சோயாபன்னீர் வச்சு அசத்தலான சைட்டிஷ் இப்படி செய்யுங்க/How to make Matar Soya paneer Recipe/Peas Tofu


 

#peas #Tofu#peastofumasala#mattartofu#mattarsoyapaneer Ingredients: பட்டாணி / Frozen Peas- 3 cups சோயா பன்னீர் / Tofu - 450 gms வெங்காயம் / Onion - 2 தக்காளி / Tomato- 3 பச்சை மிளகாய் / Green chili- 6 முந்திரிப்பருப்பு / Cashews- 10 சீரகத்தூள் / Cumin powder- 1/2 tsp தனியாத்தூள் / Coriander powder- 1 tsp இஞ்சி / Ginger - 1 inch பூண்டு / Garlic- 5 கிராம்பு / Cloves-2 பிரிஞ்சி இலை / Bay leaf-1 மஞ்சள்தூள் / Turmeric powder- 1/2 tsp காஷ்மீரி மிளகாய்தூள் / kashmiri Chili powder- 1 tsp கரம் மசாலா / Garam masala- 1 tsp எண்ணை / Oil - 1 tsp+ 2 tbsps கசூரி இலை / Kasoori methi - 1/2 tsp கொத்மல்லி / Coriander leaves - to garnish உப்பு / Salt - to taste Method: Take soya paneer & wash it nicely. Remove the water by wiping it with a kitchen towel to remove extra water. Cut in small squares. Take a pan & grease it with a little oil. Place all soya paneer ( cut) in the pan. Add salt, turmeric, chili & cumin powder. Fry in medium flame till it gets roasted. Then keep the roasted soya paneer on a plate to cool. Heat oil in a pan. Add onions, tomatoes & cashews & fry a little. Take out that & make a paste in a mixer grinder after cooling. Add a little oil to a pan. Add the paste & sauté the same till the oil releases. Then add peas & sauté for 2 minutes. Add 1 cup of water & cook with a lid. Add coriander powder, chili powder & salt. Lastly, add tofu pieces & cook with a lid. Then add kasuri methi & garam masala . Garnish with coriander leaves on top. Our muttar tofu is ready to serve. #omapodi#omapodirecipe #sev #sevrecipe #ranjisflavours Ingredients: கடலை மாவு / Bengal gram flour- 3 cups அரிசி மாவு / Rice flour- 3 tbsps உப்பு / Salt - 1 tbsp மஞ்சள்தூள் / Turmeric powder- 1/2 tsp ஓம்ம் / Carom seeds- 1 tbsp பெருங்காயம் / Asafoetida- 1/2 tsp காச்சிய எண்ணை / Hot Oil - 3 tbsps மிளகாய் பொடி / Red chili powder- 1.5 tbsps Method: Soak carom seeds in hot water for 1 hr. After 1 hr take it in a mixer jar & grind. Extract the carom seed water & keep it aside. Sieve gram flour & take it in a bowl. Add rice flour to that & mix well. Then add salt, turmeric, chili, & asafoetida powder. Mix well & then add carom seed water . Mix it. Then add water little by little at a time & make a smooth dough to correct consistency. Let it rest for 5 minutes. Heat oil in a Kadhai. Add the dough in several machine after greasing with oil. Make several when the oil is hot. While frying keep the flame I medium & fry on both sides. #badam #badambarfi #almondbarfi#badamkatli#badam Ingredients: பாதாம் மாவு / Badam flour- 2 cups சர்க்கரை / Sugar - 1 cup ( if need can take 1.25 cups as per taste) தண்ணீர் / Water - 1/2 cup ஏலக்காய் பொடி / Cardamom powder- 1/2 tsp நெய் / Ghee - 3 tbsps Method: Take sugar in Kadhai & add water. Boil sugar syrup till we get a sticky consistency ( before 1 string consistency) keep flame in medium flame. Then add badam flour & mix well in medium flame without break. Add ghee in between & mix till we get a rolling consistency of the mixture. Take a small portion on a plate, cool & then see whether the mixture can be rolled easily. Then we can switch off the flame & mix till it gets cooled. Take parchment paper & grease the same with ghee. Add the mixture and roll nicely to get it cooled & becomes like a dough ( roti atta dough) Then spread the same with a rolling pin to the desired thickness. Keep silver foil on top if desired. This is optional. Then cut in the desired shape. Square or diagonal shape to make Katli. Store it in a box & serve. This is an easy way of making Badam Katli with Badam flour. #cheesetoast #corn#cheese #avocadotoast Ingredients: உதிர்த்த சோளம் / Corn - 3/4 cup சிவப்பு குடை மிளகாய் / Red capsicum- 1 பச்சை மிளகாய்/ Green chili-2 