Ingredients: மாம்பழ கூழ் / Mango pulp- 500 Gms ( if we measure the pulp by 5 measure 1 measure of sugar to be added) சர்க்கரை / Sugar- 100gms ஏலக்காய் பொடி / Cardamom powder - 1/4 tsp ( can skip if we don’t want) Method: Wash mangoes and peel the skin. Take the pulp and grind in mixer jar to a fine paste without any lumps. Keep the mango pulp in a Kadhai , add sugar & cardamom. Stir it continuously for 20 minutes in a low medium flame. After 20 minutes pour the pulp in a greased plate and spread all over. Take a bigger plate so that after drying slices of Aam Papad will be thin. Dry in hot sun for a day and our Mango papad is ready. Take out the papad with a knife from edges. Cut the papad in any shape and preserve in air tight container in refrigerator. We can use this Mango papad when the mango season is over. Enjoy Ranjis flavours!

Vengaya Killu Vadam/ onion Vadam/ onion vathal vadam/ onion vadi

Ingredients:

இட்லி அரிசி / Idly rice- 2 cups

ஜவ்வரிசி / Sabudana- 1/2 cup

உப்பு / Salt - to taste

பச்சை மிளகாய் விழுது / green chilli paste- 1 1/2 tsp

எண்ணை/ oil - 2 tsp

எலுமிச்சம்பழம் சாறு/ Lemon juice - 1 to 2 tsp

தண்ணீர் / water - 10 cups
( 2 cups of water to grind the rice)
(2 cups to cook Sabudana)
( 6 cups to cook rice batter)

Method:

Wash & soak rice for 4 hrs. Grind to a paste in grinder.

Soak Sabudana overnight . Grind to a paste. Keep 2 cups of water in a pan and cook Sabudana till becomes glazy.

Keep 6 cups of water in a heavy bottom Kadhai. When it boils add 2 tsp of oil, salt ,green chili & mix. Then add the rice batter and cook it in a medium flame. When it cooks add boiled Sabudana , onion Lemon juice & mix it nicely.

Check whether the rice is cooked properly by touching with a wet hand.
Then cool the batter nicely and keep small Vadam in a plate greased with oil.
Dry the same for 2 days in hot sun. Our onion killu Vadam is ready to fry.

#MangoRice#மாங்காய்சாதம்#RawMangoRiceRecipe Ingredients: அரிசி/ Rice- 1 cup துருவிய கிளி மூக்கு மாங்காய்/ Grated Raw mango- 1 நல்லெண்ணை/ Gingely oil - little கடுகு / Mustard- 1 tsp கடலைப்பருப்பு / Bengalgram- 1 tsp வேர்க்கடலை / Groundnut - 1 tbsp துருவிய இஞ்சி/ Grated ginger- little பச்சை மிளகாய் / Green chili- 2 சிகப்பு மிளகாய் / Red chili- 1 பெருங்காயம் / Asafoetida- 1/4 tsp கருவேப்பிலை / Curry leaves- little உப்பு / Salt - to taste மஞ்சள்பொடி / Turmeric powder- 1/2 tsp துருவிய தேங்காய்/ Grated coconut- 3 tsp Method: Peel & grate mangoes & keep aside. Wash rice & add 2.25 cups of water & cook. add little oil & cool the rice before mixing. Heat 2 tsp of oil in a Kadhai. Add mustard, Bengal gram, groundnuts, green chili & red chilli and roast. Add grated mango to that and mix nicely after keeping the stove in low flame. Add salt, turmeric powder,curry leaves & sauté for 2 min. Mix with rice nicely. Add grated coconut to that and serve. Potato roast will be the best combination with mango rice. #MangoKulfi#MangoMalaiKulfi#MangoKulfiRecipe Ingredients: பால் / Milk - 1/2 liter மாம்பழம் / Sweet Mango- 1 பால்ஏடு/ milk cream- 3 tbsp ஏலக்காய் / Cardamom - 1/2 tsp powdered பிஸ்தா / pistachio- 2 tsp சர்க்கரை / Sugar- 2 tbsp குங்குமப்பூ / Saffron- 6 strands Method: Peel mango and take out the fruit. Make pulp out of that and keep aside. Keep milk for boiling .Boil the milk for 1/2 an hr to bring it to 200 ml and the milk to be boiled till we get thick consistency. Add sugar to that and boil again for 5 minutes. Add cardamom, saffron & little pistachio to the milk and cool nicely. After cooling the milk add mango paste and mix nicely to become a thick consistency & no lumps to be there . If need we can mix in mixer to form a nice paste. Then pour the mixture in kulfi mould and cover. Keep it in freezer for 7 to 8 hrs. After 8 hrs take out the moulds and place in normal water to take out the kulfis from the mould. Then one by one we can take out and add pistachio on top of it and serve. Our yummy mango kulfis are ready to eat. Enjoy Ranjis flavours!

