Stuffed Brinjal Fry / அடைத்த கத்திரிக்காய் ப்ரை / Stuffed eggplant fry



Ingredients: கத்திரிக்காய் / Brinjal - 300 gms எண்ணை / oil - to roast கடுகு / Mustard - 1 tsp வறுத்த கடலை பொடி / Roasted groundnut powder -2 tsp கருவேப்பிலை/ Curry leaves- little For Masala powder: கடலைப்பருப்பு / Bengalgram- 2 tsp கொத்தமல்லி விரை/ Coriander seeds- 4 tsp எள் / Sesame- 1 tsp மிளகு / Pepper- 1/2 tsp வெந்தயம் / Fenugreek-1/2 tsp சிவப்பு மிளகாய் / Red chilli- 6 பெருங்காயம்/ Asafoetida- 1/2 tsp Method: Take Brinjals & cut into halves on both the sides and keep aside. Roast all ingredients of masala in 2 tsp of oil till golden brown. Cool and make powder in a blender. Mix ground nut powder & salt with that. Fill this powder in all brinjals on either slits. Heat 4 tbsps of oil in a pan. Add Rai and turmeric powder. Add all the brinjals one by one slowly and add little salt and one tsp of water. Cover with a water in a plate. Frequently change the water in the plate with cold water. Turn all the brinjals slowly so that the masalas does not come out. Roast and fry all nicely in a medium flame.
