#vada #thavalavadai#vadairecipes #snacksrecipe #ranjisflavours#தவலவடை Ingredients: அரிசி/Rice- 1/2 cup துவரம்பருப்பு/ Toor dal- 1/4 cup உளுத்தம்பருப்பு/ Ulad dal- 1/4 cup கடலை பருப்பு/ Bengal gram- 1/4 cup பாசிப்பருப்பு / Mung dal - 1/4 cup சிவப்பு மிளகாய் /Red chili- 3 to 4 இஞ்சி/ Ginger - 1 inch உப்பு / Salt - 1 tsp கருவேப்பிலை/ Curry leaves- little பெருங்காயம்/ Asafetida- 1/2 tsp கடுகு / mustard - 1 tsp மஞ்சள்தூள்/ Turmeric powder- 1/2 tsp தேங்காய் துண்டுகள்/ Coconut pieces - 1/2 coconut 🥥 Methods: Wash twice rice, dals nicely & soak it for 2 hrs with red chili. Wash mung dal also & soak separately for 2 hrs. After 2 hrs add ginger , rice & other dals in mixer grinder coarsely without adding water. Drain water from mung dal & mix with ground coarse batter. Add curry leaves , coconut & mix nicely. Heat oil in tadka pan. Add mustard & Asafetida. Pour that in a mixer. Mix well. Make small vadas with hand & keep it in cotton cloth so that water comes out if any before frying. Heat oil in kadhai . Slide all vadas slowly in oil one by one. Fry them till golden in color. Turn to the other side till it becomes crispy. Our thavalai vada is ready to serve with tomato ketchup or coconut chutney.

Ingredients: அவல் / Poha - 1 cup தயிர் / Curd - 1/2 cup ரவை / Rava - 1/3 cup எண்ணை / Oil - 3 tsps கடுகு / Mustard - 1/2 tsp சீரகம் / Jeera - 1/2 tsp பச்சைமிளகாய்/ Green chili- 2 ( slit) சிவப்பு மிளகாய்/ Red chili- 1 கருவேப்பிலை/ Curry leaves- little கொத்தமல்லி/ Coriander leaves- little எள் / Sesame- 1 tsp மஞ்சள்தூள்/ Turmeric powder- 1/2 tsp மிளகாய் தூள்/ red chili powder- 1/4 tsp Method: Clean Poha with a towel & take it in a bowl. Add curd & Rava . Mix well & rest it for 10 minutes. Add salt, coriander leaves & cumin powder. Take small balls & flatten the same. Make all dough like this. Keep it in perforated plate to steam. Heat water in kadhai & keep stand on it. Lee the plate for steaming for 10 to 15 minutes. After 15 minutes take out the same & cool. Heat oil in kadhai for tadka. Add mustard, Jeera, sesame, green & red chili, turmeric, chili powder & curry leaves. Add cooked Poha bites & mix well . Keep it covered for 2 minutes. Our Poha bites is ready to serve. Add coriander leaves on top. Serve with tomato sauce or green chutney. This is the best lunchbox recipe. Ingredients: நெல்லிக்காய்/ Gooseberry- 300 gms கடலை எண்ணை/ Peanut oil- 5 tsps கடுகு / Mustard - 1/2 tsp வெந்தயம் / Fenugreek- 1/2 tsp பச்சை மிளகாய்/ Green chili- 6 சிவப்பு மிளகாய் / Red chili- 6 உப்பு / salt - 1 tsp கருவேப்பிலை / Curry leaves- little பெருங்காயம்/ Asafetida- 1/2 tsp For tempering: உளுத்தம்பருப்பு/ Ulad dal - 1/2 tsp கடலைப்பருப்பு/ Bengal gram - 1/2 tsp சீரகம் / Cumin - 1/2 tsp கடுகு / mustard - 1/2 tsp கருவேப்பிலை/ curry leaves- little சிவப்பு மிளகாய் / Red chili- 1 நல்லெண்ணை / Sesame oil - 4 tbsps பூண்டு / Gatlic pods - 10 ( optional) Method: Wash & clean gooseberries. Wipe to make it dry. Take out the seed & cut it in pieces. Heat oil in kadhai. Add mustard, fenugreek, green chilli & red chillies. Fry it & then add cut gooseberries to it. Add a little salt. Fry them in a medium flame till they are soft. Cool the same & grind it in a mixer jar to a coarse paste after adding a little water to that. For tadka add sesame oil in a kadai. Add mustard, chana dal, Ulad dal, Jeera, garlic pods & red chilli. Add the ground paste to that and sauté it for 5 minutes. Then our Spicy Gooseberry spicy chutney in Andhra style is ready to serve with hot rice & ghee. Can have it with roti & paratha too. Ingredients: அரிசி மாவு / Rice flour- 1.5 cups தண்ணீர் / Water - 1/2 cup + 3 tbsps கடலைப்பருப்பு / Bengal gram - 1/2 cup உப்பு / Salt - 1/2 tsp இஞ்சி/ Ginger- 1/2 inch பச்சை மிளகாய்/ Green chili- 5 சிகப்பு மிளகாய் / Red chili- 1 சீரகம் / Jeera - 1 tsp பெருங்காயம்/ Asafetida- 1/4 tsp மிளகு பொடி / Pepper powder - 1/4 tsp கருவேப்பிலை/ Curry leaves- little Tadka: கடுகு / Mustard- 1/2 tsp சீரகம் / Jeera - 1/2 tsp உளுத்தம்பருப்பு/ Ulad dal - 1/2 tsp பெருங்காயம்/ Asafetida-1/4 tsp எள் / Sesame- 1.5 tsps கொத்தமல்லித்தழை/ Coriander leaves- little மஞ்சள்தூள்/ Turmeric powder- 1/4 tsp Method: Wash & soak Bengal gram for 8 hrs. Drain the water fully & add in mixer jar. Add salt, green & red chili, ginger & pepper powder. Grind to a coarse batter without adding water in pulse mode. Now the dal batter is ready Boil water & add in the rice flour & make a nice smooth dough. Cover it for 15 minutes. Cool the same & take equal amount of rice balls. Flatten the same by applying little oil on palm . Fill the dal mixture on one side & cover from other side. Need not close fully. Prepare all faras. Take perforated plate & place banana leaves on top. Place all rice faras on that. Heat water in kadai with stand. Place the faras on that & steam it for 10 to 15 minutes. After 15 minutes take out faras & cool. Heat oil in kadai for tadka. Add mustard, Jeera, Ulad dal, Asafetida, sesame, turmeric powder & curry leaves. After spluttering add faras in that & mix well to coat all tadka. Keep it closed for 1 min. Add coriander leaves on top & serve hot. Yummy, easy rice faras are ready to eat.

Ingredients: ரவை / Rava - 2 cups சர்க்கரை / Sugar - 1 cup பாதாம் பொளடர் / Badam powder - 1/2 cup ( instead of badam powder can add dry coconut powder) நெய் / Ghee - 1/2 cup ஏலக்காய் பொடி / Cardamom powder- 8 ( powdered) முந்திரி / Cashews - 10 திராட்சை / Raisins - 10 Method: Add ghee in a kadhai. Add cashews & fry till golden brown & then add raisins to puff. Fry them & keep it separately. In the same kadhai add more ghee & roast Rava in low flame for 10 minutes. After 5 minutes of roasting add badam powder also & fry till we get a roasted nice smell. Switch off the stove. Then add sugar powder, cardamom powder & mix well . Cover it & keep it for 10 minutes. After 10 minutes add Rava in a mixer grinder & grind well in batches. Mix everything well. Make laddoo with small portion by keeping cashew & raisin while making. Make all laddoos in the same way & enjoy . Ingredients: உளுத்தம்பருப்பு/ Ulad dal- 1/2 cup அரிசி மாவு / Rice flour- 1.5 cups சீரகம் / Cumin - 1 tsp பெருங்காயத்தூள்/ Asafetida powder - 1/2 tsp உப்பு / Salt - 3/4 tsp எண்ணை / oil - 2 tsps & oil to fry தண்ணீர் / Water - 1 cup + 2 tbsps to grind + 5 tbsps while making the dough Method: Wash Ulad dal thrice & add water. Cook the same in pressure cooker for3 whistles. Cool the same after taking it out. Grind to a fine paste after adding little water to that. Keep it in a mixing bowl. Add rice flour to that & mix well. Mix thoroughly with hand after adding salt, cumin & Asafoetida . Add little water & make a smooth dough. Heat oil in kadhai. Grease the small plates with oil to make murukku. Fill the dough in murukku press after greasing the same with oil. Make murukku in plates. Once the oil is hot add the murukku one by one in oil . Ingredients: அரிசி மாவு / Rice flour - 1/2 cup கடலை மாவு / Bengarm flour - 1/2 cup கம்பு மாவு / Pearl millet - 1/4 cup சோள மாவு / Sorghum flour- 1/4 cup ராகி மாவு / Ragi flour - 1/4 cup சுரைக்காய்/ Bottle gourd - 300 gms ( grated ) காரட் / Carrot - 1 ( grated) உப்பு / Salt - 3/4 tsp எண்ணை / Oil - 2 tsps சீரகத்தூள் / Cumin powder- 1 tsp தனியா தூள்/ Coriander powder- 1 tsp மிளகாய் தூள்/ Chili powder- 1 tsp இஞ்சி / Ginger - 1/2 inch பச்சைமிளகாய்/ Green chili- 3 பூண்டு பல் / Garlic pods and going- 10 Method: Grind garlic, ginger & green chili coarsely in a mixer grinder. Take