Brinjal chutney/ Roasted Brinjal chutney/ சுட்ட கத்திரிக்காய் துவையல்-தொகையல்/Egg plant chutney


Ingredients: பெரிய கத்திரிக்காய் / Big Brinjal - 2 உளுத்தம்பருப்பு / Black gram split lentil / ulad dal - 3 tsp பெருங்காயம் / Asafoetida- 1/4 tsp சிவப்பு மிளகாய் / Red chilli- 3 உப்பு/ Salt - To taste கருவேப்பிலை / Curry Leaves- little எண்ணை / oil - 1 tsp to fry chilli, asafoetida & ulad dal Method: Coat oil on Brinjal and roast them in medium flame in stove . When it cools take out the skin of Brinjal and Keep them aside. Fry ulad dal, asafoetida & red chilli in oil till dal becomes brown in color. Keep aside and let it cool. Grind the fried ingredients first in mixer jar and then add roasted Brinjal. It should not be a paste, just one turn to mix all ingredients. Add curry leaves on top .That’s all. Our Brinjal chutney is ready to serve with hot rice and ghee. It is very tasty.
