#thokku #thokkurecipe #mangopickle #mangai #picklerecipe #ranjisflavours Ingredients: மாங்காய் / Raw mango- 3 மாங்காய் இஞ்சி / Mango ginger/ Aam adarak- 150 gms பச்சைமிளகாய் / Green chili- 100 gms To make dry masala : கருஞ்சீரகம் / Nigella seeds- 1/2 tsp கடுகு / Mustard - 1 tbsp வெந்தயம் / Fengreek seeds - 1/2 tsp கடுகு / mustard seeds - 1/2 tsp ( tadka) நல்லெண்ணை / sesame Oil - 1/2 cup உப்பு / Salt - 1.5 tsps பெருங்காயம் / Asafetida -1/2 tsp மிளகாய்தூள் / Chili powder- 1.5 tsps மஞ்சள்தூள் / Turmeric powder- 1 tsp Method: Wash & clean raw mango, green chili & mango ginger. Dry the same with a towel. Peel the skin in mango & ginger. Cut ginger in pieces & grate raw mango in grater. Dry roast mustard, Methi & nigella seeds. Then make powder out of that. Take green chili & mango ginger in a mixer jar & grind . Mix with grated mango. Heat oil in kadhai. Add mustard & Asafetida. When Asafetida roasted add the grated mixture to that. Add salt & turmeric powder. Keep the flame in low to medium & sauté it. Mix it well frequently so that it doesn’t stick to the bottom of the pan. Then add the masala powder, chili powder & keep sautéing for another 10 minutes. Totally it will take 20 minutes to prepare. Cool the same & store it in airtight glass containers. Can keep in refrigerator for longer shelf life.
