Arachu vitta Sambar in Tamil /Freshly ground masala Sambhar/ அரைத்து விட்ட சாம்பார்



Ingredients: வெங்காயம் / onion - 2 காரட் / carrot- 1 புளி / Tamarind - medium lemon size உப்பு / Salt - To taste மஞ்சள் பொடி / Turmeric powder- 1 tsp பெருங்காயம்/ Asafoetida-1/2 tsp கடலைப்பருப்பு / Bengalgram- 1 1/2 tsp கொத்தமல்லிவிரை/ Coriander seeds- 3 tbsps மிளகு/ Pepper- 1/2 tsp வெந்தயம் / Methi- 1/2 tsp சிவப்பு மிளகாய் / red chilli- 10 தேங்காய் / grated Coconut- 🥥1/2 எண்ணை / oil - to fry masalas கொத்தமல்லி/ coriander leaves- little கருவேப்பிலை/ Curry leaves- little துவரம்பருப்பு / pigeon peas- 2 cups cooked & mashed Method: Fry Bengalgram, coriander,red chilli, pepper & Methi in 2 tsp of oil and keep aside to cool. After it gets cooled make a paste out of that in blender. Heat 2 tsp of oil in a pan and add onion and carrot . Sauté till it becomes soft. Add tamarind water, asafoetida, salt and curry leaves to that. Let it boil for 5 min till the onion & carrot cooks completely . Add the cooked dal & the masala paste & little water to that and let it boil for 5 more minutes. Heat oil in tadka pan. Add mustard & red chilli. Pour that on top of Sambhar and garnish with Coriander leaves. Our freshly ground masala Sambhar is ready to serve Enjoy Ranjis flavours! This Sambhar is very good with medu vada, masala dosa etc.
