How to make Kara Appam/Crispy Masoor dal dosa/2 in 1 recipe Kara appam & Masoor dal dosa

Ingredients: மசூர் பருப்பு / Masoor dal- 1.5 cups பாசிப்பருப்பு / Mung dal - 1/2 cup பச்சை மிளகாய் / Green chili- 4 இஞ்சி / Ginger - 1 inch கருவேப்பிலை / Curry leaves- little கொத்தமல்லி / Coriander leaves- little உப்பு / Salt - to taste எண்ணை / Oil - to make dosa & appam பெருங்காயம் / Asafoetida- 1/4 tsp வெங்காயம் / Onion- 1 Method: Wash masoor dal & mung dal nicely thrice & soak it for 3 hrs. Afterwards drain the water & make a fine paste of each with green chili, asafoetida, ginger & salt. Mix both the dal nicely & rest it for 30 minutes. Method for chutney: தேங்காய் / Coconut 🥥- 1/2 பச்சை மிளகாய் / Green chili- 2 பொட்டுக்கடலை / Roasted gram- 2 tbsps உப்பு / Salt - 1/2 tsp புதீனா இலைகள் / Mint leaves- 3 tbsps Take all this in mixer jar & make tasty chutney. For Kara appam: Take the batter in a bowl. Add onion, coriander & curry leaves & mix well with water ( as per consistency) Grease the appam pan with oil & heat. Fill up the batter in pan & add oil . Cover the same & cook well . After 2 minutes turn all appam to other side & add oil to make it to become crisp. Kara appam is ready with mint chutney. For making dosa: Take the batter in a separate bowl & add little water to make it in to dosa consistency. Heat non stick tawa & grease it with oil. Sprinkle some water on that & wipe it with tissue please paper. Then spread the dosa batter & make dosa & add oil. Make it crisp on both sides & serve with mint chutney. This is the 2 in 1 recipe for making Kara appam & dosa. Can make it for breakfast or lunchbox or for dinner. Enjoy Ranjis flavours! Ingredients: மக்கானா - தாமரைப்பொரி / Fox nut- 60 gms பாதாம் பருப்பு / Badam/ almonds- 60 gms குங்கும்ப்பூ / Saffron - 4 to 5 strands ( soaked in milk) முலாம்பழ விதை / melon seeds - 2 tsps பால் / Milk - 1 cup முந்திரி / Cashews- 5 to 6 ( chopped in small size) பிஸ்தா விதை / Blanched Pistachios- 5 நெய் / ghee - 7 to 8 tbsps சர்க்கரை / Sugar - 1.5 cups ரோஜா இதழ்கள் / Rose petals- little Method: Wash & soak almonds for 5 hrs. Peel the skin & make fine paste with milk. Keep it aside Dry roast Makhana till it becomes crispy in a pan. Make fine powder after cooling. ( in this step we can add milk & and make a paste out of that OR add milk when we combine with badam paste) Add ghee in pan & add almond paste & keep it for 2 minutes & stir. Add melon seeds & saffron milk in that. Mix well. After it cooks add fox nut powder & mix well. Then add sugar. Stir well to combine all. Add 1/2 cup of milk & mix nicely to combine all nicely. Stir in medium flame & add little ghee to that. After 3 minutes almond fox nut halwa will be ready & leaves the sides of the pan. Add cashews & mix. Halwa is ready now, keep in serving bowl. Top it with blanched pistachios & rose petals . Quick, Yummy, tasty & healthy Almond fox nut halwa is ready. Enjoy Ranjis flavours!

