Wash & soak Chana overnight in water. Soak rice for 3 hrs after washing. Grind both to a fine rava consistency after adding salt, ginger, green chili & asafetida. Let it rest for 4 to 5 hrs. Take a little portion of the batter in a separate bowl. Add onion, grated carrots & coriander ( green chili is optional) and mix all nicely. Heat tawa & grease the same. Then make a small adai & make a hole in the middle. Pour oil on all sides & roast on both sides with a lid covered. Our black Chana adai is ready to serve with sambhar or chutney powder or any kind of pickle. This will be crispy outside & soft inside. This is the best lunchbox recipe for children full of proteins.
