கொத்தமல்லித்தழை / Coriander- 3 tbsps வெந்தயக்கீரை /Fenugreek leaves- 1 bunch( cut) இஞ்சி / Ginger- 1 inch ( cut in very small pieces) பூண்டு / Garlic- 6 to 7 ( cut in very small pieces) அரிசி மாவு / Rice flour- 1tbsp கடலை மாவு / Bengal gram flour- 2tbsps மைதா / Maida - 1 tbsp Method: Wash & cut methi leaves Wash & soak Bengal gram & mung dal for 3 hrs After 3 hrs drain water & take dals in mixer jar. Keep 1/2 the portion of mung dal separately in a cup. Remaing mung dal grind with Bengal gram . Add red chili, salt, asafetida & curry leaves to dal. Grind dal coarsely. Keep it in a bowl. Add mung dal which we kept separately, onion, methi leaves, coriander, maida, rice flour Bengal gram flour & saunf to the dal mixture & mix thoroughly with hand to make a batter. Heat oil in kadhai. Take small balls of the batter in hand & make round shaped vada in a plastic or aluminum sheet. When the oil is hot slowly put vadas in oil & fry till golden color & crispy Serve all vadas with tomato ketchup or green chutney. #ஜவ்வரிசி #வடை #sabudanavade #sabudanarecipe #sabudana #sago #ranjisflavours Ingredients: ஜவ்வரிசி / Sabudana/ Sago- 1.5 cups வேக வைத்த உருளைக்கிழங்கு / Boiled potatoes-2 வறுத்த வேர்க்கடலை பொடி / Roasted peanut powder- 4 tbsps பச்சை மிளகாய் / Green chili-2 கொத்தமல்லி தழை / Coriander leaves- little உப்பு / Salt - to taste மிளகாய் பொடி / Chili powder- 1/2 tsp பெருங்காயத்தூள் / asafetida powder - 1/4 tsp எண்ணை / Oil - to toast in appam pan Method: Roast Sabudana in dry pan for 5 minutes till it gets crispy in medium flame. Keep it in a plate to cool. Boil potatoes & grate in a grater. Dry roast peanuts & make coarse powder. After cooling grind Sabudhana in mixer to powder. Add grated potatoes, salt, peanut powder, green chili, asafetida & coriander leaves & mix well. Then add water little by little & make a dough. It should not be too tight nor watery. Keep it aside for 15 minutes. After that take dough & make balls as per requirement in size. Heat appam pan & grease with oil. Keep all the balls & roast in medium flame with a lid. After some time flip to all sides to get roasted nicely. Make all balls in the same way to get it roasted. Serve the same with green chutney or tomato ketchup as snack or for breakfast. Cool the same & remove the outer skin by rubbing it in a towel. Fry sesame roll it pops & gets roasted nicely in medium flame. Cool the same. Grind peanuts & jaggery in mixer in whipper mode with cardamom. Grind sesame also in whipper mode & mix all nicely without any lumps. Make laddoos with the mixture in desired size. Healthy tasty sesame laddoos are ready for sankranti. #வெந்தயக்கீரைமசாலா#methimasala #methi #masala #sidedish Ingredients: வெந்தயக்கீரை / Fenugreek leaves- 300 gms பொட்டுக்கடலை / Roasted gram - 2 tbsps வேர்க்கடலை / Peanuts- 2 tbsps கடலை மாவு / Gram flour- 1 tbsp எண்ணை / Oil -3 tbsps நெய் / Ghee - 1 tbsp சீரகம் / Cumin - 1 tsp பூண்டு / Garlic - 16 pods வெங்காயம் / Onion - 2 தக்காளி / Tomato - 2 சீரகத்தூள் / Cumin powder- 1 tsp கொத்தமல்லி விரை பொடி / Coriander powder- 1.5 tsps மிளகாய்தூள் / Red chili powder-1 tsp காஷ்மீரி மிளகாய் தூள் / Kashmiri chili powder- 1 tsp கரம் மசாலா / Garam masala- 1 tsp மாங்காய் தூள் / Dry mango powder- 1/2 tsp உப்பு / Salt - to taste கொத்மல்லி தழை / Coriander leaves- little பச்சை மிளகாய் /Green chili- 2 ( slit) Method: Wash , Clean & cut methi leaves. Grind roasted gram, peanuts in a mixer & addgram flour to that. Take it in a bowl & add water to that & mix well without any lumps. Add ghee & garlic in a kadhai & sauté . Then add methi leaves to that & cook for 2 minutes. Keep it in a separate bowl. Then add oil in kadhai & add Jeera & Green chili. Then add finely chopped garlic and sauté till it becomes brown. Then add onion & tomato. Cook well with little salt. Then add all the masalas and mix well. Add the flour paste and cook again. Add water and cook well. After 3 minutes of cooking with a lid, add the fenugreek leaves and mix well. Boil for 2 minutes, and lastly, add Garam masala and coriander leaves. Our methi masala is ready to serve with Roti, paratha, puri, folks, and rice.
