#minestronesoup#minestrone #soup#italianfood Ingredients: ஆலிவ் எண்ணை / Olive oil - 3 tbsps வெங்காயம் / Onion- 1 பூண்டு / Garlic- 2 tsps ( finely chopped) சுக்கீனி / Zucchini - 2 ( chopped) காரட் / Carrots -2 ( grated) தக்காளி / Tomatoes- 2 ( big size) finely chopped பாலக் இலை / Palak leaves-25 ( chopped) உப்பு / Salt - 2 tsps மிளகு பொடி / Pepper powder- 2 tsps சுருள் பாஸ்தா / Fussily pasta - 1/2 cup இட்டாலியன் ஹர்ப் / Italian herbs - 2 tsps தண்ணீர் / Water - 1.5 litres Method: Take oil in a pan. Add garlic & sauté. Then add onion. Once it becomes translucent , add zucchini, carrots & tomatoes. Add salt & pepper powder.Add water. Let it boil for 2 minutes. Then add palak leaves & pasta. Cover & cook for 3 to 4 minutes. We need not cook pasta separately as we r cooking the soup in water. Instead of water we can buy vegetable broth from store & use. Even if pasta is cooked 60% it is good. If we cover & keep it for sometime padta will automatically cook. Our yummy healthy Minestrone soup will be ready to serve with hot garlic bread. This is complete one pot meal & can have it for lunch or dinner.
