How to make Paruppu Poli/Wheat flour Boli/Maharashtrian Pooran Poli/Festival sweet Pooran poli

Ingredients: கடலைப்பருப்பு / Bengal gram- 1 cup வெல்லம் / Jaggery- 3/4 cup சர்க்கரை / Sugar - 3 tbsps நெய் / 3 tsp ஏலக்காய் பொடி / Cardomom powder- 1/2 tsp துருவிய ஜாதிக்காய் / Grated nutmeg- 1/2 சுக்குப்பொடி / Dry ginger powder- 1/4 tsp நெய் / Ghee- to roast Poli தண்ணீர் / Water- 1 cup ( to knead dough) கொதிக்க வைத்த தண்ணீர் /Hot boiled water- 3 cup ( to cook dal) மஞ்சள் பொடி / Turmeric powder- 1/4 + 1/4 tsp உப்பு / Salt- 1/2 tsp அரச மாவு / Rice flour- 3 tbsps Method: Wash Bengal gram nicely thrice. Soak it in hot boiled water for 15 minutes. Then cook the same with 3 cups of water in a cooker. Add 1 tsp of oil & turmeric powder. Cook for 5 whistles. Cool the same Take 2 cups of sieved wheat flour in a bowl. Add oil & salt. Knead the same by adding little water in between to a nice dough. Cover the same with a wet cloth for 15 to 20 minutes. After cooking the dal drain the water from dal. Dal is well cooked. Take dal in a Kadhai. Add jaggery to that & mash it with a potato masher nicely for 10 minutes. Add little ghee & make Pooran in medium to low flame. Lastly, add ghee & make Pooran. Cool the same. Make Pooran into equal-sized balls. Make balls out of dough equally. Take a chapati stone & cover the same with a plastic sheet. Grease it with oil. Take the dough & make Katori & keep the Pooran in that. Make it like a ball with Pooran. Then roll out the same with chapati roller to make roti. The edges of the roti should be thin. Heat Tawa. Keep the rolled Poli in Tawa. Roast it on both sides by applying ghee on both sides in medium flame. Make all Poli in this way. Our Maharashtrian type of Pooran Poli is ready to serve with ghee. It tastes yummy. Instant Chakli Recipe/How to make Maharashtrian chakli/Murukku Recipe with store bought rice flour

Ingredients: அரச மாவு / Rice flour- 2 cups பொட்டுக்கடலை/ Puffed Chana dal- 1/2 cup உப்பு / Salt- 1 tsp பெருங்காயம் / Asafoetida- 1/4 tsp எண்ணை / Oil - to mix in flour- 1/4 cup சீரகத்தூள் / Jeera powder- 1 tsp தனியா பொடி / Coriander powder- 1 tsp ஓம்ம் / carrom seeds- 1/2 tsp எள் / Sesame- 1 tsp மஞ்சள் தூள் / Turmeric powder- 1/2 tsp மிளகாய் தூள் / Chili powder-2 tsp எண்ணை / oil- to fry Method: Take rice flour In a bowl. Take puffed Chana dal in a mixer & make a fine powder. ( which is well dried in sun) Sieve the Chana dal powder. Mix the same with rice flour. Add cooking oil. Add roasted Jeera powder, red chili powder, Asafoetida, sesame, carrom seeds, salt & coriander seeds powder to that. First Mix all ingredients with flour nicely. Then add water to that & make a dough. Heat oil in Kadhai. Take small plates & grease the same with oil.OR can take small plastic sheets to make chaklis. Grease the inside portion of the chakli maker with oil with a murukku plate inside. Fill the dough to the top & start making chaklis on the plate beforehand. Chaklis can be if any size of your choice big or small. Check the oil before frying the chaklis & slide the chaklis in oil one by one. Fry in medium flame till we get a golden color. Yummy, crispy chaklis are ready for Diwali. This can be stored for 10 days. We get 18 to 19 chaklis in 2 cups of rice flour. Try this recipe for Diwali. Ingredients: மிஞ்சிய இட்லி மாவு / Left over idly batter- 1.5 cups வெங்காயம் / Onion- 2( finely cut) - 3 tbsps காரட் / Carrot- 2 tbsps பெருங்காயம் / Asafetida-1/4 tsp பச்சை மிளகாய் / Green chili -3 சிகப்பு மிளகாய் பொடி / Red chili powder- 1/2 tsp ( optional) கருவேப்பிலை / Curry leaves- little கொத்தமல்லித்தழை / Coriander leaves- little உப்பு / Salt- as per taste எண்ணை / Oil - for frying அரசி மாவு / Rice flour- 1 tbsps ( can add more as per consistency) Method: Take idly batter in a bowl. Add onion, carrots, Asafoetida , salt, curry leaves, coriander leaves, green chili & red chili powder. Mix all nicely to a batter. Add rice flour as per consistency if the batter is thin. Mix all. Heat oil in a Kadhai. Make small pakoras with hand & drop It in hot oil. Fry till golden color in medium flame. Yummy evening snack kunukku ( pakoras) are ready within 10 minutes. பஞ்சு மாதிரி வெள்ளை குழிப்பணியாரம் செஞ்சிருக்கீங்களா? Soft ,spongy Kerala style vellai Paniyaram


