மிக்சர் செய்முறை/Madras Mixture recipe in Tamil/How to make Madras mixture/Savory mixture recipe

Preparation of Boondi: Ingredients: கடலை மாவு / Gram flour- 2 cups அரிசி மாவு / Rice flour- 2 tbsps மிளகாய் பொடி / Chili powder- 1 tbsp உப்பு / Salt- 1 tsp மஞ்சள் தூள் / Turmeric- 1/4 tsp எண்ணை / Oil - to fry Mix all well & then add water to make batter for Boondi to the correct consistency. Heat oil. Using the Boondi plate add the batter on top of oil. Fry till golden color. Then Boondi is ready. Preparation of sev: Ingredients: கடலை மாவு / Gram flour- 2 cups அரிசி மாவு / Rice flour - 1 tbsp உப்பு / Salt- 1 tsp எண்ணை / Oil- 2 tbsps மிளகாய்தூள் / Chili powder- 1 tbsp Mix dry ingredients & then pour hot oil & mix. Then add water to make batter for sev as shown in video. Take the sev plate in Murukku press & make sev on top of hot oil. Fry on both sides till golden color. Crispy sev is ready now. Preparation of Murukku: Ingredients: அரிசி மாவு / Ricd flour- 1 cup உளுந்து மாவு / Ulad dal flour- 1/4 cup ( dry roast Ulad dal & make powder & sieve) வெண்ணை / butter - 1 tsp உப்பு / Salt - 1/2 tsp Mix all well & then add water to make a semi solid dough ro make Murukku . Fill up the press & make Murukku on oil & fry them till golden. Murukku is ready now. Instead of this we can add ribbon Pakoda also in this. Preparation of maida biscuit: Ingredients: சர்க்கரை / Sugar - 1/4 cup தண்ணீர் / Water - 1/4 cup எண்ணை or நெய் / Oil or ghee- 1/4 cup மைதா / Maida - 1 cup or 1.25 Method: Add sugar, oil& water together & heat Toll sugar melts. Need not be boiled. Just dissolve sugar. Switch off the stove. Cool the same & then add maida to make batter. Rest for 15 minutes. Then make roti out if it & cut in to the desired size & fry till it golden color and becomes crispy. Now the biscuits r ready. Fry peanuts, Poha, roasted gram, curry leaves, and cashews in oil. Keep them in paper so as to absorb excess oil . Add in the mixture. Lastly in dry Kadhai, roast asafetida, red chili powder, turmeric & salt. Add in the mixture & mix well. As we have not added salt, chili etc in Poha & ground nut we are doing this process to get an equal taste in the mixture all over. Our Madras mixture is ready to eat now.
