Ingredients:
புடலங்காய் / Snake gourd - 1/2 kg
தேங்காய் / Grated coconut- 1/2 cup
கடுகு/ mustard- 1/2 tsp
உளுத்தம்பருப்பு / Ulad dal- 1/2 tsp
சீரகம் / cumin seeds - 1/2 tsp
பெருங்காயம் / Asafoetida- 1/4 tsp
கருவேப்பிலை / Curry leaves- little
உப்பு / Salt - to taste
சிகப்பு மிளகாய் / Red chilli- 2
Method:
Wash & cut snake gourd in to thin slices. Heat 2 tsp of oil in a Kadhai. Add mustard, ulad dal, Jeera, asafoetida & curry leaves. Once the Ulad dal becomes little brown add snake gourd to that. Add salt and mix.
Cover with a lid to cook for 2 minutes. Then open the lid and fry snake gourd till all water at the bottom are absorbed. Then add grated coconut to that and mix nicely. Our snake gourd poriyal / subji is ready . This very well goes with rice & very healthy green vegetable.