 

#VellaiPaniyaram#VellaiKuzhiPaniyaram#KeralaStyleVellaiPaniyaram Ingredients: அரிசி/ Rice-2 cups அவல் / Poha/ flattened rice- 1 cup துருவிய தேங்காய் / Grated coconut-1/4 cup இளனீர் + சர்க்கரை 4 tbsps / coconut water +4 tbsps of sugar ( fermented for 8 hrs) in refrigerator - 2.5 cups உப்பு / Salt- 1.5 tsps எண்ணை / Oil - to make appam Method: Wash rice thoroughly thrice & soak it for 6 hrs & then drain the water. Make the batter with soaked rice, poha & grated coconut with coconut water. First, add 1.5 cups of coconut water & grind nicely. Then add 1/2 a cup & make a nice batter. Remaining coconut water we can add when we make kuzhi paniyaram as per consistency. Grind the batter, add salt, mix it nicely & ferment the same for 14 hrs. After 14 hrs batter is well fermented. Grease the kuzhi Pandiyaram pan with oil. Fill the batter to half only with a small spoon. Let it cook for 2 to 3 minutes. Then turn the same to the other side & cook in medium flame. Take out after 2 minutes. It is well cooked & white in colour. Serve hot with coconut chutney . Kerala style kuzhi Pandiyaram is ready now. Ingredients: பாசிப்பருப்பு / Split green lentils/ mung dal- 2 tbsps உளுத்தம்பருப்பு / Ulad dal/Split Black gram dal-2 tbsps மசூர் பருப்பு / Masoor dal/ Pink dal- 2 tbsps துவரம்பருப்பு / Tuvar dal/ pigeon dal- 2 tbsps கடலைப்பருப்பு / Bengal gram/ Chana dal-2 tbsps எண்ணை / Oil - 2 tsps கடுகு / Mustard- 1 tsp சீரகம் / Cumin/ Jeera- 1 tsp பச்சை மிளகாய் / Green chili-3 ( slit ) பெருங்காயம் / Asafetida- 1/4 tsp கருவேப்பிலை / Curry leaves- little வெங்காயம் / Onion ( medium sized) -2 தக்காளி / Tomato-2 ( medium sized) பூண்டு / Garlic - 4 ( cut ) இஞ்சி விழுது / Ginger paste- 1/2 tsp சீரகப்பொடி / Jeera powder- 1/2 tsp தனியா பொடி / Coriander powder-1 tsp கசூரி மேதி ( Dried fenugreek leaves) - 1 tsp கொத்தமல்லித்தழை / Coriander leaves- little மிளகாய் பொடி / Chili powder- 1/2 tsp உப்பு / Salt -1 tsp Method: Wash all lentils thrice & soak them for 15 minutes. After 15 minutes keep dal in a pressure cooker & cook the same for 3 to 4 whistles. After cooking cool the same & mash it nicely. Heat oil in kadhai. Add mustard, jeera, asafetida, green chili, garlic & ginger. Sauté them & then add nicely cut onion. Keep onions for 2 minutes till it becomes little soft. Then add finely cut tomatoes & mix. Fry them till tomatoes & onion becomes soft. Add 1 cup of water & cook the same with a lid. Add cumin, chili & coriander powder & mix. After boiling the same add mashed lentils. Add some more water as per consistency. Mix it. Boil the same for 2 min & switch off the stove. Add coriander leaves on top. Yummy Panchmel dal or Panchratna dal is ready to eat with Roti, paratha & Rice. Try this recipe & give your feedback on this.
