Using saffron gives more coolness to the body & give royal flavour to the recipe. So try this & enjoy! Ingredients: மாங்காய் / Raw mango- 3/4 kg வெல்லம் / Jaggery- 1 cup ஏலக்காய் பொடி/ Cardamom powder- 1/2 tsp குங்கும்ப்பூ / Saffron- 15 strands ( soaked in water) Method: Wash & peel the skin of raw mango. Cut into pieces. Heat water in a vessel. When it is hot add mango pieces in that & keep the flame in medium. Let it boil for 3 minutes. After 3 minutes, check the mango piece to see whether it is cooked or not. Then add jaggery to that & let it boil. After 3 minutes, when all the jaggery is dissolved, add cardamom powder & saffron to that. Switch off the stove & let the mangoes cool . After cooling, take the mango pieces in a mixer & grind it to a fine paste. Take the mango paste in a bowl . Beforehand, clean a glass bottle & dry it in the sun. Fill up the mango paste in bottles & store it in the refrigerator for 2 months. At the time of making juice, take the paste in glasses. Add water & ice cubes to that. Add saffron strands on top and serve it chilled. This juice is so healthy in the summer season when it is too hot. Saffron gives a super aroma & cooling for body.
