Kadalai paruppu Fry/ Chana dal fry/ How to make Chana dal fry namkeen/ Kadalai Paruppu Fry recipe


#ChanaDalFry#FriedChanaDalNamkeen#KadalaiParuppuFryRecipe#RanjisFlavours Ingredients: கடலைப்பருப்பு / Bengalgram/Chana dal- 3 cups உப்பு / Salt- 1/2 tsp கருப்பு உப்பு/ Black salt- 1/2tsp சாட் மசாலா/ Chaat masala- 1/2 tsp மிளகாய்த்தூள் / Red chili powder- 1/2 tsp ( can add more as per taste) Method: Wash Bengalgram nicely twice or thrice. Soak it for 4 hrs. After 4 hrs drain the water and keep it in a cloth & spread the dal all over the cloth and dry for 3 hrs. It should be well dried. Heat oil in a Kadhai. Take 2 tbsps of dal in a strainer (Perforated) so that we can dip the same in oil. Dip the dal in oil in high flame and fry nicely. Fry till golden color and take out & keep in a kitchen towel to take out the excess oil. Fry all dals in the same way. Heat the oil nicely in between before frying each lot. After frying add salt, Black salt, chaat masala & chili powder to that and mix nicely. We can fry curry leaves in oil and that can be added in the fried dal. Our Chana dal ( கடலைப்பருப்பு ப்ரை) is ready to serve before Tea or coffee as snack. Maida Papad/ Maida Vadam/ மைதா வடாம்/ How to make Maida Papad/ All purpose flour Papad


#MaidaPapad#MaidaVadam#AllPurposeFlourPapad#RanjisFlavours Ingredients: மைதா/ Maida- 1 cup உப்பு / Salt- 1/2 tsp ஓமம் / Carom seeds- 1/2 tsp (Instead of carom seeds can add cumin or sesame as per option) Can add green chili or chili flakes as per choice. Method: Take maida in a bowl. Add Carom seeds & salt to that & mix nicely. Add 1.25 cups of water to that & mix nicely , by adding water little by little sonthat thd lumps are not formed. Make a smooth batter. Boil water in a pan for steaming the Papad. Grease small small plates for steaming the Papad. Pour the batter with a spoon so that the batter spreads all over evenly. Place all plates on top of plate in the pan for steaming. Steam the same for 3 minutes with a lid. After 3 minutes take out the small plates and cool the same. Keep a plastic sheet to dry all Papad before hand. After cooling the Papad take out the same with a help of a sharp knife from all sides to remove from the plate. Place the same in the sheet for drying. Make all Papad in the same manner and dry the same for 2 days in the sun or under the fan inside the house. After 2 days when it is dried nicely it is ready to fry. Heat oil in a Kadhai and fry the same & serve. Green Tomato Chutney/ தக்காளிக்காய் சட்னி/ Kache tamatar ki chutney/ Green tomato chutney Recipe


#GreenTomatoChutney#KacheTamatarKiChutney#தக்காளிக்காய்சட்னி#RanjisFlavours Ingredients: தக்காளிக்காய் / Green tomato- 5 உப்பு / Salt - to taste வேர்க்கடலை / Peanuts- 1 tbsp உளுத்தம்பருப்பு / Ulad dal- 1 tsp எள் / Sesame- 1 tsp சிகப்பு மிளகாய் / Red chili- 4 பெருங்காயம் / Asafoetida- 1/4tsp கருவேப்பிலை / Curry leaves- 1 tbsp எண்ணை / oil - to fry கடுகு / Mustard - 1/2 tsp துருவிய தேங்காய் / Grated coconut- 1 tbsp ( optional ) Method: Cut green tomatoes in 4 parts and keep aside. Heat 2 tsp of oil in a Kadhai. Add Ulad dal, red chili, asafoetida, peanuts & fry for 2 minutes. Then add sesame & grated coconut to that and fry in low flame. Cool all the ingredients. Again add 1 tsp of oil in the same Kadhai and roast cut green tomato in a low flame for 3 to 4 minutes. It should not be over cooked. Just to make it little soft we r doing tho process and to remove the raw smell. Take out from stove and cool the same. After cooling, first grind all ingredients with salt in a blender to make like powder. Then add green tomatoes to that and make chutney. Heat a tadka pan & add mustard to that. When it splutter add curry leaves to that . Add the tadka on top of chutney. Our yummy green tomato chutney is ready to serve with Idli, Dosa, upma, Puri or paratha.
