Ingredients: பால் / Milk - 1 litre பாசுமதி அரிசி/ Basmati Rice- 1 tbsp சர்க்கரை / Sugar - 1/2 cup ஏலக்காய் / Cardomom- 1/2 tsp முந்திரிப்பருப்பு / Cashews- 10 திராட்சை / Raisins/ kismiss- 10 குங்குமப்பூ / Kesar - little soaked in hot milk நெய் / ghee - 2 tsp Method: Wash the rice,drain the water and dry. Grind the washed basmati rice in to half in mixi. Take milk in a tall vessel so that the quantity of the milk should be 1/3 in that. Add rice and keep it in pressure cooker in medium flame with lid & weight for 30 minutes. After 30 min take out the milk and add sugar, cardomom& kesar to that. Boil for 5 minutes. Ingredients: கடலை மாவு / Bengalgram powder/ Besan - 5 cups ( ratio is for 1 cup of besan 1.25 cup of sugar) ( water for sugar syrup is 1/2 the quantity of sugar) சர்க்கரை / Sugar - 6 1/4 cups தண்ணீர் / Water for syrup-3 cups & little more ஏலக்காய் /Cardomom - 15 முந்திரிப்பருப்பு / Cashews- 15 ஜாதிக்காய் / Nutmeg powder- 1 tsp கிராம்பு / Cloves- 15 அரிசி மாவு / Rice flour -2 tsp சமையல் சோடா/ Baking Soda - 1 pinch திராட்சை/ Kismiss - 15 நெய் / ghee - to fry எண்ணை/ oil - to fry Boondi குங்குமப்பூ / kesar - little Food orange color/ Kesari powder- little Method: Sieve the Bengal gram flour nicely. Fry cashews & kismiss and keep aside Heat the sugar with water in a broad vessel. Mix it nicely and add 1 tsp of milk to that to take out the impurities in sugar. Boil the syrup to 1 string consistency. Add cardomom powder & food color & mix it. Mix the Bengal gram flour with 1 tsp of rice flour& a pinch of soda with water nicely so that it becomes a nice batter. Heat oil in a Kadhai. Pour the batter in a boondhi plate on top of oil and tap so that it comes out evenly.( every time wash the bottom of the plate with water so that all boondhi comes out in round shape) Fry all boondhi and add in sugar syrup and mix. Add nutmeg powder, cashews, cloves, kismiss and cardomom powder to the boondhi sand mix altogether upside down. Cool it nicely and make laddoos out of that. Our yummy boondhi laddoos are ready. Ingredients: சிறிய ரவா / Small nice Rava/ sooji - 2 cups சர்க்கரை பொடி/ Sugar powder- 2 cups பொட்டுக்கடலை பொடி/ Roasted gram powder- 2 cups நெய் / ghee- 1 1/2 cups ஏலக்காய் பொடி/ Cardomom powder- 1 /2 tsp முந்திரிப்பருப்பு / Cashews- 15 திராட்சை / kismiss- 15 Method: Roast cashews& Raisins in 3 tsps of ghee. Roast Rava in 3 tsps of ghee nicely till we get a roasted smell and light brown. Keep the Rava in a bowl . Add roasted gram flour & sugar. Add cashews & Raisins to that. Mix it well. Ingredients: சிறிய ரவா /Nice Rava - 1 cup ( 200 gms) சர்க்கரை / Sugar - 1 cup பால் / Milk - 1/2 liter ஏலக்காய் / Cardomom- 1/2 tsp குங்குமப்பூ / Kesar- little பிஸ்தா / Pistachio - 6 எண்ணை / Oil - to fry நெய் / Ghee - 2 to 3 tsp Knead the Rava with little water and keep aside like Chapathi consistency dough. Add Little more than 1/2 cup of water in sugar and keep in a medium flame to dissolve sugar nicely and becomes sticky. Then switch off the flame. Make small balls of Rava and make in round shapes like Chapathi. Fold & seal the edges with water in half so that it looks like 1/2 circle. Heat oil in pan with ghee. Fry the pooris and soak in sugar syrup for 5 minutes. Heat milk in a pan ,add cardamom, saffron milk and pour the milk on top of puris to soak. Add cut pistas on top. Pidi Kozhukattai/ பிடி கொழுக்கட்டை/ Savory rice dumplings/ Kara Pidi Kozhukattai