all flour in a plate . Mix it well. Add the ground paste to that. Add grated bottle gourd & carrots to that & mix nicely with hand. Then add water little by little to make a dough. Add oil on top & rest it for 15 minutes. Take banana leaf & take a big ball of the dough to flatten it into a round shaped roti by dipping hands in water . Adjust the corners to make it round. If need we can cut it with a round shaped cutter to make it round. Keep 5 holes in the middle to get it roasted nicely. Invert the leaf on Tava to roast it in medium flame with a lid. Turn to the other side to roast. Make all dough like this & Lauki millets adai will be ready . In the morning drain out water & keep for 10 hrs to sprout. Add 1 glass of water & keep it in pressure cooker for 2 whistles to cook in medium flame. Cool the same. Heat oil in pan. Add cumin & green chili. Fry them & add onion & tomato . Saute it nicely. Then add cumin powder & coriander powder. Mix well Add cooked beans to that with water. Close the lid for5 minutes so as to make it dry without water. Then add chaat powder & mix. Our moth beans chaat is ready. Top it with fresh onions, tomatoes & coriander leaves. Add sev/ boondi/ potato wafers/ peanuts & serve. Steam it for 15 minutes. Cool & mash the same. Take wheat flour in a bowl. Add gram flour & Rava . Mix well. Add turmeric, chili, salt, oil, cumin & coriander powder to that . Mix well with mashed yellow pumpkin. Then add little water to make puri dough. Rest the same for 10 minutes. Heat oil. Make small dough & make puri. #modakam #modak #modakrecipe #coconutmodak #badamcoconut Ingredients: துருவிய தேங்காய் / Grated coconut- 1/4 cup பதப்படுத்திய பாதாம் பொடி / Blanched badam powder- 1 cup சர்க்கரை / Sugar - 1/4 cup ஏலக்காய் பொடி / Cardamom powder - 1/2 tsp குங்கும்ப்பூ/ Saffron- 20 to 25 strands பிஸ்தா பாதாம் துண்டுகள் / Pista badam pieces - 2 tbsps நெய் / Ghee - 1 tbsp + 1 tsp மோதகம் மோல்டு / Modak mould - 1 பால் / Milk - 1 glass பால் கிரீம் / Milk cream - 2 tbsps Method: Heat ghee in a pan & roastgrated coconut in low flame till the moisture goes. Keep it in a separate plate. In the same kadhai add milk & boil. Let it get thickened in low flame. After that add milk cream to make it more creamy & tasty. Let it thickens. The add blanched badam powder, coconut , saffron & cardamom powder. Mix it well in low flame. Add ghee to that. After 3 to 4 minutes it gets nicely cooked & leaves the sides of the pan. Take a small portion of the mixture & roll it & see. If it comes out in a good roll it is ready. Switch off the flame & cool the same in a plate. After cooling take small portion of the mixture & fill it up in the Modak mould. Grease the mould with ghee all over.close the same & take out the excess mixture. #laddoo #sattumakhanaladdoo#pottukadalai #makhanarecipe #prasad Ingredients: பொட்டுக்கடலை பொடி / Roasted gram powder- 1 cup சர்க்கரை பொடி / Sugar powder - 1 நெய் / Ghee - 1/2 cup ஏலக்காய் பொடி / cardamom powder- 1 tsp மக்கானா / Makhana - 2 cups பிஸ்தா / Pistachio pieces-1 tsp முந்திரி / Cashews pieces - 1 tsp Method: Roast Makhana in a pan till it becomes crispy. Make powder after it gets cooled. Take it in a bowl. Take roasted gram powder ( sattu ) in a pan. Add 1/4 cup of ghee in that & roast it till that fine aroma comes in that. Again add ghee & Roast it till we are able to make a nice ball out of that. Take it in a plate & cool the same. Take roasted gram powder, sugar powder & Makhana powder in a bowl. Add cardamom powder, sliced pista & cashews . Mix all nicely. Lastly add 2 tsps of ghee to make nice tasty laddoos. Make all laddoos in the same way. Our Makhana sattu laddoos are ready to serve. இட்லிய விட soft ஆன tiffin செய்யுங்க/Rava Dhokla recipe in Tamil/How to make instant Dhokla with Rava

