Ranjis Flavours: பரங்கிக்காய் கறி/ Red pumpkin 🎃 curry/ Lal kaddu subji


















Red Pumpkin is known in many parts of he India in by different names. In Northern India it is known as Lal Kadhu, Lal Kumla, Red Pumpkin or yellow pumpkin. In Tamil it is Parangikai. In Telugu it is Gummadi kai. The taste of this vegetable also differ because water and soil properties. 

The vegetable can prepared in many ways. 

The one I have shared with you is Maharashtrian recipe. 

This food is rich in Dietary fibre, low in saturated Fat, low cholesterol and sodium. This is good source of Vitamin E, Vitamin B6, Vitamin C, Thiamin,  Niacin. This is also good source of minerals - iron, Magnesium, Potassium, Riboflavin

Ingredients: பரங்கிக்காய் /Red pumpkin 🎃 1/2 kg(cut in to big pieces with skin) கடலைப்பொடி/ groundnut powder- 1/4 cup கடுகு / Mustard seeds -1tsp சீரகம் / cumin seeds -1tsp இஞ்சி/Ginger grated -1tsp எள் / Sesame -1tsp பச்சை மிளகாய் / Green chili-6 தேங்காய் /grated Coconut -2tsp கொத்தமல்லி / coriander leaves - 1 tsp உப்பு / Salt - To taste மஞ்சள்பொடி / Turmeric powder -1 tsp மிளகாய்பொடி / chili 🌶 powder -1tsp எண்ணை /Oil -4tsp எலுமிச்சம்பழசாறு / lemon juice. - 1 tsp Method: Heat oil in pan.Add mustard seeds. After it pops add cumin seeds,green chili,ginger,sesame,and add pumpkin . Add salt,turmeric powder,chili powder.Mix all ingredients nicely and cover the pan with lid for pumpkin to cook.After 5 minutes open the lid and add groundnut powder on top and mix nicely.Add lemon juice and mix .Add grated coconut and coriander leaves on top and our pumpkin curry is ready to eat.