வெண்ணை / Butter- 1 tbsp மிளகு பொடி / Pepper powder- 1/2 tsp எலுமிச்சை ஜூஸ் / Lemon juice- 1/4 lemon juice பூண்டு பொடி / Garlic powder- 1/4 tsp அவகாடோ / Avocado - 1 மொஜரல்லா சீஸ் / Mozzarella cheese- 3 tbsps கொத்தமல்லி / Green coriander- 2 tbsps கோதுமை ப்ரட் /Wheat bread - 4 slices Method: Fine slice capsicum & green chili & keep it separate. Take butter in pan & sauté corn for 2 min & cook the same. Take out the peel of avocado & take the inner part & mash them in a bowl. Add cooled corn & capsicum to that & mix. Dry fry the same for 2 minutes. Clean & dry fry roasted chana dal in a pan. Make fine powder of poha & chana dal nicely in mixer . Mix well & add all ingredients ( salt, chili, turmeric, cumin,coriander & asafetida powder.) Mix well & add water little by little and make dough. Cover the same for 15 minutes. Rest it for 15 minutes. Grind half of the corn in mixer grinder to a paste. After 15 minutes add the corn paste to rava & add remaining corn kernels to it. Ingredients: முந்திரி / Cashews- 2 cups சர்க்கரை / Sugar- 1.5 cups நெய் / Ghee - 2 tsps தண்ணீர் / Water - 1/2 cup( to make syrup) ஏலக்காய் பொடி/ Cardamom powder- 1/2 tsp Method: Wipe cashews in a towel & dry in sun for 1/2 an hour. Grind in pulse mode in mixer grinder to get a powder in rava consistency. Sieve the same to get powder. ( can skip this process ) Take sugar in a pan & add water to make 1 string consistency in medium flame. Add cashew powder in syrup & stir nicely in low to medium flame till we get a ball consistency. Switch off the stove. Take out the pan from stove & mix it nicely to cool the same. Spread ghee in a butter paper evenly. Pour the mixture in butter paper & mix it nicely to get smooth batter as it is very hot. After getting a thick dough keep one more butter paper on top. Level the same with rolling pin to get a thin layer. Then take out the paper on top & fix the silver foil all over . ( can keep silver foil , as per liking)cut in diamond shape. Ingredients: அரிசி மாவு / Rice flour- 1.5 cups ரவை / Rava - 3/4 cup மைதா மாவு / Maida - 3/4 cup இஞ்சி / Ginger - 1 inch பச்சைமிளகாய் /Green chili- 6 to 7 கருவேப்பிலை / Curry leaves- little உப்பு / Salt - 1 tsp எண்ணை / Oil - 6 tbsps Separate oil to fry vada சிறிய் வெங்காயம் - Small onion- 10 ( sliced) தண்ணீர் / Water - 1 cup மிளகாய் பொடி /Red chili powder- 3/4 tsp If u want, can add cashews with this finely chopped Method: Mix rice flour, rava & maida with salt, onion, red chili powder, green chili, & curry leaves. Mix everything nicely. Then add hot oil & combine well. Make a dough with one cup of water with a tight consistency. Rest it for 6 to 7 minutes. Heat oil . Check the oil whether it is hot. Take a plastic sheet to make vada. Take small balls out of the dough & flatten it with palm. Edges of vada to be thin & even on all sides. Keep it ready . When the oil is hot slide the vadas in oil slowly. It should not be over crowded. Once the oil is hot Keep the flame in medium & fry all vadas. It will take 6 to 7 minutes to fry the vadas. Fry till we get golden color. Yummy, crispy maddur vadas are ready to serve. Can make coconut chutney as side dish for badaa. It is so crispy been the next day. பாதாம் பால் வச்சு ரவா பாயசம் செஞ்சு பாருங்க/Rava Payasam with Almond milk/Rava Kheer Recipe ( vegan)


 

#payasam #kheerrecipe #ravapayasam #soojikheer #suji Ingredients: ரவை / Rava- 1/2 cup பாதாம் பால் / Sweetened Badam milk- 1.5 cups ஏலக்காய் / Cardamom- 1/2 tsp குங்கும்ப்பூ / Saffron -3 to 4 strands சர்க்கரை / Sugar - 3/4 cup முந்தரி / Cashews- 6 to 7 உலர்ந்த திராட்சை / Raisins - 8 நெய் / Ghee - 3 to 4 tsps Take ghee & roast cashews & raisins and keep them separate. In the same ghee roast rava. (Those who are vegan, dry roast the rava , cashews & raisins in kadhai without ghee. ) After roasting rava nicely add 3.5 cups of hot water & cook rava in medium flame. Then add cardamom powder & saffron to that & mix. After cooking rava well switch off the stove. After cooling for 2 to 3 minutes add badam milk to that & mix well.  ஜவ்வரிசி / Sabudana- 1.5 cups