Ingredients: ரவை / Rava - 1 cup தயிர் / Curd - 1/2 cup தண்ணீர் / Water - 1 cup துருவிய இஞ்சி/ Grated ginger - 1 tsp உப்பு / Salt - 1/2 tsp பச்சை மிளகாய் / Green chili- 2 எண்ணை / Oil - 2 tbsps கடுகு / mustard- 1 tsp சீரகம் / Cumin - 1/2 tsp கருவேப்பிலை/ Curry leaves- little கொத்தமல்லி தழை / Coriander- to garnish மிளகாய் பொடி / Red chili powder- 1/4 tsp Method: Take Rava in a bowl. Add curd & mix well. Keep it for 15 minutes to soak. In between grind coriander leaves, split roasted gram , salt, ginger, green chili curd & lemon juice together & make green chutney as side dish. After 15 min add grated ginger to Rava & salt. Mix well . Boil water in a steamer to steam Rava batter. Grease a plate with oil to steam Rava. After making all these arrangements then add Eno fruit salt to the Rava mixture & mix well. Immediately keep in steamer to steam the same. Add red chili powder on top of Rava batter & coriander leaves on top. Steam the same for 15 to 18 minutes. Switch off the flame & let it cool. Take it out & check whether it is cooked properly. Cool & release the sides of the Dhokla to take it out. Demould the same in a plate. When it is cool cut in squares. For tadka heat oil in tadka pan. Add mustard, Jeera , green chili& curry leaves. Then add water & let it boil for 2 minutes. Add the tadka on top of Rava Dhokla & spread. Our Rava dhokla is ready to serve with yummy green chutney as side dish. This can be served as breakfast or in lunchbox or for dinner. #pakora #pakoda #pakorarecipe #palak #pakode #pakorarecipe #ranjisflavours Ingredients: பாலக் / Palak leaves- 150gms வெங்காயம்/ Onion - 2 ( chopped in thin slices) கடலை மாவு / Bengal gram flour- 2 cups அரிசி மாவு / Rice flour- 1/2 cup பச்சை மிளகாய் / Green chili- 2 கருவேப்பிலை/ Curry leaves- little கொத்தமல்லித்தழை / Coriander leaves- 3 tbsps பெருங்காயம் / Asafetida- 1/4 tsp ஓம்ம் / Carom seeds- 1/4 tsp வறுத்த சீரகத்தூள் / Roaster cumin powder- 1 tsp மஞ்சள்தூள்/ Turmeric powder- 1/2 tsp மிளகாய்தூள் / Red chili powder- 1 tbsp எண்ணை / Oil - 3 tbsps of hot oil to pour on top of the dough + oil to fry Pakoda உப்பு / Salt - 1 tsp Method: Take onions, green chili & palak in a bowl. Squeeze nicely to release the water from palak nicely. Then add gram flour & rice flour. Add salt. Mix well altogether nicely. Then add hot oil to that & mix. Add only 3 tsps of water to make the dough so it comes out crispy. Heat oil in kadhai. When it is hot take the dough in small pieces & drop in oil. Fry them till golden color in medium flame. Fry all the batches like this. Ingredients: உதிர்த்த சோளம்/ Shredded corn 🌽- 1 பால் / Milk- 1 cup துருவிய இஞ்சி/ Grated ginger - 1 inch கருவேப்பிலை / Curry leaves- little பச்சைமிளகாய்/ Green chili- 2 பெருங்காயம் / Asafetida- 1/4 tsp கொத்தமல்லி/ Coriander- little உப்பு / Salt - 1/2 tsp மஞ்சள்தூள்/ Turmeric powder- 1/2 tsp மிளகாய்தூள் / Chili powder- 1/2 tsp துருவிய தேங்காய்/ Grated coconut- 4 tbsps கடுகு / Mustard - 1/2 tsp சீரகம் / Cumin - 1/2 tsp எலுமிச்சை ஜூஸ் / Lemon juice- 1/2 🍋 நெய் / Ghee -3 tsps Method: Grate corn or take it in a mixer jar & grind it coarsely. Keep it aside. Heat the kadhai & add ghee. Add mustard & Jeera. The add grated ginger, green chili, Asafetida & curry leaves to that. Sauté well. Then add the grounded corn to that & mix well. Let it cook in medium flame for 2 minutes. Then add a little water in the mixer jar & add that water to cook nicely. Add salt, turmeric powder, cumin powder & chili powder. Mix well. Keep it in flame for 2 more minutes with a lid covered. Then add grated coconut & coriander on top. Serve hot as an evening snack. It will be too tasty & healthy too.
