Ranjis flavours: Kumbakonam Kadappa receipe / Kadappa / கடப்பா/gravy side dish for Idli


Ingredients: பாசிப்பருப்பு / Green gram split dal / Mung Dal - 1/2 cup உருளைக்கிழங்கு / Potato-4 பூண்டு / Garlic - 10 வெங்காயம் / Onion - 2 தக்காளி / Tomato 🍅- 2 உப்பு / Salt - To taste கரம் மசாலா/ Garam masala - 1 tsp எண்ணை / oil - 2 tsp பச்சை மிளகாய் / Green chilli - 3 to 4 கொத்தமல்லி / coriander leaves - little to add on top Method: Wash lentils ( mung dal) and cook with garlic for 2 to 3 whistles in a cooker.Mash it nicely and keep aside. Boil potatoes and mash nicely Heat oil in a kadai, add onion, green chili & tomato and sauté.add little salt and let it becomes soft. Now take mashed potatoes, cooked dal & fried onion tomato , mix everything together to make a nice consistency, ( add water to the required consistency ) and boil all and mix. Add coriander leaves on top and our Kadappa is ready to serve with hot idols, & dosa, puri etc. This is a nice tasty side dish for idly. Enjoy Ranjis flavours! Ranjis Flavours: Soft Idlis/ Idli / இட்லி / Idli receipe/Soft Idli batter receipe/Idly Maavu Receipe



Ingredients: Idli Rice / இட்லி அரிசி - 4 cup ( if idly rice is not available we can use boiled rice 2 cups & raw rice 2 cups ) Split black gram lentils/ உளுத்தம்பருப்பு - 1 cup வெந்தயம் / Fenugreek- 1 tsp Salt / உப்பு - 3 to 4 tsp Method: Wash Idli rice and soak it for 6 to 7 hrs. Wash black gram lentils and soak it for 1/2 an hour. ( no need of soaking it overnight as many people think) Soak fenugreek for 4 hrs. It should be soaked nicely so that the fluffy ness of idly will be v nice. Mix lentils & fenugreek, grind in a grinder nicely by adding water in between to get a required consistency as shown. Grind rice separately to the required consistency as shown . It should not be like a paste. Should be coarse. Mix rice & dal batter with salt and keep it for 5 hrs. ( if it is summer it will ferment early, but in winter it takes time to ferment) The batter can be kept in fridge after fermentation. When pouring the batter in idly mould, it should NOT be mixed again. Otherwise the fluffy ness will not be there in idlis. Add the batter in moulds and steam it for 7 to 8 minutes.After steaming it should be taken out and cooked for 5 minutes. Then we can take out the idlis and serve with coconut chutney & sambar, Red chutney powder etc. Our Soft idlis r ready. Ranjis Flavours: Mangai Thokku / மாங்காய் தொக்கு / Raw mango pickle / Mango Pickle


Ingredients: கிளி மூக்கு மாங்காய்/Totapuri Raw mango-2 துருவிய இஞ்சி / Grated Ginger -2 tsp கடுகு / Mustard - 1 tsp வெந்தயப்பொடி / Fenugreek powder-1/2tsp பெருங்காயம் / Asafoetida- 1/2 tsp உப்பு / Salt - To taste மஞ்சள் பொடி / Turmeric powder - 1/2 tsp மிளகாய் பொடி / Chilli powder - 3 tsp நல்லெண்ணை / Gingely oil - 4 tablespoonful Method: Peel raw mango and grate. Peel ginger and grate if u take pieces of ginger. Heat oil in Kadhai, add mustard. When it pops add asafoetida, fenugreek powder. Then add grated mango , salt , turmeric powder and ginger, mix nicely . Cook the mango & ginger in low flame till the oil separates from that .After 10 minutes , add chili powder and mix nicely. After 3 to 4 minutes our Raw mango pickle is ready to serve. Note: if u want to store the pickle and make in large quantity, we have to add sodium benzoate as preservative and keep in fridge. If it is less in quantity we need not add preservative. Our Raw mango is very tasty and can be used with idly, Dosa , upma and Roti. Ranjis Flavours: Rava Mango Kesari / மாம்பழ கேசரி / Mango Sheera/ Rava keasari/ Mango Rava kesari


Ingredients: ரவை / Rava -1/2 cup பால் / Milk - 1/2 cup மசித்த மாம்பழம் / Mango pulp - 1/2 cup சர்க்கரை / Sugar - 1/2 cup ஏலக்காய் / Cardamom - 5 முந்திரிப்பருப்பு / Cashews - 8 திராட்சை / dry grapes - 10 பாதாம்பருப்பு / Sliced Badam -2 tsp தண்ணீர் / Water - 1/2 cup குங்குமப்பூ / Kesar - little soaked in milk நெய் / Ghee - 4 tablespoons கேசரி பொடி / Kesari color powder - little Method: Fry cashews & kismis in little ghee till it becomes light brown in color. Keep aside. Roast Rava in ghee nicely and add water & milk. Keep it till Rava cooks nicely. Then add sugar and mix. After 2 minutes add mango pulp, cardamom, kesar,and ghee. Mix nicely and our Mango Rava kesari is ready. Decorate with cashews, sliced badam & dry grapes .Hot mango kesari is v tasty. Ranjis Flavours: கோதுமை வடாம்/ Wheat Vadam / wheat Vadi/ கோதுமை கருவடாம்



