#kaju #kajukatli #முந்திரி #cashewbarfi #cashewrecipe Ingredients: முந்திரி / Cashews- 2 cups சர்க்கரை / Sugar- 1.5 cups நெய் / Ghee - 2 tsps தண்ணீர் / Water - 1/2 cup( to make syrup) ஏலக்காய் பொடி/ Cardamom powder- 1/2 tsp Method: Wipe cashews in a towel & dry in sun for 1/2 an hour. Grind in pulse mode in mixer grinder to get a powder in rava consistency. Sieve the same to get powder. ( can skip this process ) Take sugar in a pan & add water to make 1 string consistency in medium flame. Add cashew powder in syrup & stir nicely in low to medium flame till we get a ball consistency. Switch off the stove. Take out the pan from stove & mix it nicely to cool the same. Spread ghee in a butter paper evenly. Pour the mixture in butter paper & mix it nicely to get smooth batter as it is very hot. After getting a thick dough keep one more butter paper on top. Level the same with rolling pin to get a thin layer. Then take out the paper on top & fix the silver foil all over . ( can keep silver foil , as per liking)cut in diamond shape. Delicious kaju katli is ready to serve. We can make it in very low cost when compared with a store bought sweet. Try definitely for any function or festivals.