Ingredients: அரிசி/ Rice - 3 cups துவரம்பருப்பு / Tuvar dal- 1/3 cup உளுத்தம்பருப்பு / Ulad dal-1/3 cup தேங்காய் / coconut 🥥- 1 cup grated சிகப்பு மிளகாய் / Red chilli-7 பெருங்காயம்/ Asafoetida- 1/2 tsp கருவேப்பிலை/ Curry leaves- little மிளகு / Pepper- 1 tsp( take 1/2 tsp if u need less pepper) உப்பு/ salt - To taste எண்ணை / oil - 5 to 6 tbsps தேங்காய் எண்ணை/ coconut oil- 1 tbs தண்ணீர் / Water- 6 1/2 cups( hot) Method: Wash and drain the water. Spread it in a cloth for 2 hrs. Soak Ulad dal, Tuvar dal & red chilli separately. Grind the rice in a mixer jar for Rava consistency. Grind red chilli, tuvar dal & Ulad dal in a mixer jar coarsely. Heat oil in a pan. Add mustard,ulad dal , asafoetida & curry leaves. After that add coconut and mix. Add boiled water to that. When the water boils add the dal paste, salt and mix it. Add the rice Rava and mix together. Cover with a lid and cook for 5 minutes. It should be half cooked as we r going to steam it when it becomes cool. After cooling make into small dumplings and steam for 10 minutes. Our Pidi Kozhukattai is ready to serve with green chutney, coconut chutney and sambar. It is very yummy! Mysore Bonda / மைசூர் போண்டா / Mysore Ulundhu Bonda/ Crispy Mysore Bonda
Ingredients: உளுத்தம்பருப்பு / Split black gram/ Ulad dal - 1 1/2 cups அரிசி / Rice- 1 tsp பச்சை மிளகாய் / Green chilli- 6 சிவப்பு மிளகாய் / Red chilli- 1 or 2 பெருங்காயம் / Asafoetida- 1/4 tsp நறுக்கிய தேங்காய் / Sliced cut coconuts - 1/4 cup மிளகு / Pepper- 1 tsp உப்பு / Salt - To taste எண்ணை / oil - To fry கருவேப்பிலை/ Curry leaves- little Method: Wash and soak Ulad dal & rice for 1 hr. After 1 hr drain the water. Make nice fluffy dough in a blender by adding salt, chilli, asafoetida by adding little water in between. Add whole pepper, coconut & curry leaves to that and mix the dough. Heat oil in a Kadhai and make small balls out of the batter by touching water in the hand , so that the shape of bondas comes nicely. Fry all the Bondas till golden brown and takeout in a tissue paper. Our Mysore Bondas are ready to serve with coconut chutney. Kara Chutney / கார சட்னி / Kara chutney Recipe/ How to make Kara Chutney/ vengaya Kara Chutney
Ingredients: வெங்காயம் / Onion - 7 தக்காளி / Tomato- 5 பூண்டு/ Garlic- 10 உளுத்தம்பருப்பு / Ulad dal- 3 tsp கடலைப்பருப்பு / Bengal gram-3 tsp சிவப்பு மிளகாய் / Red chilli- 10 உப்பு / Salt - To taste எண்ணை / Oil - To fry புளி/ Tamarind-(paste) 1 tsp For Seasoning: கடுகு / Mustard- 1 tsp உளுத்தம்பருப்பு / Ulad dal - 2 tsp கருவேப்பிலை / Curry leaves- little சிவப்பு மிளகாய் / Red chili- 2 Method: Heat oil in a pan. Fry Bengal gram & Ulad dal separately and keep aside. Heat 4 tsp of oil in a pan. Add garlic, onion & red chili . Sauté for 5 minutes and then add Tomato to that.Fry till onion gets a glaze. Cool nicely First grind bengal gram & lad dal to a powder in a blender. Then add fried onion & tomato to that and make chutney with 1 tsp of tamarind paste.