Ingredients:
Baby உருளைக்கிழங்கு/ Baby potato 🥔- 1/2 kg
தயிர் / Curd - 2 tbsp
தக்காளி / Tomato 🍅- 2 ( cut in small pieces)
கடலை மாவு / Bengalgram flour- 2 tsp
முந்திரி / Cashew ( powdered)-7
பிரிஞ்சி இலை/ Brinji leaves- 1
பட்டை/ Cinnamon- 1 small piece
கிராம்பு / Cloves - 2 to 3
சீரகம் / Cumin - 1/2 tsp
பச்சை மிளகாய் / Green chilli-3
மஞ்சள் பொடி / Turmeric powder- 1/2 tsp
மிளகாய் பொடி / Red chilli powder- 1 tsp
கரம் மசாலா/ Garam masala- 1/2 tsp
சீரகம்பொடி/ Cumin powder- 1 tsp
கொத்தமல்லிவிரை பொடி / Coriander powder- 1 tsp
சோம்பு பொடி / Fennel seed powder- 1 tsp
கசூரி மேத்தி( வெந்தய இலை பொடி ) / Kasuri methi- 1 tsp
Method:
Boil baby potatoes & peel the skin. Poke all the potatoes with a fork on all sides & fry till we get golden brown color and take out. keep aside. In the same oil .
Add cumin( Jeera), Cinnamon,
Cloves ( கிராம்பு), Bengalgram flour and fry in that oil nicely till u get aroma. Add fennel powder, turmeric & chili powder to that and fry. Then Add tomato & salt. Sauté for 2 minutes till becomes soft.
Then add thick curd and sauté quickly so that the curd doesn’t curdle. Add Kasuri Methi and sauté. We get a smooth paste like out of that. Then add 1 to 1 1/2 cups of water & boil.
After boiling the same for 2 minutes add boiled potatoes and boil with a lid for another 5 minutes. Our excellent Dum aloo is ready to serve and garnish with Coriander leaves on top.
Note:
1.we are poking the potato so that all masalas goes welll inside that and good taste will be there.
2. We are frying the potatoes so that it doesn’t get mashed while boiling. If we want we can mash 2 to 3 potatoes
