Ingredients:
மாங்காய் துண்டுகள்/ Cut Raw Mango pieces- 2 kg
உப்பு / Salt - 3/4 (measure of the cup we measure mango pieces)
கடுகு பொடி / Mustard powder- 3/4
மிளகாய் பொடி / Red chilli powder- 3/4
நல்லெண்ணை/ Gingely oil- 1 1/2 measure
(All Mango pieces to be divided in 5 parts . Measure with any vessel so that it becomes 5 part)In that 3/4 measure to be taken in masala
கருப்பு கொத்துக்கடலை/ Black Chana- 1/4 cup
வெந்தயம் / Fenugreek- 1/4 cup
பெருங்காயம்/ Asafoetida- 2 tsp
The following are optional:
சோம்பு / Fennel seeds- 1/4 cup
கருஞ்சீரகம்/ Kalonji- 1/4 cup
மஞ்சள்பொடி/ Turmeric powder- 2 tbsp
Method:
Wash & cut raw mangoes with seed. Take out the small cut seeds & this skin on top of the seed. Wipe it with a towel nicely.
Take oil in a big vessel. Add salt, turmeric powder, mustard powder, chilli powder,
Black Chana, Methi , asafoetida and mix nicely. ( If we like the taste of fennel seeds & Black Jeera we can add. This is completely optional)
Then add all mango pieces and mix thoroughly. Keep it closed with a tight lid . It should be mixed daily in the morning for 6 days. After that see to it that the oil is on top of pickle. If it is less we can add more oil so that it is well inside the oil. Then only pickle will last for long time.
Preserve the pickle in a clean dry bottle.
For daily purpose we can keep it in a separate container and use. This can be preserved in room temperature. No need to keep in refrigerator. Our Aavakkai mango pickle is ready to serve.