( Instead of tamarind paste , can add lemon sized tamarind to that) Again heat 5 tbsp of Gingely oil and add the chutney . Add salt and mix it nicely. Sauté till oil oozes from sides of the pan and our Kara Chutney is ready to serve. Heat 2 tsp of oil. Add mustard , ulad dal , curry leaves & red chili . Add all this on the top of Kara chutney as seasoning. Roast Sago with 1 tsp of ghee in a vessel. Then add 1 glass of water to cook Sago in a medium flame . Once it is cooked add sugar and mix nicely. Boil milk to thick consistency. Once Sago cooks with sugar add milk & fried cashews and raisins to that. Our Sago Kheer ( Sabudana Kheer) is ready to serve hot or chill. Ingredients: வெண்டைக்காய் /Lady’s finger/ Bhindi - 1kg அரிசி மாவு / Rice flour - 1 tbsp கடலை மாவு/Bengalgram flour/Besan- 3tbsp கடுகு / mustard- 1/2 tsp சீரகம் / Cumin seeds- 1/2 tsp பெருங்காயம்/ Asafoetida- 1/4 tsp மஞ்சள் பொடி / Turmeric powder- 1/2 tsp மிளகாய் பொடி / chilli powder- 1/2 tsp சீரகப்பொடி / cumin powder- 1/2 tsp மாங்காய் பொடி / Aamchur powder/ dry mango powder- 1/2 tsp கொத்தமல்லிவிரை பொடி/ coriander powder- 1/2 tsp உப்பு / salt- to taste எண்ணை / oil - 3 to 4 tbsp Method: Heat oil in a pan. Mysore Pak/ மைசூர் பாக்/ Easy Homemade Mysore Pak Receipe
Ingredients: கடலை மாவு / Bengalgram flour -1 cup சர்க்கரை / Sugar- 1 1/2 cups ( if we want less sugar can take 1 1/4 cups) நெய் / Ghee - 1 to 1 1/2 cups தண்ணீர் / water- 3/4 cup Method: Dry roast Bengalgram flour ( besan) in a kadhai , till the raw smell goes off. Keep it aside. Grease a plate with ghee and keep aside. Keep sugar & water in a pan in a medium flame. Mix it nicely & make Pak with 1 string consistency. Keep on stirring nicely till we get that. Heat the ghee in a medium flame in a kadhai. Add roasted Bengalgram flour slowly in the sugar syrup by stirring constantly so that no lumps are formed. Add hot ghee in between and stir nicely. Go on adding the ghee till we get a porous consistency and it leaves the side of the pan and doesn’t stick to the pan. That is the correct time to switch off the flame and pour in a plate which is greased already. Spread the crystal sugar on top of it and that looks v nice once u cut the Mysore Pak. When the contents are medium hot ,cut into diamond shape or round shape whichever we prefer. Our Mysore Pak is ready to serve and very yummy. Ingredients: துருவிய தேங்காய் / Grated coconut- 1 cup வெல்லம் / Jaggery- 3/4 cup ஏலக்காய் / Cardomom- 1/2 tsp நெய் / Ghee - 2 tsp Method: Take coconut & jaggery in a vessel. Keep in a low flame and stir nicely . Stir it continuously till u get a thick consistency. Jaggery & water content in the coconut becomes a thick pooranam after 10 minutes. Lastly add cardomom & ghee . Stir it nicely so that ur won’t stick to the bottom of the vessel. Our sweet puranam is ready to make Kozhukattai. Make small balls out of that and keep ready to make modakam. Make cups out of rice flour balls and fill up with sweet pooranam and steam it for 7 to 8 minutes. Ingredients: பாசிப்பருப்பு / Moong dal- 1 cup பச்சை மிளகாய் / Green Chili-4 உப்பு / Salt - To taste பெருங்காயம்/ Asafoetida- 1/2 tsp Method: Wash and soak green lentils for 1 hr. Grind in a blender with salt, green chili & asafoetida to a coarse paste. Steam the batter for 10 minutes & cool. Season with mustard & curry leaves. Add little turmeric to that batter. உளுந்து கொழுக்கட்டை / Ulad dal Modak / உப்பு கொழுக்கட்டை / Black gram lentils Dumplings
