Ingredients:
தேங்காய் / medium size coconut- 1 ( grated)
அரிசி/ Rice- 1/2 cup
தண்ணீர் / water for cooking rice- 1 1/4 cups
கடுகு/ mustard - 1 tsp
உளுத்தம்பருப்பு / Split Black Gram/ Ulad dal- 1 tsp
பச்சை மிளகாய் / Green chilli- 2
சிகப்பு மிளகாய் / red chilli - 2
பெருங்காயம் / Asafoetida- 1/4 tsp
கருவேப்பிலை / Curry leaves - little
முந்திரிப்பருப்பு/ Cashews - 12
உப்பு / Salt - as per taste
நெய் / ghee - 5 tsp
எண்ணை / Oil - 3 tsp
Method:
Cook rice . Add 2 tsp of ghee and cool.
Heat oil in a Kadhai. Add mustard, ulad dal, cashews, green chili, asafoetida, red chili, coconut & curry leaves. Sauté for 2 min in a medium flame after adding salt.
Then switch off the stove and cool The fried coconut.
Mix coconut mix and rice together after adding required amount of salt . Give it a nice mix. Add 2 tsp of ghee before mixing. Our yummy coconut rice is ready to serve with papad, chips or potato roast.