Ingredients: கோதுமை / Wheat - 1/2 kg உப்பு / Salt - To taste Method: Soak wheat for 7 to 8 hrs. Grind wheat and take out wheat milk twice and keep it for 2 to 3 hrs. The top layer of wheat milk is only water. That has to be thrown and only milk should be used. Keep a heavy bottom vessel , pour the wheat milk in that. Stir the milk in medium flame and it will take 5 to 6 minutes to cook . Once it is cooked it will not stick in hand if we touch. That means our wheat batter is ready to do vadi. Make small vadis in a press and sun dry for 2 to 3 days. Our wheat Vadi will be ready after 3 days. When it is fried it will be very shiny. Ranjis Flavours: ரவா Bread டோஸ்ட் / Rava Bread Toast / Sooji Bread Toast/ Rava bread Toastie



Ingredients: Bread- 4 to 5 ரவை / Rava - 1/4 cup குடை மிளகாய் / Capsicum-1/2 தக்காளி / Tomato- 1/2 பச்சை மிளகாய் / Green chilli-1 உப்பு / Salt - To taste பால் ஆடை / Milk cream- 1/2 cup கொத்தமல்லி / Coriander- little Method: Mix Rava, capsicum, Tomato, salt , green chilli & coriander nicely and keep it for 5 min to rest. ( add little water to that to make a nice spread) Heat ghee in a pan. Spread the Rava mixture on top of bread nicely . Roast one side of the bread and then the other side. Roast it nicely and serve with tomato ketchup. This is the best & easy, quick tiffin for morning breakfast and also to pack for lunch. Ranjis flavours: Lemon Rasam/ எலுமிச்சம்பழ ரசம் / Nimboo Rasam/ எலுமிச்சை ரசம்


Ingredients: எலுமிச்சம்பழம் / Lemon - 1 இஞ்சி / Ginger - 1 small piece பச்சை மிளகாய் / Green chili- 2 பெருங்காயம் / Asafoetida - 1/4 tsp உப்பு / Salt - To taste வேக வைத்த துவரம்பருப்பு தண்ணீர் / cooked pigeon dal water - 1 cup ( toor dal ) ( u can take cooked moong dal water also) கருவேப்பிலை / curry leaves- 1 tsp கொத்தமல்லி / Coriander- 1 tsp கடுகு / Mustard - 1/2 tsp Little oil for seasoning. மஞ்சள் பொடி / Turmeric powder - 1/4 tsp Method: Add salt, asafoetida, green chili , turmeric Powder and little water in a vessel . Boil that and add dal water to that. Add coriander & curry leaves to that. Whole rasam should be in medium flame , when u see froth on top of it switch off the stove. It should not boil after we added dal water. Squeeze the Lemon 🍋 on top. Take 1/2 tsp of oil & add mustard to that. When it pops pour on the top of rasam. Our Lemon Rasam is ready to drink. Ranjis Flavours: Sun dried Potato chips/ Home made potato chips/ காய வைத்த உருளைக்கிழங்கு சிப்ஸ்


Ingredients: உருளைக்கிழங்கு / Potato- 4 படிகாரம் / Alum - 1 piece Method: Peel the potatoes 🥔 and slice them. Wash in water nicely. Take another bowl of water and mix the water with alum so that our chips comes out white in color. Keep in alum water for 1 hour. Again take a bowl of water and wash potatoes thoroughly. Keep water in a bowl and let it boil. Then add the washed potatoe slices in the boiling water and let it boil for 4 to 5 minutes till the potatoes becomes little soft. If we press the potato we know it is cooked. Drain the water from potatoes. Crease a plate with oil and keep all the slices one by one without touching. Then we can sundry them for 2 to 3 days. This chips comes out in a nice white colour when they r fried in oil. Ranjis Flavours : Moong Pakoda/ Green Sprouts Pakoda/ பாசிப்பயறு பக்கோடா / Green Gram Pakoda/Mangodi



Ingredients: முளைகட்டிய பாசிப்பயறு / Green Sprouts- 1 cup அரிசி / Rice - 2 tablespoonful பூண்டு / Garlic - 8 to 9 இஞ்சி / Ginger - 1 small piece உப்பு / Salt - To taste சோம்பு / Fellel seeds - 1/2 tsp வெங்காயம் / Onion - 1 எண்ணை / Oil - To fry பச்சை மிளகாய் / Green chili-4 Method: Wash green gram and soak it . After 7 to 8 hrs drain the water and keep it in a container covered. Next morning we can see the sprouts in green gram.keep it aside. Cut the onion in small pieces. Soak rice for 2 hrs. Then grind green sprouts, garlic, salt, green chili, fennel seeds,ginger and rice together in a mixer jar coarsely. Add onion to the mixer and mix nicely. Heat oil in Kadhai . Put small quantity of the batter with a spoon in oil to make pakoda. Fry them to light brown color and our Green sprouts pakoras are ready to eat hot with Tomato ketchup. Enjoy Ranjis Flavours!