Ingredients: சோளம் / Corn - 1 வெண்ணை / Butter- 2 to 3 tbsps பச்சை மிளகாய் / Green chili-2 துருவிய பூண்டு / Grated garlic- 5 கொத்தமல்லி / Coriander leaves- handful மிளகு பொடி / Pepper powder- 1/2 tsp சீரகத்தூள் / Roasted cumin powder- 1/2 tsp Method: Can take out the corn kernels by cutting in half & take out corn by pulling it upwards. Steam corn for 10 minutes in steamer. Heat Kadhai & add butter. Add grated garlic & sauté till raw smell goes. Add green chili & corn & sauté. Add coriander leaves on top & serve hot. Butter garlic corn is ready. In the same Kadhai add butter. Add pepper powder, jeera & then add corn. Mix well.Top it with coriander leaves. Butter pepper corn is ready now. #dosa #masaladosa #masala#ranjisflavours Ingredients: இட்லி அரிசி / Idly rice- 4 cups உளுத்தம்பருப்பு / Ulad dal - 3/4 cup வெந்தயம் / Fenugreek- 2 tsps கடலைப்பருப்பு / Bengal gram- 2 tbsps எண்ணை / Oil - to make dosa & to make potato curry உப்பு / Salt - to taste ( 3 tbsps for batter) To make potato curry: உருளைக்கிழங்கு / Potato - 4 ( mashed) வெங்காயம் / onion - 1 ( big size) கடுகு / Mustard - 1 tsp கடலைப்பருப்பு / Bengal gram- 2 tsps பெருங்காயம் / Asafoetida- 1/4 tsp பச்சை மிளகாய் / Green chili - 4 சிகப்பு மிளகாய் / Red chili - 1 கருவேப்பிலை / Curry leaves- little கொத்தமல்லி / Coriander leaves- little Method: Wash & soak rice & fenugreek for 5 hrs. Soak Ulad dal & Bengal gram for 2 hrs. Grind rice & dal separately. Mix together nicely with salt. Ferment the batter for 7 hours. Boil potato & mash. Heat oil in pan. Add mustard, Bengal gram, asafoetida, green chili & red chili. Add onion & sauté till soft. Add mashed potato & mix. Add handful of water & sprinkle. Close with lid & cook nicely. After 3 minutes add coriander leaves on top. Potato masala is ready now. Heat tawa. Grease with oil. Then sprinkle water. Clean with tissue paper. Spread the batter nicely in thin way. Ingredients: அரிசி / Rice - 1 cup தக்காளி / Tomato- 2 ( big) உப்பு / Salt - 1/2 to 3/4 tsp சீரகம் / Cumin - 1 tsp மிளகாய் பொடி / Red chili powder- 1/2 tsp Method: Wash thrice nicely & soak rice overnight. Drain the water in the morning & make a nice paste by adding 1/2 cup of water in a mixer. Cut tomatoes into pieces & grind in mixer with salt nicely. Take out the juice through a strainer by adding 1/2 cup of water. Boil the tomato juice after adding cumin & red chili powder. After boiling nicely cool the same After cooling the tomato juice add the same in rice batter and mix. Keep a Kadhai with water for steaming. Keep a perforated plate on that. Take small plates & grease the same. Take a small spoon of batter & spread in the small plates & keep it for steaming with a covered lid for 3 minutes. After 3 minutes take out the plates & cool. After cooling with a help of a knife release the sides of the Papad slowly and take out. Keep the same for drying . Can cut the Papad with a help of cookie cutter if necessary so that we can get a nice shape. Dry Papad in hot sun for 3 days & tomato rice Papad is ready to fry. Ingredients: பாகற்காய் / Bitter gourd- 2 ( 200 gms) துவரம்பருப்பு / Pigeon dal/ Tuvar dal- 100 gms எண்ணை / Oil - 4 tbsps + 1 tbsp கடுகு / Mustard- 1 tsp புளி / Tamarind- small lemon sized ball ( soaked in water & extracted the syrup) வெல்லம் / Jaggery- 2 tsps மஞ்சள்தூள் / Turmeric powder-1/2 tsp உப்பு / Salt - 1 tsp ( to taste) For masala: கொத்தமல்லி விரை / Coriander seeds- 3 tbsps கடலைப்பருப்பு / Bengal gram- 1.5 tbsps வர மிளகாய் / Red chili- 5 to 6 எள் / Sesame- 1 tbsp பெருங்காயம் / Asafoetida- 1/4 tsp துருவிய தேங்காய் / Grated coconut- 3 tbsps கொத்துக்கடலை/ black Chana-3 tbsps(soaked overnight ) Method: Wash & cut bitter gourd into thin slices. Take out if there are seeds . Heat 1 tsp of oil in a Kadhai & add mustard . Add bitter gourd & sauté in medium flame. Grind all fried masalas into coarse powder & keep it aside. Cook the black Chana separately in pressure cooker for 5 to 6 whistles & keep aside. After that add tamarind syrup & cook the same with a lid. After 4 minutes check whether they are cooked nicely. Then add the masalas & mix well . Cook again for 3 minutes. Then add cooked dal & mix. Boil for another 2 minutes. Check the consistency & add little water & mix. Lastly add jaggery & boil.
