This recipe is very famous in Maharashtra & Gujarat. A combination of potato puri & sweet mango pulp is heavenly
Ingredients:
கோதுமை மாவு / Wheat flour- 1 cup
கடலை மாவு / Bengal gram flour - 1/4 cup
உருளைக்கிழங்கு / Potato big size-1
எண்ணை / oil - to make puri & to add in batter (2 to 3 tsps)
உப்பு / Salt- 1 tsp
மஞ்சள் பொடி / Turmeric powder- 1/4 tsp
மிளகாய் பொடி / Red chili powder-1/4 tsp
பெருங்காயம் / Asafoetida- 2 pinch
சீரகப்பொடி / Cumin powder- 1/4 tsp
கொத்தமல்லிவிரைப்பொடி/ Coriander powder- 1/4 tsp
கசூரி வெந்தய இலை / Kasuri methi powder- 1/2 tsp( crushed)
ஓமம் / ajwain- 1/4 tsp( crushed)
மாம்பழம் / Alphonso mango- 1
ஏலக்காய் பொடி / Cardamom powder-1/4 tsp
சர்க்கரை / Sugar - 2 tbsps
Method:
Boil , peel & grate potato. Keep it aside
Take 1 cup of wheat flour in a bowl. Add Bengal gram flour, salt, grated potato, turmeric, chili, cumin, coriander ( powders), asafoetida, Kasuri Methi, ajwain, oil & mix it nicely. Then add little water to that & make a hard puri batter. Water to be taken is less than 1/4 cup. The batter Should not be watery. Rest it for 15 minutes.
Cut mango to pieces. Make pulp after adding sugar & cardamom to that in a mixer. Can add saffron on top of pulp or sliced dry fruits to that before serving. Mango pulp ( Aamras) is ready now.
Take puri batter & make small lemon-sized balls to make puri. Heat oil in kadhai & fry all puris in medium to hot flame.
Our hot puris are ready to serve with yummy Aamras.
Tip 1
Puri batter to be in thick consistency. If we want puffed puri for a long time add 1 tbsp of Rava and make the batter. (While we have any party or get together)
Tip 2
Heat oil nicely first & while frying the puris, flame to be in the medium to high.