உப்பு / Salt- 1/2 tsp பச்சை மிளகாய் / Green chili- 4 சீரகம் / Cumin- 1tsp சீரகத்தூள் / Cumin powder- 1 tsp பெருங்காயம் / Asafetida- 1/2 tsp மிளகாய் பொடி / Red chili powder- 1/2 tsp கொத்மல்லித்தழை / Coriander leaves- 2 tbsps வறுத்த வேர்க்கடலை பொடி/ Roasted peanut powder - 3 tbsps மஞ்சள் தூள் / Turmeric powder- 1/2 tsp எண்ணை / Oil - to roast உருளைக்கழங்கு / potato- 2 ( boiled) Method: Wash sabudana & soak the same with water for 4 hrs. The level of water should be the level of sabudana. Grate the boiled potatoes Add salt, asafetida,salt, green chili, coriander leaves, turmeric, chili powder, peanuts powder & grated potato to sabudana & mix well. Press it well to Mash the same. Take a plastic or banana leaf. Grease it with oil. Take a big ball of sabudana dough & flatten it in round shape. Make a hole in the middle. Heat tawa & place the adai by turning on the other side. Pour oil all over & roast it in medium flame with a lid. Turn to the other side & roast. Our sabudana adai is ready. Take 1 cup of curd. Add salt, roasted cumin powder & chili powder & mix. Ingredients: பன்னீர் / Paneer - 500 gms மிளகாய் தூள் / Chili powder- 1 tbsp குடை மிளகாய் /Green & yellow capsicum- 1/2 + 1/2 வெங்காயம் / Onion- 1 இஞ்சி பூண்டு விழுது / Ginger garlic paste - 1 tbsp உப்பு / salt- to taste பச்சை மிளகாய் / Green chili- 4( slit) சோள மாவு / Corn flour- 3 tbsps மிளகு பொடி / pepper powder - 1/2 tsp சோயா சாஸ் / Soya sauce- 1.5 tbsps for slurry + 3 tbsps to marinate மிளகாய் சாஸ் / Red chili sauce- 1.5 tbsps தக்காளி கெச்சப் / Tomato ketchup- 2 tbsps வெங்காயத்தாள் / Spring onions- 3 tbsps ( finely chopped) எண்ணை / Oil - 4 tbsps Method: Wash & cut paneer in big cubes. Mix chili powder in water. Add salt & add the chili paste to paneer & mix. Add corn flour & mix well. Keep it marinated for 15 minutes. Heat oil in pan. After 15 minutes add the paneer pieces in oil & roast it till we get golden color. Keep it separately. In the same oil add ginger garlic paste & sauté. Add green chili & onions. பூப்போல மிருதுவான இடியாப்பம் செய்முறை/Rice Idiyappam recipe/How to make rice idiyappam at home

Ingredients: இடியாப்பம் மாவு / Rice flour - 1.5 cups எண்ணை or நெய் / oil or ghee- 1 tbsp உப்பு / Salt - 1/2 tsp கொதித்த தண்ணீர் / Boiled hot water- required amount of water to make the dough Preparation of coconut milk: துருவிய தேங்காய் / Grated coconut- 1 Method: Take grated coconut in mixer by adding 1/2 glass of water. Grind well & take out the coconut milk by straining the same. Again do the same to take out 2 nd milk. Add both & keep it aside. Coconut milk is ready . Method for making idiyappam: Boil water nicely. Take the rice flour ina bowl & add boiled water slowly & mix the flour thoroughly without lumps. Keep it closed for 10 minutes. After 10 minutes take out the dough & knead nicely to make balls. Keep the dough un Murukku press by keeping the small hole plate in that. Squeeze it nicely in idly plate in round shape after applying little oil in plates. Steam water in cooker. Keep idly plates in cooker & steam it for 10 minutes. After cooling take out the idiappams & serve with coconut milk & jaggery. I have made curry with sprouts. Vegetable stew or korma will also be the best combination for idiyappam. Ingredients: தேங்காய் / Coconut- 1 வெல்லம் / jaggery- 1 glass ( for 1 .5 cups of coconut milk) ஏலக்காய் / Cardamom- 1/2 tsp Method: Take out the brown colour skin of coconut & grate the same. Add little warm water & grind the same in blender. Take out the milk by strainer. Again add the coconut add water & grind. Strain the same to take the 2 nd milk. Combine both milk. Add 1 tbsp of wheat flour & mix well & keep it ready . Add cardamom powder & mix well. Take jaggery in a vessel & add 1/2 cup of water & let it boil nicely. By keeping the flame in low slowly add & mix well. Let it be in low flame for 3 to 4 minutes. After some time the froth will settle on top. It should not be over boiled. Once the froth settles we can switch off the flame. Serve hot or cool . Ingredients: தினை / Foxtail millet- 2 cups முளைக்கட்டய பச்சைப்பயறு/ green sprouts- 1 cup உப்பு / Salt - to taste பெருங்காயம் / Asafetida- 1/4 tsp பச்சை மிளகாய் / Green chili- 6 இஞ்சி / Ginger- 1 inch சீரகம் / Jeera - 1 tsp Method: Wash foxtail millet 3 times & soak in freshwater for 4 hrs. Wash & soak green gram overnight. Drain the water in the morning & cover it with tight plate & let it sprout for 6 hrs. Then sprouts come. After 4 hrs grind millet in blender to a paste & so also green sprouts. Mix both nicely with salt. Grind green chili, ginger & cumin into a paste& mix in the batter. Add coriander leaves. Now the batter is ready to make dosa. After 1/2?an hour of resting the batter can make dosa. Heat tava & make dosa & add oil all over. Flip to the other side also & our foxtail millet dosa will be ready to eat with tasty coconut chutney or any chutney of your choice. Add 3 to 4 tbsps of rice flour to the batter if we want a crispy millet dosa . கடலைப்பருப்பு / Bengal gram- 1 tbsp உளுத்தம்பருப்பு /ulad dal - 1 tsp சிவப்பு மளகாய் / Red chili - 3 கருவேப்பிலை / curry leaves வெங்காயம் / Onion - 1 தக்காளி / Tomatoes -2 எண்ணை / Oil - 2 tsps கடுகு / Mustard- 1 tsp for tadka Method of making chutney: Fry dals, curry leaves, red chili, onion & tomato in oil. Cool the same & make chutney by adding salt. Prepare tadka with mustard & curry leaves & pour on top of chutney Method for dosa batter: Take rava, rice flour, salt, curry leaves, coriander leaves, carrots, onion & green chili in a bowl. Add 4 cups of water first & mix all well. Then add 4 cups of water & mix well. Rest the same for 45 minutes. Heat dosa tawa & make dosa by stirring the batter from top to bottom nicely & then pour batter all around. Pour oil on all sides & roast it in medium flame. Flip to the other side & add ghee on top of it to make more healthy. Then peel the skin & take out the fruit inside. Make it a fine paste in blender. If the pulp is 1 cup , take 2 cups of sugar powder & mix well without any lumps. Spread the pulp in a big plate in thin layer. Keep it in different plates & dry in hot sun. 1 st day , 2nd day scratch the fruit with scrapper so as to dry it nicely. The same way do in all plates. Dry in hot sun for 5 days. For this recipe hot sun is required. 6 th day it is well dried. Take it in blender & make powder. Our mango juice premix will be ready. Store it in airtight container. #vathakulambu #வத்தல்குழம்பு#kuzhamburecipesintamil #onion Ingredients: சின்ன வெங்காயம் / Small onion- 150 gms ( chopped finely) புளி / Tamarind- lemon sized soaked in water ( take the syrup twice) உப்பு / Salt - 1 tsp சாம்பார் பொடி / Sambhar powder- 2 tsps நல்லெண்ணை / Sesame oil - 4 tbsps கடுகு / Mustard seeds- 1 tsp வெந்தயம் / Fenugreek- 1/2 tsp சிவப்பு மிளகாய் / Red chili- 3 பெருங்காயம் / Asafetida- 1/2 tsp கருவேப்பிலை / Curry leaves- little மஞ்சள் தூள் / Turmeric powder- 1/2 tsp வெல்லம் / Jaggery - 1 tbsp Method: Heat oil in Kadhai. Add mustard, fenugreek , red chili, Asafetida & curry leaves. Then add onion & sauté nicely till it becomes soft. Then add sambar powder & fry. Then add tamarind pulp & boil in medium flame. Add salt. After it gets into half of the quantity our vatha kuzhambu will be ready. Lastly add jaggery & let it boil for 3 minutes. Vatha kuzhambu is ready now . Can take with hot rice & roasted papad.
