Ranjis Flavours: Mangai Thokku / மாங்காய் தொக்கு / Raw mango pickle / Mango Pickle


Ingredients: கிளி மூக்கு மாங்காய்/Totapuri Raw mango-2 துருவிய இஞ்சி / Grated Ginger -2 tsp கடுகு / Mustard - 1 tsp வெந்தயப்பொடி / Fenugreek powder-1/2tsp பெருங்காயம் / Asafoetida- 1/2 tsp உப்பு / Salt - To taste மஞ்சள் பொடி / Turmeric powder - 1/2 tsp மிளகாய் பொடி / Chilli powder - 3 tsp நல்லெண்ணை / Gingely oil - 4 tablespoonful Method: Peel raw mango and grate. Peel ginger and grate if u take pieces of ginger. Heat oil in Kadhai, add mustard. When it pops add asafoetida, fenugreek powder. Then add grated mango , salt , turmeric powder and ginger, mix nicely . Cook the mango & ginger in low flame till the oil separates from that .After 10 minutes , add chili powder and mix nicely. After 3 to 4 minutes our Raw mango pickle is ready to serve. Note: if u want to store the pickle and make in large quantity, we have to add sodium benzoate as preservative and keep in fridge. If it is less in quantity we need not add preservative. Our Raw mango is very tasty and can be used with idly, Dosa , upma and Roti.