Ingredients: உளுத்தம்பருப்பு / Ulad dal- 1 cup பச்சை மிளகாய் / Green chilli- 3 பெருங்காயம்/ Asafoetida- 1/2 tsp உப்பு / Salt - To taste கருவேப்பிலை/ Curry leaves- little Method: Wash and soak ulad dal for 1 hr. Grind dal with salt, green chili & asafoetida to a coarse paste. Keep it in a plate and cook for 10 minutes in steam. Season with mustard & curry leaves. Make it into Puran with hand when it becomes cool. Our Ulad dal Puran is ready to fill in rice dough cups for making Modak. Kozhukattai Mavu / கொழுக்கட்டை மாவு / Basic kozhukattai Mavu Receipe
Ingredients: அரிசி/ Rice -2 cups தண்ணீர்/ Water- 4 cups எண்ணை/ Oil- little உப்பு/ Salt - To taste Method: Take 2 cups of rice. Wash and soak it for 1 hr. Grind to a nice smooth batter with 2 cups of water. Take 2 cups of water in a pan. Add little oil and salt. When the water boils add the rice paste to that and let it cook nicely. After it gets cooled make a nice dough for making kozhukattai ( modak). Our kozhukattai dough is ready
Coconut Kheer/Arisi Thengai Payasam/ Quick coconut rice kheer
Ingredients: துருவிய தேங்காய் / Grated Coconut- 2 tablespoons அரிசி/ Rice - 2 tsp பால் / Milk - 1 cup சர்க்கரை / Sugar - 1/4 cup முந்திரிப்பருப்பு / Cashews- 7 திராட்சை / Raisins- 7 நெய் / Ghee - 2 tsp Method : Fry cashews & Raisins in ghee and keep aside. Wash & soak rice for 15 minutes. Add coconut & soaked rice in a blender and make a paste by adding water . Take this paste in a vessel and cook in a medium flame. Constantly stir this mixture and cook the rice by adding little water in between, so that lumps will not be there at the bottom of the vessel. After it is cooked add sugar and mix nicely. Keep it for2 to 3 minutes in a low flame. Add cardomom and milk to that. Add fried cashews & Raisins. Vegetable sweet Corn Soup/ Sweet corn & veg soup recipe/ Vegetable Corn 🌽 Soup
Ingredients: ஸ்வீட் கார்ன்/ Sweet Corn 🌽-3 பீன்ஸ் / Beans - 150 gms காரட்/ Carrot- 150 grams குடை மிளகாய் / Capsicum- 1 பட்டாணி / Peas - 150 grms பச்சை மிளகாய் / Green chili- 4 வினிகர் / green chilli in white vinegar-little ( to serve) சோயா சாஸ் / Soya sauce - little வெண்ணை / Butter 2 tsp கார்ன் மாவு / Corn flour - 3 tablespoons மிளகு பொடி/ Pepper powder- 1 tsp Method: Grind sweet corn in a blender coarsely and keep aside. Melt butter in a pan. Add slit green chilli, beans, carrot, capsicum, peas & corn one by one. Sauté nicely & salt. After 2 minutes add water to the vegetables and cook with a lid covered. When all the vegetables cooks, add corn paste & pepper to that and mix nicely. Mix corn flour in cold water without any lumps. Add that to the soup and boil for 2 minutes more. Add water to bring to the soup consistency. Our vegetable sweet corn soup is ready to serve. While serving add soya sauce & green chilli in vinegar to that according to taste & serve hot. Milagu Kuzhambu Receipe / Pepper Kuzhambu receipe / மிளகு குழம்பு