Wash & drain water of pudina, curry leaves & Coriander leaves. First grind raw mangoes, salt, Ginger & green chili to a paste in mixer. Then add all pudina, curry leaves & Coriander leaves to that and make chutney. Heat 1 tsp of oilin tadka pan. Add mustard & asafoetida to that and then add green chutney and sauté for 2 to 3 min. Then our green mango chutney is ready to serve with curd rice or can be served with plain rice & ghee. Then add coconut water to that and mix nicely. This can be served chill after keeping the same in Refrigerator. Now for making popsicles add the coconut water mixer in popsicles mound and freeze for 1 hr. Place the popsicles in a bowl of water and take out the coconut popsicles one by one and serve. This is very tasty. Our coconut popsicles are ready to serve . Ingredients: மாங்காய் / Raw mango- 3 உப்பு / Salt - to taste நல்லெண்ணய் / gingely oil- 2 tbsp ( Instead Of gingely oil we can use any cooking oil) வறுத்து பொடி செய்த வெந்தயப்பொடி/dry fried fenugreek powder- 1/2 tsp மிளகாய் பொடி/ Chilli powder- 2 to 3 tsp கடுகு / Mustard- 1 tsp பெருங்காயம் / Asafoetida- 1/2 tsp Method : Cut raw mangoes in very small thin pieces & keep. Add salt, turmeric powder, Methi powder, salt & chilli powder. Heat gingely oil in a tadka pan. Add mustard and then asafoetida. Cool the oil for 5 minutes and then pour on top of Raw mango & mix thoroughly with all masalas. Store the pickle in a dry glass container, Instant Raw Mango pickle is ready to serve with curd rice. This Instant Raw mango pickle can be used for 8 to 10 days if kept in fridge. Ingredients: சிறிய மாம்பழம் /Small size mango-3 துருவிய தேங்காய்/ grated coconut- 3 tbsp தேங்காய் எண்ணை/ coconut oil - 2 tsp பச்சை மிளகாய் / Green chilli -1 சிகப்பு மிளகாய் / Red chili- 3 வெந்தயம் / Methi - 1/2 tsp கடுகு/ mustard - 1/2 tsp சீரகம் / Jeera - 1/2 tsp உப்பு / Salt - to taste வெல்லம் / Jaggery- 1 small piece தயிர் / curd - 3 cups கருவேப்பிலை/ curry leaves- little Method: Fry Methi & red chilli in 1 tsp of oil. Grind with coconut in a blender after cooling the same to a fine paste. Take 1/2 to 3/4 cup of water in a pan and add mangoes ,green chili, jaggery & salt to that and cook with a lid in medium flame. Now and then see the mangoes and add the coconut paste to the curd and mix nicely. When mangoes get cooked add the coconut paste to the mangoes and mix thoroughly. Add little salt to that. When it boils for 2 minutes switch off the flame. ( it should not be boiled for long time) Heat 1 tsp of coconut oil in a pan. Add mustard,pinch of methi seeds, red chili & curry leaves to that and pour on top of Kadhi as tadka. Our yummy mango Kadhi is ready to serve with rice or roti! Ingredients: துருவிய மாங்காய் / Grated Raw mango- 1-1/2cups சர்க்கரை/ Sugar - 1-3/4 cups கிராம்பு / Cloves - 4 to 5 பட்டை / Cinnamon- 1 or 2 சீரகம் / Jeera - 1 tsp crushed காஷ்மீர் மிளகாய் பொடி/ Kashmiri chili powder- 3 tsp உப்பு / Salt - 1/2 tsp Method: Peel & grate raw mangoes. Measure it. For 1-1/2 cups of grated mango add 1-3/4 cups of sugar. ( whatever measure of grated mango add little more of sugar) Take the sugar in a bowl. Mix grated raw mango & mix thoroughly. Keep it covered & tie with thin cotton cloth and keep it inside the house for 24 hrs. Next day again mix it and keep it in hot sun with the cloth. Like this it should be done for 3 days in hot sun. 4 th day sugar & mango becomes a very thick consistency. Then add cinnamon, cloves, salt, Kashmiri chilli powder & jeera powder & mix nicely. Again keep it in hot sun for 3 hrs. Then our Raw Mango Chunda will be ready to eat with Roti, Paratha & Puri.
