Steam it for 15 minutes. Cool & mash the same. Take wheat flour in a bowl. Add gram flour & Rava . Mix well. Add turmeric, chili, salt, oil, cumin & coriander powder to that . Mix well with mashed yellow pumpkin. Then add little water to make puri dough. Rest the same for 10 minutes. Heat oil. Make small dough & make puri. Fry the same in hot oil till it becomes golden color. Make all puris & serve with any pickle or curd. This is a very good recipe for breakfast or lunchbox or for dinner. #modakam #modak #modakrecipe #coconutmodak #badamcoconut Ingredients: துருவிய தேங்காய் / Grated coconut- 1/4 cup பதப்படுத்திய பாதாம் பொடி / Blanched badam powder- 1 cup சர்க்கரை / Sugar - 1/4 cup ஏலக்காய் பொடி / Cardamom powder - 1/2 tsp குங்கும்ப்பூ/ Saffron- 20 to 25 strands பிஸ்தா பாதாம் துண்டுகள் / Pista badam pieces - 2 tbsps நெய் / Ghee - 1 tbsp + 1 tsp மோதகம் மோல்டு / Modak mould - 1 பால் / Milk - 1 glass பால் கிரீம் / Milk cream - 2 tbsps Method: Heat ghee in a pan & roastgrated coconut in low flame till the moisture goes. Keep it in a separate plate. In the same kadhai add milk & boil. Let it get thickened in low flame. After that add milk cream to make it more creamy & tasty. Let it thickens. The add blanched badam powder, coconut , saffron & cardamom powder. Mix it well in low flame. Add ghee to that. After 3 to 4 minutes it gets nicely cooked & leaves the sides of the pan. Take a small portion of the mixture & roll it & see. If it comes out in a good roll it is ready. Switch off the flame & cool the same in a plate. After cooling take small portion of the mixture & fill it up in the Modak mould. Grease the mould with ghee all over.close the same & take out the excess mixture. Then open it & take out the Modak slowly. Our coconut badam modak will be ready for Lord Ganesha. Add few strands of saffron on top & do neivedhyam to Lord Ganapathi. #dhokla #dhoklarecipe #ravai#rava#ravadhokla #breakfast Ingredients: ரவை / Rava - 1 cup தயிர் / Curd - 1/2 cup தண்ணீர் / Water - 1 cup துருவிய இஞ்சி/ Grated ginger - 1 tsp உப்பு / Salt - 1/2 tsp பச்சை மிளகாய் / Green chili- 2 எண்ணை / Oil - 2 tbsps கடுகு / mustard- 1 tsp சீரகம் / Cumin - 1/2 tsp கருவேப்பிலை/ Curry leaves- little கொத்தமல்லி தழை / Coriander- to garnish மிளகாய் பொடி / Red chili powder- 1/4 tsp Method: Take Rava in a bowl. Add curd & mix well. Keep it for 15 minutes to soak. In between grind coriander leaves, split roasted gram , salt, ginger, green chili curd & lemon juice together & make green chutney as side dish. After 15 min add grated ginger to Rava & salt. Mix well . Boil water in a steamer to steam Rava batter. Grease a plate with oil to steam Rava. After making all these arrangements then add Eno fruit salt to the Rava mixture & mix well. Immediately keep in steamer to steam the same. Add red chili powder on top of Rava batter & coriander leaves on top. Steam the same for 15 to 18 minutes. Switch off the flame & let it cool. Take it out & check whether it is cooked properly. Cool & release the sides of the Dhokla to take it out. Demould the same in a plate. When it is cool cut in squares. For tadka heat oil in tadka pan. Add mustard, Jeera , green chili& curry leaves. Then add water & let it boil for 2 minutes. Add the tadka on top of Rava Dhokla & spread. Our Rava dhokla is ready to serve with yummy green chutney as side dish. Fry cashews & raisins in a pan with ghee till we get golden color. Open the cooker & take Rava in a pan. Whisk the same nicely with a whisk after adding the jaggery syrup. Cut into small pieces. Add salt & turmeric powder. Keep it covered for 4 hrs. Heat oil in a kadhai. Add mustard & asafetida. When it fries, add turmeric powder & chili powder. #lemon #picklerecipe #lemonpickle #எலுமிச்சை #sweetlemonpickle Ingredients: எலுமிச்சம்பழம் / Lemon- 🍋 18 to 20 வெல்லம் / Jaggery- 400 gms