Ingredients: நல்லெண்ணை / Gingely oil புளி / Big Lemon sized Tamarind- கடுகு / Mustard - 1/2 tsp வெந்தயம் / Fenugreek seeds- 1/2 tsp சீரகம் / Cumin - 1 tsp மிளகு / Pepper - 1 1/2 tsp கொத்தமல்லி விரை /Coriander seeds- 2 tsp சிவப்பு மிளகாய் / Red chilli - 3 கடலைப்பருப்பு / Bengalgram- 1/2 tsp வெல்லம் / Jaggery - little கருவேப்பிலை/ Curry leaves- 2 tablespoons மஞ்சள் பொடி / Turmeric powder - 1/2 tsp உப்பு / Salt - To taste Method: Heat oil in a pan. Fry Bengalgram, Coriander seeds, pepper ,jeera ,red chili & curry leaves nicely and cool. After cooling grind the above ingredients to a fine paste in mixer. Heat gingely oil in a vessel. Add mustard, fenugreek, turmeric powder & asafoetida. Add the tamarind water in that and allow it to boil for 5 to 7 minutes. Add the fine paste, jaggery to that and boil for another 2 to 3 minutes. Add curry leaves to that and our Pepper Kuzhambu is ready to eat with rice & ghee. This is very good for health . Missi puri / மிசி பூரி / Besani Missi puri Receipe / Rajasthani Missi puri Receipe/Besan mix puri
Ingredients: கோதுமை மாவு / Wheat flour- 4 cup கடலை மாவு / Bengal gram flour- 3/4 cup உப்பு / Salt - To taste மஞ்சள் பொடி / Turmeric powder- 1/2 tsp மிளகாய் பொடி / Chili powder சீரகப்பொடி / Cumin powder-1/2 tsp ஓமம் / Carrom seeds- 1 tsp காய்ந்த வெந்தய இலை / Fenugreek leaves - 1 tsp பச்சை மிளகாய் / Green chili- 3 கொத்தமல்லி / Coriander leaves- little எண்ணை / Oil - 3 tsp to add in flour while making the dough & to fry puri Method: Mix wheat flour & bengal gram nicely. Add salt, cumin powder, turmeric powder, chili powder, carom seeds, green chili , oil and dry methi leaves to that and make a dough for puri. Rest the dough for 20 minutes. Vegetable Kurma/ Mixed Vegetable Kurma receipe/Restaurant style Vegetable Kurma/ வெஜிடபுள்
Ingredients: தேங்காய் /Coconut 🥥-1/2 ( grated) வெங்காயம் / Onion- 2 பட்டாணி/ Peas- 100 gms குடை மிளகாய் / Capsicum-1 காரட் / Carrot- 100 gms பீன்ஸ் / Beans - 50 gms உருளைக்கிழங்கு / Potato- 2 தக்காளி / Tomato-1 மஞ்சள் பொடி/ Turmeric powder- 1/2 tsp மிளகாய் பொடி/ Chilli powder-1/2 tsp சீரகப்பொடி/ Cumin powder- 1/2 tsp மசாலா பொடி/ Masala powder- 1/2 tsp பட்டை பொடி / Cinnamon powder- 1/2 tsp உப்பு / Salt - To taste கசகசா/ Khuskhus - 1 tsp சோம்பு / Anise - 1 tsp பச்சை மிளகாய் / Green chilli-3 பூண்டு / Garlic- 7to 8 கொத்தமல்லி / Coriander- little Method: Grind coconut & green chilli to a paste in a blender and keep aside. Heat 3 tsp of oil in a pan. Add khus khus, Garlic,cumin and onion and sauté till onion gets soft after adding little salt to that. Add all the vegetables one by one and mix nicely . Let it cook for 3 to 4 minutes. Add water to cook. Add cumin powder, masala powder, turmeric powder, chili powder & required salt to that and cook with a lid covered. Add the coconut paste and mix and let it boil for 2 minutes. Garnish with Coriander leaves and our mixed vegetable Kurma is ready to serve with chapathi, Roti and Puri as a side dish.