உப்பு / Salt -2 tbsps மஞ்சள்தூள்/ Turmeric powder- 1 tsp சோம்பு / Fennel seeds- 1 tbsps சீரகம் / Cumin - 1/2 tsp கொத்தமல்லி விரை/ Coriander seeds- 1/2 tsp மிளகு / Pepper- 1/2 tsp கருஞ்சீரகம்/ Black cumin seeds- 1/2 tsp ஓம்ம் / carom seeds - 1/2 tsp கருப்பு உப்பு / Black salt - 1/2 tsp Method: Clean, wash and wipe lemons & keep it dry in a towel. Cut lemon in 8 pieces & place it in a bowl. Add salt & turmeric powder & mix well. Keep it soaked for 12 days . Mix them daily in the morning. Keep it till it is soaked well. Fry fennel seeds, cumin, Pepper & coriander seeds in a kadhai without oil till we get a nice aroma. Cool the same & powder it in a mixer jar. It should neither be coarse nor fine powder. Keep it in a plate separately. Add jaggery in a pan & add 2 tbsps of water. Melt it & make thick syrup . Mix it well for 3 minutes till we get a thick syrup. Add ground masala powder, black salt, black cumin & Ajwain & mix well. Switch off the flame & Cool the same. When it is little warm, add lemon pieces which we have soaked & mix it well. Our sweet lemon pickle is ready now. Cool the same & fill in airtight clean dry glass bottles & use. This is very good & tasty with roti, chapati & even with rice. Add 1 tsp of oil in pan. Add the leaves, coriander, & Jeera. Saute for 2 to 3 minutes till the leaves becomes soft. Cool the same & grind it with coconut in mixer jar to a fine paste. Take curd & churn nicely. Mix the paste to the curd & mix well. Add salt & rice flour & mix. Then keep it on the flame till it becomes frothy on top. Take it out from the flame. Heat oil in tadka pan. Add fenugreek seeds, mustard, curry leaves & red chili. Fry them & add on top of kadhi. Add fried bhindi also & mix well. Take the soaked chana in pressure cooker & add water. Add turmeric powder, Brinji leaves, cardamom, cloves & salt. Cook for 5 to 6 whistles. Take chopped onion, green chillies, cooked Chana, tomato ,coriander leaves, ginger, garlic, chili powder , black salt & chaat powder. Make a paste out of that & keep separately. Heat oil in kadhai. Add Jeera & then chopped onions. Fry till soft in medium flame. Add the masala paste to that & saute . Fry for 5 to 6 minutes with a lid. Mix them in between. Then add cooked chana & mix well. Cover it & cook till all masalas combine with chana. After 5 minutes our chana masala will be ready. Heat oil in tadka pan. Add ginger & green chili. After frying add on top of the masala & mix well. This will give good atoms for the chana masala. Dry the same with a towel. Peel the skin in mango & ginger. Cut ginger in pieces & grate raw mango in grater. Dry roast mustard, Methi & nigella seeds. Then make powder out of that. Take green chili & mango ginger in a mixer jar & grind . Mix with grated mango. Heat oil in kadhai. Add mustard & Asafetida. When Asafetida roasted add the grated mixture to that. Add salt & turmeric powder. Keep the flame in low to medium & sauté it. Mix it well frequently so that it doesn’t stick to the bottom of the pan. Then add the masala powder, chili powder & keep sautéing for another 10 minutes. Totally it will take 20 minutes to prepare. Cool the same & store it in airtight glass containers. Can keep in refrigerator for longer shelf life. #dosa #dosarecipe #noricedosa#ranjisflavours #daldosa Ingredients: பாசிப்பருப்பு / Split green dal/ Monng dal - 1 cup உளுத்தம்பருப்பு / Split black gram / Ulad dal - 1 cup அவல் / Flattened rice / Poha- 1/2 cup இஞ்சி / Ginger - 1 inch பச்சை மிளகாய் / Green chili - 3 உப்பு / Salt - to taste கெட்டி பெருங்காயம்/ Asafoetida- 1/2 tsp கருவேப்பிலை / Curry leaves- little கொத்தமல்லி தழை / Coriander leaves- little எண்ணை / Oil - to make dosa Method: Wash both dals nicely twice & drain the water. Wash poha nicely & drain water. Add washed mung dal in a mixer grinder. Add salt, green chilies, ginger & Asafoetida. Grind to a nice paste without adding water. Please keep it in a separate bowl. Grind Urad dal with a little water so that it becomes fluffy. Grind Poha also to a paste. Add all three & mix well & add curry leaves. Take the batter in a bowl separately and add the coriander leaves, mixing well. Heat the Dosa tawa & grease with a little oil. Spread the batter in a round type & pour oil all over. Keep the flame in medium & flip to the other side & cook. This dosa will be very soft. Make all dosas in the same manner. Serve the same with sambhar or chutney of your choice. I have served with sambar & idli podi. It will be very soft & tasty. #dhuska #dhuskarecipe #jharkhandstreetfood #jharkhand #food Ingredients: அரிசி / Rice - 1 cup கடலைப்பருப்பு / Bengal gram- 1/2 cup உளுத்தம்பருப்பு / Split black gram / Ulad dal - 1/4 cup உப்பு / Salt -to taste இஞ்சி/ Ginger - 1 inch பச்சை மிளகாய் / Green chili- 3 சீரகம் / Cumin - 1 tsp மிளகு பொடி / Pepper powder- 1/2 tsp பெருங்காயம் / Asafetida- 1/4 tsp கருவேப்பிலை / Curry leaves - little Method: Wash rice & dal thoroughly & soak it for overnight.Even we can soak it for 5 hrs & make. Next day morning drain the water from rice & dal.Grind that with ginger, salt, green chili & Asafoetida. Grind it like nice rava consistency & keep it in a bowl. Add curry leaves, cumin & pepper powder. Mix nicely. Add little water & mix . The consistency of the batter should be like pouring. Heat oil in kadhai & pour batter with a ladle when the oil is hot. Fry it in medium flame. Flip it to the next side & fry till we get a golden color. Pour the next one after the first one cooks a little so that both doesn’t touch the sides. Make all the Dhuska’s & serve hot with potato peas sabzi as side dish. It will be of great taste. It will be soft inside & crispy outside. Using saffron gives more coolness to the body & give royal flavour to the recipe. So try this & enjoy! Ingredients: மாங்காய் / Raw mango- 3/4 kg வெல்லம் / Jaggery- 1 cup ஏலக்காய் பொடி/ Cardamom powder- 1/2 tsp குங்கும்ப்பூ / Saffron- 15 strands ( soaked in water) Method: Wash & peel the skin of raw mango. Cut into pieces. Heat water in a vessel. When it is hot add mango pieces in that & keep the flame in medium. Let it boil for 3 minutes. After 3 minutes, check the mango piece to see whether it is cooked or not. Then add jaggery to that & let it boil. After 3 minutes, when all the jaggery is dissolved, add cardamom powder & saffron to that. Switch off the stove & let the mangoes cool . After cooling, take the mango pieces in a mixer & grind it to a fine paste. Take the mango paste in a bowl . Beforehand, clean a glass bottle & dry it in the sun. Fill up the mango paste in bottles & store it in the refrigerator for 2 months. At the time of making juice, take the paste in glasses. Add water & ice cubes to that. Add saffron strands on top and serve it chilled. This juice is so healthy in the summer season when it is too hot. Saffron gives a super aroma & cooling for body. #ஆரோரூட்வடாம்#வடகம் #arrowroot #arrowrootpapad#papad #papadrecipes Ingredients: ஆரோரூட் பவுடர் / Arrowroot powder- 1 cup உப்பு / Salt - 1/4 tsp ஓம்ம் / carom seeds - 1/4 tsp சிகப்பு மிளகாய் தூள் / Red chili flakes- 1/4 tsp கொத்தமல்லித்தழை/ coriander leaves -1 tsp Method: Take arrowroot powder in a Kadhai & add 4 cups of water & mix it. Add salt, red chili flakes, coriander leaves & carom seeds to that. Mix well without any lumps. Add 4 cups of boiled water to that & mix well. Keep it on the stove & cook well for 10 to 12 minutes. Let it boil nicely. Switch off the stove. Then cool the same. Take the batter ina small spoon & make Vadam without spreading the same when ur is warm. Dry under fan for the 1 st day & in Sun on second day. Our arrowroot vadam is ready. It will be very white in color & crispy too.
